ITALIAN MEATLOAF



Italian Meatloaf image

Italian Meatloaf blends Italian sausage and ground beef with spices and cheese for a tender one dish meal. The perfect family meal!

1 cup Italian or white bread (crusts removed, cut into 1 inch cubes )
1 tablespoon milk
1/2 cup white onion (minced)
3 cloves garlic (minced)
1 teaspoon fine sea salt
1/2 pound lean ground beef
1 pound Italian sausage (casing removed, crumbled )
1 tablespoon flat leaf parsley (minced, plus more for garnish (optional) )
1 tablespoon fresh oregano (minced)
1 tablespoon Worcestershire sauce
1 egg (lightly beaten )
3/4 cup bread crumbs
1/4 cup Parmesan cheese (finely grated)
1 cup mozzarella cheese (shredded, divided )
3/4 cup marinara (divided, plus more for for serving )

Steps:

  • Preheat oven to 400 degrees and prepare a loaf pan with cooking spray or parchment paper.
  • In a small bowl, toss cubed bread with milk. Set aside for 3-4 minutes to absorb.
  • In a large mixing bowl, or the base of a stand mixer, combine fresh bread cubes soaked in milk, finely ground or micrograted onion, garlic Italian seasoning and salt. Mix to combine.
  • Add crumbled ground beef and sausage, breaking into small pieces.
  • Before mixing, top with Worcestershire sauce, lightly beaten egg, dry bread crumbs, Parmesan cheese, 1/2 cup shredded mozzarella and 1/4 cup marinara sauce.
  • Blend until just mixed, either using your fingers to toss or putting the stand mixer on low. Too much mixing will make your meatloaf tough, so only mix until barely blended.
  • Transfer meat mixture to cooking vessel of your choice, forming into a loaf as you go. You can make it free-form on a rimmed baking sheet, but I prefer using a meatloaf or bread loaf pan. Top with 1/2 cup marinara sauce.
  • Bake, uncovered, for 40 minutes. Remove and top with remaining shredded mozzarella cheese and another shake of Italian seasoning (if desired).
  • Cook for an additional 5 minutes. Allow to sit for 5-10 minutes before cutting and serving. Serve with additional marinara sauce, if desired.

I got this recipe from a friend and changed it up a little. Its quick, easy and delicious.

approx 1 1/2 pounds ground beef
3 sweet/ mild or hot italian sausage links ( cassings removed)
2 packages dry onion soup mix
approx 2/3 cup instant oatmeal or 2/3 cup bread crumbs (seasoned or non)
1 teaspoon italian seasoning
1 level teaspoon garlic powder ( more or less, your choice)
1/2 cup tomato sauce
2 large eggs
2 to 3 logs of mozzarella or provolone string cheese ( or several pieces of cubed cheese)
note: add salt and pepper to desired taste or diet
MEATLOAF TOPPING
1/2 cup ketcup
optional 2-3 tablespoon bbq sauce
1 tablespoon brown sugar ( blended well with ketcup and bbq sauce)

Steps:

  • 1. In large bowl combine ground beef and Italian sausage until well blended. Add remaining ingredients except for cheese ... once ingredients are well blended, place meat mixture on waxed paper and flatten into oblong shape approx 1/2 thick. In center of flattened meat place string or cubed cheese down entire center. Roll meat pressing and shaping into a loaf. Carefully place loaf into baking dish or roaster sprayed with non stick cooking spray and about 1/3 cup of water. Bake at 325 degrees for approx. 45 minutes to 1 hour .. until meat is nicely browned.
  • 2. Remove from oven and with back of spoon cover entire meatloaf with ketcup,bbq sauce and brown sugar mixture ... return to oven uncovered for approx. 15 - 20 minutes. Remove from oven and let sit for approx. 5 minutes before cutting into .

My mom gave me this recipe, and everyone agrees it is the best ever, I think it's because of the Italian sausage. It's great the next day too. But we usually don't have many leftovers.

1 ¼ pounds ground beef
4 (4 ounce) links Italian sausage, casings removed
1 egg, beaten
1 small green bell pepper, chopped
1 onion, chopped
½ cup dry hot wheat cereal
½ cup milk
1 dash Worcestershire sauce
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Chop sausage finely. In a large bowl combine beef, sausage, egg beat, bell pepper, onion, cereal, milk, Worcestershire sauce, salt and pepper. Mix together and press into a loaf pan.
  • Bake in the preheated oven for 1 hour, or until cooked through. Drain grease from loaf pan periodically during baking. Let stand 10 minutes before serving.

This Italian Stuffed Meatloaf is made with Italian sausage and ground beef and stuffed with a layer of spinach and provolone cheese. Corn and red bell pepper add color, texture and flavor to this unique meatloaf.

19 ounces uncooked mild Italian link sausage (casings removed (or 16 ounces ground Italian sausage))
1 pound ground beef or turkey
¾ cup chili sauce, pizza sauce or marinara (divided)
¼ cup water
¾ cup old fashioned oats
1 egg (lightly beaten)
1 tablespoon chili powder
1 tablespoon Worcestershire sauce
1 cup diced red bell pepper
1 cup diced yellow onion
1 cup frozen corn
1 cup fresh baby spinach leaves
3 slices Provolone cheese

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 9-x 5-inch loaf pan with nonstick cooking spray.
  • In a large bowl, combine ½ cup of the chili sauce with the water. Add the oats, egg, chili powder, Worcestershire, and mix well. Remove the sausage from the casings, if needed and add it to the bowl along with the ground beef or turkey. Add the bell pepper, onion and corn and mix well. Divide the meat mixture in half. Press half of the meat mixture into the prepared loaf pan.
  • Create a shallow indent in the meat allowing the edges to rise along the edge of the pan. Layer half the provolone on top of the meat along the center, staying about ½-inch inch away from the edges. Add the spinach leaves and remaining provolone. Cover completely with the 2nd half of the meat mixture forming a domed top and sealing the edges.
  • Bake uncovered for 50 minutes. Remove the pan from the oven and carefully drain off as much grease as possible. Spread the remaining ¼ cup chili sauce over the top of the loaf and bake for an additional 10 to 15 minutes or until a meat thermometer inserted in the center of the loaf registers 165 degrees F. Allow the loaf to rest for 5 to 10 minutes before slicing.
