Io ho scelto delle spuntature abbastanza carnose, ma che avessero anche un po di grasso, ci sta bene non fate la faccina storta, anzi ci deve essere, comunque fatevi consigliare dal macellaio di fiducia, per quanto riguarda le salsicce scegliete quelle che preferite, di prosciutto, a pezzi, macinate, con il finocchietto o piccanti.
Tagliate e fette la cipolla, a pezzetti la carota e mettetele in una pentola capiente con un filo d'olio, mi raccomando poco, perché le spuntature e le salsicce sono già grasse.
Quando il vino sarà evaporato aggiungete la passata di pomodoro, salate ed abbassate il calore, coprite il sugo con un coperchio e lasciate cuocere per 2 ore circa mescolando di tanto in tanto.
Il sugo è pronto! Ora a voi la scelta se gustarlo con un kg di pane minimo o usarlo come condimento di gnocchi, polenta e fettuccine, sicuramente è una ricetta furbissima perché in un solo piatto abbiamo primo e secondo!
