SLOW-COOKER CAJUN SUCCOTASH



Slow-Cooker Cajun Succotash image

If you don't want to go "meatless" with this recipe, stir in leftover ham from Easter.

2 c frozen whole kernel corn
1 can(s) (14-oz) low-sodium, fat-free, vegetable broth
1 1/2 tsp cajun seasoning
3 clove garlic, minced
2 can(s) (16-oz) red beans, drained and rinsed
1 can(s) (28-oz) diced tomatoes, undrained
1 pkg (16-oz) frozen cut okra
1 large onion, chopped
hot cooked brown rice

Steps:

  • 1. Combine all ingredients, except rice, in a 5 quart slow cooker. Cover and cook on LOW for 4 hours. Serve over hot cooked brown rice and a slice of french bread.

Number Of Ingredients 12

2 tablespoons unsalted butter
1 small yellow onion, chopped
3 cloves garlic, minced
1/4 jalapeno, seeded and minced
1 tablespoon plus 1 teaspoon kosher salt
Freshly ground black pepper
2 heaping cups fresh corn kernels (from about 4 ears)
1 to 2 teaspoons sugar, depending on the sweetness of the corn (optional)
2 cups cooked lima beans, or one 10-ounce package frozen fordhook lima beans, thawed
1 tablespoon chopped fresh marjoram or oregano
4 ounces grape or cherry tomatoes, quartered
2 tablespoons chopped flat-leaf parsley

Steps:

  • Melt the butter in a saucepan over medium heat. Add the onion, garlic, jalapeno, and salt and season with pepper to taste. Cook, covered, stirring occasionally, until soft, about 5 minutes. Add the corn and sugar and cook, covered, stirring occasionally, until soft, about 10 minutes. (If the mixture gets dry while cooking add a couple teaspoons of water.) Raise the heat to medium-high, add the lima beans and marjoram and cook, stirring, for 3 minutes. Stir in the tomatoes and parsley and season generously with pepper. Serve immediately.

Number Of Ingredients 16

1 tablespoon olive oil
2 onions, finely chopped
4 stalks celery, peeled and thinly sliced
2 large carrots, cut in quarters lengthwise, and then thinly sliced
4 garlic cloves, minced
1 tablespoon paprika
2 sprigs fresh rosemary or 1 tablespoon dried rosemary leaves
1 teaspoon salt
1 teaspoon cracked black peppercorns
1 (28 ounce) can tomatoes, including juice, coarsely chopped
1 (10 ounce) can condensed vegetable broth or 1 (10 ounce) can chicken broth, undiluted
2 cups dried lima beans, cooked and drained or 4 cups frozen lima beans, thawed
2 cups corn kernels, thawed if frozen
1 cup whipping cream (optional)
grated parmesan cheese (optional)
freshly grated nutmeg, to taste

Steps:

  • In a skillet, heat the olive oil over medium heat. Add onions, celery and carrots and cook, stirring, until softened. Add garlic, paprika, rosemary, salt and pepper and cook, stirring, for 1 minute. Stir in tomatoes and stock and bring to a boil. Place beans and corn in slow cooker. Add contents of pan and stir well.
  • Cover and cook on Low for 8 to 10 hours or on High for 4 to 5 hours, until hot and bubbling. Stir in cream and Parmesan, if using, and season with nutmeg, to taste. Enjoy!
  • Note:.
  • This dish can be assembled the night before it is cooked but without adding the cream and Parmesan. Complete up to bringing the tomatoes and stock to a boil and adding the the beans and corn, then refrigerate overnight. The next day, cook in slow cooker as directed. Alternately, Succotash can be cooked overnight and refrigerated until you're ready to serve. In a large saucepan, bring to a boil and simmer for 5 to 10 minutes before serving.
  • For Vegetarian option use Vegetable broth.

A healthy American-inspired side dish of sweetcorn and broad beans flavoured with red chilli, basil, mint and garlic

4 sweetcorn cobs
1 tbsp olive oil
2 garlic cloves , crushed
100g frozen baby broad bean
1 red chilli , deseeded and chopped
large handful basil , chopped
large handful mint , chopped
1-2 tsp sherry vinegar

Steps:

  • Use a knife to cut down the length of the sweetcorn to remove the kernels. Heat the oil in a large lidded pan. Cook the kernels and garlic over a medium heat for 5 mins, stirring all the time.
  • Add the frozen beans to the pan, cover and cook, stirring every so often, for another 4-5 mins or until the beans are cooked through. Turn off the heat and add the chilli, herbs and vinegar. Taste and add seasoning, if you like.

1 lb dried large lima beans
1 lb frozen butter beans
1 lb frozen yellow corn
1 can(s) peeled tomatoes-whole
1 lb hog jowls-smoked
1 stick unsalted butter
2 Tbsp black pepper
2 Tbsp kosher salt
1 gal water
3 large shitake mushrooms-dried
1 Tbsp liquid hickory smoke

Steps:

  • 1. Wash lima beans thoroughly, picking through to remove any stones or other foreign objects (such as dirt clods) Put beans in crockpot with 1 gallon water (or more if needed to cover to about 2" above level of dried beans. I prefer to add more water near the end to fill as desired. Turn crockpot on to low (about 140 degrees)
  • 2. Sear hog jowls in heavy skillet, then transfer to crockpot with beans Add stick of butter. Grind or crush three large dried shitake mushroom to a dust or powder. I dislike the texture of mushrooms so I hide them this way.
  • 3. Turn crockpot to low. Check to make sure beans are covered by water Dried beans will absorb a lot of water while cooking At this time, add salt and pepper and stir well to blend
  • 4. Cook for 8 hours.
  • 5. Add frozen butter beans, liquid smoke, peeled tomatoes, and corn to the pot. If you prefer it as a soup then add water until your about a half inch from the top of the crockpot.Continue to cook for about two more hours until it becomes a creamy soup and the lima beans are tender. Salt to taste.
