SULTANA & GINGER LOAF (BREAD MACHINE ABM)

Sultana & Ginger Loaf (Bread Machine Abm) image

An absolutely yummy, incredibly moist and rich bread which is so nice it can be eaten even on it's own or toasted with butter. Suprisingly the ginger flavour is quite mild. The sultanas I used were quite old and dry, and I did not pre-soak them, I suspect that if I had the loaf would have been way too moist. This is a variation which I made up to suit my personal taste of a standard Panasonic raisin bread recipe. Note the original recipe called for only 1/2 tsp yeast, I do not feel that this is enough. I also added 1/4 tsp Vitamin C powder (because I have it available and I add to nearly every loaf I make as it helps the bread to rise and keep longer), but it is not essential.

Time 55m

Yield 12 slices, 12 serving(s)

Number Of Ingredients 19

1/4 teaspoon vanilla flavoring (topped up to make....)
280 ml water (Room temperature)
1/4 teaspoon vitamin C powder (optional)
400 g strong white flour (aka bread flour)
28 g nonfat dry milk powder (approx 2 tablespoons)
16 g butter (1 large tablespoon)
24 g sugar (1 2/3 tablespoons)
1 teaspoon salt (5g)
1 pinch ground cinnamon
1 pinch ground ginger
1 dash ground cardamom
1/2 tablespoon caraway seed
3/4 teaspoon bread machine yeast
128 g sultanas
3 teaspoons ground ginger
1 teaspoon sugar
1 -2 tablespoon milk
1 dash oatmeal
1 dash ground ginger

Steps:

  • Weigh the loaf ingredients into the bread machine baking pan in the order listed. The vitamin C is optional and is added only to serve as a 'Flour Improver'.
  • Replace pan into bread machine and select a program suitable for a white fruit/raisin bread.
  • At the beep, (usually about five minutes before the end of the final kneading,) add the sultanas/ginger.
  • When finished, place on a wire rack to cool and immediately brush top and sides with a beaten sugar/milk glaze and sprinkle lots of oatmeal and ground ginger. Although optional, the glaze at the least is recommended as it will seal the crust helps it to keep fresher for longer.
  • 12 slices is approximate as it depends how thick you like the slices :) Makes a 1 1/2Lb Loaf.
  • Just a thought -- -- the quantity of caraway seeds is a 'conservative' guess btw as I poured some into my hand and added what I felt looked about right. It's important ('specially for me!) to go easy on the caraway seeds though as they have such a strong flavour.

BASIC WHITE BREAD FOR BREAD MACHINE ABM

Basic White Bread for Bread Machine Abm image

From my bread machine's recipe book, for use with the Basic Medium cycle. I'm also including the specs for bigger capacities but listing the recipe for a 1-lb loaf. My machine requires you to proof the yeast first; some may not so disregard Step 1 if you don't have to proof! (2 1/4 cups AP flour + 6 3/4 tablespoons vital wheat gluten = 2 1/4 cups bread flour) My Medium cycle for a 1-lb loaf takes about 70 minutes, other machines will vary.

Time 1h15m

Yield 10 slices, 10 serving(s)

Number Of Ingredients 6

3/4 cup warm water
2 tablespoons sugar
2 tablespoons sunflower oil
1 teaspoon kosher salt
2 1/4 cups bread flour
1 1/2 teaspoons active dry yeast

Steps:

  • If you have to proof the yeast first, proof it in the sugar and water in the bread machine's basin for 10-15 minutes or until foamy; then mix the other ingredients together and pop it in for the Basic Medium or Basic White cycle.
  • If not, just throw everything in, hit the Basic Medium or Basic White cycle for a 1-lb capacity, and kick back and let the machine do its work! The 1-lb loaf yields about 10 large slices.
  • For 1.5-lb loaf, use 1 cup water, 3 tablespoons oil, 3 tablespoons sugar, 1 1/2 teaspoons salt, 3 cups bread flour (3 TB vital wheat gluten + 3 cups AP flour) and 2 1/4 teaspoons active dry yeast.
  • For 2-lb loaf, use 1 1/3 cups water, 1/4 cup oil, 1/4 cup sugar, 2 teaspoons salt, 4 cups bread flour (4 TB vital wheat gluten + 4 cups AP flour), and 1 tablespoon active dry yeast.

MOLASSES, SULTANA AND OATMEAL BREAD (ABM / BREAD MACHINE)

Molasses, Sultana and Oatmeal Bread (Abm / Bread Machine) image

This loaf is a bit special - I have been requested for the recipe so many times I felt it would be nice to share it here. It is absolutely wonderful served cold or toasted with a nice orange marmalade or a ginger conserve/jam. (Plus butter or just with butter if you're into it!) To be honest it so resembles a cake I often cut a generous slice, chop it into squares and place in a bowl, tease a spoonful of marmalade or ginger jam across it, pour over some ready-made custard, then heat in the microwave for 1 minute. As a note for other UK readers: I tried it with Black Treacle instead of molasses one time (as Molasses is quite hard to find in the UK (and pricey) - and it had a very poor flavour by comparison - I've since found that the 'Holland & Barrett' UK Health Foods chain do a selection of different molasses at a very reasonable price). I've found that this loaf keeps well - perhaps because of all the sugar in the molasses. N.B. Cooking time listed is the baking time for my machine. Total time for my (LG) machine is 3 hours 20 minutes.

Time 55m

Yield 10 serving(s)

Number Of Ingredients 13

280 ml water (room temperature)
400 g white bread flour
60 g blackstrap molasses
15 g butter
15 g nonfat dry milk powder (1 Tablespoon, Heaped)
5 g salt (1 Teaspoon)
55 g oatmeal (a.k.a. Porridge Oats in the UK)
1/4 teaspoon vitamin C powder (optional but recommended.)
1 1/2 teaspoons ground ginger (optional, to taste)
1 dash ground cloves (generous optional)
7 g bread machine yeast (Sainsbury's in the UK do 7g rather than the more usual 6g sachets (equals 1 1/2 Teaspoons approximat)
100 g sultanas (I prefer sultanas for their sweetness, mix these together with...) or 100 g raisins (I prefer sultanas for their sweetness, mix these together with...)
1 teaspoon ground ginger (optional)

Steps:

  • Weigh the main ingredients into the bread machine drum in the order listed.
  • The ginger is optional and to taste (I love ginger so I'm a bit generous with it) but if leaving it out then it's probably best to leave the ground cloves out too.
  • Into a small bowl weigh approx 100g sultanas and mix in a teaspoon of ground ginger to coat the sultanas well (if using ginger).
  • Start machine on 'speciality' or 'raisin bread' cycle with normal crust setting.
  • At about 5 minutes before the end of the second kneading or at the beep (if you trust your machine not to mash up the sultanas - mine is lethal to them so I ignore the beep and wait until only a few minutes remain of the second kneading) add the sultanas mixed together with the ground ginger.
  • Measurements: I find blackstrap molasses is almost impossible to measure using a spoon as it's so incredibly thick and gooey and most of it stays on the spoon so I just pour it out of the jar - which can make for some rather hit and miss measurements. Taste-wise, I liked the strength of flavour best when I suceeded in pouring in 62g of molasses and used 103g of sultanas.
  • Basically I think of this as cake without the all the fat and the calories :).
  • Bakes a good-sized 1 1/2 Lb Loaf.
  • Addition, tried December 2005 --
  • I remebered that I had some crystallized ginger (a.k.a. candied ginger) in the cupboard and added 32g chopped up to about the size of the sultanas which I mixed with the fruit and ground ginger for adding at the beep. The quantity was probably a bit excessive and it does make the loaf a bit trickier to slice as ginger can be quite 'tough', but an idea to bear in mind if you have some in the cupboard and fancy it :).

COCONUT, SULTANA & HONEY LOAF (ABM / BREAD MACHINE)

Coconut, Sultana & Honey Loaf (Abm / Bread Machine) image

I'm feeling quite proud of myself here as I kind of (literally only just) invented this (ok, ok - I was inspired by the nicest Peshwari Naan I've had in ages!), but this really works as a loaf. It's gorgeously light and fluffy, absolutely huge considering it doesn't require all that much flour and has a wonderful sweet taste that could even be used with (certain) savoury foods and types of meat as well as just butter or honeys or fruit preserves. Perhaps using part coconut milk instead of some of the water would be even nicer but I was being stingy and didn't want to open the can :) This one is just begging to be made again - I got so many compliments about this bread - even from a friend who doesn't like coconut much who said I was onto a winner! It's just SO nice!

Time 53m

Yield 11 serving(s)

Number Of Ingredients 12

240 ml water (at room temerature)
350 g white bread flour
15 g honey
11 g desiccated coconut (About 1 1/2 Tablespoons)
1/4 teaspoon vitamin C powder (optional)
1 teaspoon salt
15 g nonfat dry milk powder (1 Tablespoon, heaped)
5 g butter (or for creamier taste just use 13g of Butter and omit the margarine)
8 g firm margarine
3 3/4 g bread machine yeast (1 Tsp slightly heaped)
65 g sultanas (or Raisins- untested)
1 dash cardamom (optional)

Steps:

  • Weigh the main ingredients into the bread machine and select Raisin or Speciality Bread and preferred Crust type - I chose normal crust which worked nicely - and start the machine.
  • At the beep, if you trust your machine not to mash up the fruit like mine always does, add the sultanas with just an incredibly light dusting of cardamom (or omit it if you don't like cardamom). For my machine I ignored the beep and waited until just over 3 minutes remained of the 2nd knead cycle and that worked great - guess it depends how squishy your sultanas are :).
  • Cool on a wire rack.
  • Makes a loaf just under 1 1/2 Lb which you won't be able to stop eating!
  • Cooking time listed is the baking time for my machine.

EVERYDAY BREAD (FRENCH BREAD) ABM BREAD MACHINE

Everyday Bread (French Bread) Abm Bread Machine image

This is our everyday bread that we use for sandwiches and toast. It's dairy and egg free which makes it a favorite of mine - this also makes it safe to use the bread machine timer. This recipe makes a 2 pound loaf, but you can easily halve it for smaller machines.
