1 loaf Italian bread (about 4 inches in diameter), cut into eight 1-inch-thick slices
3 tablespoons apricot jam
1/4 cup (2 ounces) reduced-fat cream cheese, room temperature
2 large eggs
1/2 cup low-fat (1 percent) milk
1/4 teaspoon ground cinnamon
1 to 2 tablespoons unsalted butter
Pure maple syrup, for serving (optional)
Cooked bacon, for serving (optional)

Steps:

  • Using a paring knife, cut a horizontal slit in each bread slice to form a pocket. In a bowl, blend jam and cream cheese. Spoon 1 tablespoon mixture into each pocket.
  • In a shallow bowl, whisk together eggs, milk, and cinnamon until combined. In a large nonstick skillet, melt 1 tablespoon butter over medium-low heat. Lay half the bread slices in egg mixture, letting them soak 5 seconds on each side.
  • Place slices in skillet; cook until golden brown, 3 to 4 minutes per side. Repeat with remaining bread, adding more butter to skillet if needed. If desired, serve French toast with syrup and bacon.

1 loaf (8 oz) or 1/2 loaf (1-lb size) day-old French bread
1 package (3 oz) cream cheese, softened
3 tablespoons apricot preserves
1/4 teaspoon grated lemon peel
3 eggs
3/4 cup half-and-half or milk
2 tablespoons granulated sugar
1 teaspoon vanilla
1/8 teaspoon salt
1/8 teaspoon ground nutmeg, if desired
2 tablespoons butter, melted
Powdered sugar, if desired

Steps:

  • Spray 13x9-inch pan with cooking spray.
  • Cut bread crosswise into 12 1-inch slices. Cut a horizontal slit in the side of each bread slice, cutting to--but not through--the other edge.
  • In medium bowl, beat cream cheese, preserves and lemon peel with electric mixer on medium speed about 1 minute or until well mixed. Spread about 2 teaspoons of the cream cheese mixture inside the slit in each bread slice. Place stuffed bread slices in pan.
  • In medium bowl, beat eggs, half-and-half, granulated sugar, vanilla, salt and nutmeg with fork or wire whisk until well mixed. Pour egg mixture over bread slices in pan, and turn slices carefully to coat. Cover and refrigerate at least 30 minutes but no longer than 24 hours.
  • Heat oven to 425°F. Uncover French toast and drizzle with melted butter. Bake 20 to 25 minutes or until golden brown. Sprinkle with powdered sugar if desired.

Chocolate Mascarpone Stuffed French Toast with Strawberry Syrup image

1/2 cup mascarpone, at room temperature
1 tablespoon heavy cream
1 tablespoon orange zest
1 tablespoon granulated sugar
1 ounce semisweet chocolate, melted and cooled, plus more for grating
12 slices day-old brioche, about 3/4-inch thick
3 large eggs
1 1/2 cups half-and-half
2 tablespoons unsalted butter, divided, plus more if needed
Confectioners' sugar, for dusting
Strawberry Syrup, warmed, recipe follows
2 pints whole fresh or frozen strawberries, hulled
2/3 cup sugar, plus more if needed
1/4 cup corn syrup
Pinch sea salt
1 tablespoon lemon juice

Steps:

  • Cook's Note: Mascarpone is similar to cream cheese in flavor (but better) and has the consistency to match. It makes a great base for this super-easy yummy filling.
  • Combine the mascarpone, heavy cream, orange zest and sugar in a bowl. Add the melted chocolate and mix until all the ingredients are incorporated. Using an offset spatula or butter knife, take a generous scoop of the chocolate-mascarpone filling, about 2 tablespoons, and slather it on 1 slice of the brioche, and then top with another slice of brioche. Repeat with the remaining slices and filling; you will make 6 sandwiches.
  • In a shallow dish, whisk together the eggs and half-and-half to make an egg bath. (If you don't have half-and-half, milk or heavy cream will work just fine.)
  • Preheat the oven to 200 degrees F.
  • Preheat a nonstick griddle or large skillet over medium heat. Add 1 tablespoon butter to the skillet, moving it around to coat the surface. Dip each sandwich in the egg bath, turning over to coat and soak both sides. Place the sandwich on the hot griddle. (Place only as many sandwiches as will fit easily on the griddle, don't overcrowd.) Cook, in batches, until golden, 2 to 3 minutes per side. Transfer the sandwiches to an oven-safe platter and cover loosely with foil. Place in the oven to keep warm. Add more butter to the griddle, as necessary, and cook the remaining sandwiches.
  • Cut the sandwiches diagonally in half, and serve 2 to 3 halves per person. Dust the sandwich with confectioners' sugar and grate chocolate over the top. Ladle a generous portion of the Strawberry Syrup over the sandwiches, or serve alongside for your guests to serve themselves.
  • In a large saucepan over high heat, add the strawberries and sugar. (A large saucepan is needed just in case the strawberry syrup starts to boil up the sides.) If the strawberries are not as ripe or sweet as you like, add 1/3 cup more sugar. Add 2/3 cup water, the corn syrup and sea salt to the pan. Stir together until the sugar dissolves. Bring to a boil and cook for about 5 minutes, stirring occasionally.
  • Strain out the strawberries and continue to boil the liquid until the mixture has thickened to a syrupy consistency, another 8 to 10 minutes. Stir in the lemon juice and add the strawberries back to the saucepan. Gently stir to coat the strawberries in the syrup. (The syrup can be stored in an air-tight container in the refrigerator for up to 1 week, or cooled and frozen.)
  • Cook's Note: For an orange-lover's option, use fresh orange juice instead of the lemon juice to finish the syrup. Alternately, for a rich, adult-friendly sauce, add a splash of orange liqueur, like Grand Marnier, to the sauce. Although the alcohol won't completely cook out, most will if cooked a few minutes longer. Yield: 3 1/2 cups

RASPBERRY SYRUP:
2 cups fresh raspberries or frozen unsweetened raspberries, thawed
3/4 cup packed brown sugar
3 tablespoons butter
1 teaspoon ground cinnamon
1-1/2 teaspoons vanilla extract
FRENCH TOAST:
1 package (8 ounces) cream cheese, softened
1/2 cup sour cream
18 slices sourdough bread
1/2 cup raspberry preserves
1 teaspoon vanilla extract
6 large eggs
1/4 cup half-and-half cream
1-1/2 teaspoons ground cinnamon
Confectioners' sugar and additional raspberries, optional

Steps:

  • For syrup, combine raspberries, brown sugar, butter and cinnamon in a saucepan. Bring to a boil. Reduce heat; simmer, uncovered, until syrup reaches desired consistency, 5-7 minutes. Remove from the heat and stir in vanilla; set aside. , In a bowl, beat cream cheese and sour cream. Spread about 3 tablespoons on each slice of bread. Combine preserves and vanilla; spread over cream cheese mixture on nine slices. Top with remaining bread, cream cheese side down, to make a sandwich. , In a shallow bowl, combine the eggs, cream and cinnamon. Dip both sides of bread into egg mixture. Cook on a hot greased griddle until golden brown, 3-4 minutes on each side. , Cut in half diagonally. Serve with raspberry syrup. If desired, sprinkle with confectioners' sugar and garnish with raspberries.

You can substitute peanut butter for the cream cheese, use different jams or preserves, different extracts or spices - the options are practically limitless! Serve with maple syrup and sprinkle with powdered sugar.

½ cup seedless raspberry jam

Brunch doesn't get much more decadent than this - buttery brioche served pancake-style with sweet syrup

2 large ripe bananas
1 tbsp maple syrup , plus extra to serve
2 eggs
50ml milk
50ml double cream
drop of vanilla extract
50g caster sugar
1 tsp cinnamon
pinch of nutmeg
1 large brioche loaf, cut into 4 x 2in slices
100g butter
vanilla yogurt , to serve

Steps:

  • Peel and slice the bananas, mash with the maple syrup and set aside. Place the eggs, milk, cream, vanilla, sugar, cinnamon and nutmeg in a wide, shallow bowl and whisk to combine.
  • Heat oven to 160C/140C fan/gas 3. Using a sharp knife, slice open each slice of brioche from the top to form a pocket, leaving at least 1cm around the edges. Stuff the pockets with the banana mix. Soak the stuffed brioche in the egg mix for 30 secs on each side.
  • In a large non-stick pan, melt half the butter. When sizzling, place the brioche in the pan and fry for 2 mins each side until golden. You may have to do this in batches. Transfer to the oven to warm through for 5 mins. Serve drizzled with extra maple syrup and a spoonful of vanilla yogurt.

Steps:

  • Spread 1 tablespoon peanut butter on each bread slice. Divide the chocolate chips amond 4 slices; top with the remaining bread slices, peanut butter side down, to make 4 sandwiches.
  • In a shallow bowl, whisk together the milk, eggs, sugar, vanilla and salt. Soak each sandwich in the egg mixture until saturated, about 5 seconds. Transfer the sandwiches to a large platter in a single layer.
  • In a small saucepan, cook the jam and 3 tablespoon water over low heat, stirring occasionally, until warm and smooth.
  • In a large skillet, melt 1/2 tablespoon butter over medium-high heat. Add half of the sandwiches and cook until golden, about 2 minutes on each side. Repeat with the remaining butter and sandwiches. Slice and serve with the whipped cream and jam syrup.

3 cups honey
3 cups simple sugar syrup
4 cups sugar
2 cups water

Steps:

  • Soak the apricots in water overnight.
  • Drain off water. Purée apricots. Add honey and simple syrup. Store in refrigerator.
  • Warm on stove or in microwave. Put into little pitchers and hold each in oven until ready to serve.
  • To make simple sugar syrup, combine sugar and water in a saucepan and bring to a boil. Boil gently without stirring for 10 minutes. Allow to cool.
