Number Of Ingredients 11

1 lb. minced meat (beef or lamb)
1 large onion, diced
2 medium tomatoes, diced
2 cups basmati or other long grain rice
salt & pepper to taste
1/2 tsp. curry powder
1/4 tsp. garam masala (or use 1/8 tsp. each allspice, cinnamon and cloves)
1/2 tsp. cumin
3 TBS. olive oil
20 about 20 green leaves, tough center stem removed and cut into pieces approx. 4" squarish to make total of about 50 pieces
1 can tomato sauce

Steps:

  • Mix meat, onion, diced tomatoes, rice, spices, and 2 tbs. olive oil together until well combined. Blanch prepared leaves for about 30 seconds in boiling water, then remove to colander and drain well. Begin by spreading a leaf flat on your work surface. Place about 1 TBS. rice and meat mixture on leaf, then carefully roll up. Repeat until all leaves and stuffing have been used. (Leftover leaves and/or stuffing may be frozen.) Spread remaining 1 TBS. olive oil on bottom of Dutch oven, or other heavy bottomed pan. Place rolls in spiral pattern in pan, beginning with the outside and working your way in. Repeat with more rows if needed. Place a plate on top of the roll to keep them in place while they cook. Mix tomato sauce with enough water to cover rolls in their pan. Season with salt and pepper and more garam masala if desired. Carefully pour over top of rolls so as to not dislodge them. Cover pan and bring to a boil, then lower heat and simmer until water is absorbed and rice is cooked. Place a large serving platter over pan, then carefully flip platter and pan over. Leave pan in place (upside down on platter) for a few minutes, then remove pan. You should have a beautiful looking spiral design of leaves. Enjoy!

1 pound fresh broccoli rabe
1/4 cup extra virgin olive oil
3 cloves garlic, finely chopped
1/4 teaspoon salt
1 dry red hot pepper, crushed
1 1/2 pounds pork tenderloin
3 slices prosciutto
1/2 cup white wine

Steps:

  • Prepare the broccoli rabe by discarding coarse leaves, trim the stems by 1/2 inch, rinse and set aside. Bring water to boil, cook broccoli rabe for 2 minutes and drain. In a frying pan, heat oil, garlic, salt and hot pepper, add broccoli rabe and cook for 2 to 3 minutes. Allow rabe to cool, and cut into 1-inch pieces.
  • Begin to butterfly the pork tenderloin evenly. Lay flat on clean surface and top with 3 slices of prosciutto, then add chopped broccoli rabe. Start to roll the tenderloin from the bottom. Tie with 14-inches of butcher string making a knot.
  • Grill on covered barbecue for approximately 25 to 35 minutes on medium to high flame. Drizzle with white wine and cook for additional 2 minutes. Turn occasionally to cook evenly.

1 loaf unsliced French bread
6 tablespoons butter
1 head fresh garlic, peeled and chopped fine
2 tablespoons sesame seeds
1/4 cup grated parmesan cheese
1 1/2 cups sour cream
2 cups monterey jack cheese, cut into 1-inch cubes
2 teaspoons lemon pepper (optional)
2 tablespoons chopped fresh parsley
2 cups steamed broccoli, cut into small pieces

Steps:

  • Set oven to 350°F.
  • Cut the loaf in half lengthwise; tear out the soft center of bread in chunks, don't throw away the chunks of bread, (leaving the crust intact).
  • Lay the crust SHELLS on a lightly greased cookie sheet.
  • In a large skillet, melt butter, stir in the garlic and sesame seeds; cook for 1-2 minutes.
  • Stir in the torn bread chunks, and cook until golden brown, and the butter has been absorbed; remove from heat.
  • In a very large bowl, combine the sour cream, Jack cheese, Parmesan cheese, parsley and the lemon pepper (if using).
  • Stir in the steamed broccoli, and the buttered toasted bread chunks (add in the garlic bits in the frypan too!).
  • Toss all together well, and spoon into bread shells.
  • Cover loosely with foil, bake for 20 minutes.
  • Remove the foil, and continue to bake for another 10 minutes.
  • Serve warm-- delicious!

3-1/4 to 3-1/2 cups all-purpose flour
1 tablespoon sugar
1 package (1/4 ounce) quick-rise yeast
1 teaspoon salt
1 cup water
1 tablespoon butter, softened
1-1/2 cups finely chopped fresh broccoli, cooked and drained
1 cup shredded cheddar cheese
5 bacon strips, cooked and crumbled
1 large egg
1/2 teaspoon dried minced onion
1/2 teaspoon dried oregano
1 large egg white
1 tablespoon cold water

Steps:

  • In a large bowl, combine 2-1/4 cups flour, sugar, yeast and salt. In a saucepan, heat water and butter to 120°-130°. Add to dry ingredients. Beat on medium speed for 2 minutes. Add eggs and 1/2 cup flour; beat 2 minutes longer. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 4 minutes. Cover and let rest for 10 minutes., Meanwhile, in a large bowl, combine the broccoli, cheese, bacon, egg, onion and oregano. On a lightly floured surface, roll dough into a 16x9-in. rectangle with a 16-in. side facing you. Spoon broccoli mixture lengthwise over top two-thirds of dough to within 1 in. of edges. , Starting at the plain long side, fold dough over half of filling; fold over again. Pinch seams to seal and tuck ends under. Place, seam side down, on a greased baking sheet. With a sharp knife, cut into eight strips to within 1 in. of pinched edge. Separate strips slightly; twist to allow filling to show. Cover and let rise until doubled, about 15 minutes. , Beat egg white and cold water; brush over dough. Bake at 400° for 25 minutes or until golden brown. Remove from pan to a wire rack. Serve warm. Refrigerate leftovers.

  • To caramelize the onions, add 2 tablespoons olive oil to a non-stick pan over medium-high heat. Add sliced onion and a ½ teaspoon sea salt and cook for about 10 minutes, stirring occasionally. Once the onions begin to brown, turn the heat down to medium low and add 1 teaspoon of fresh thyme leaves. Continue cooking for about 10 to 15 more minutes. Stir occasionally so the onions brown evenly. You want them to be a light caramel color but not too dark because they will continue to cook in the oven. Once caramelized, set aside.
  • While the onions are browning, bring a large pot of water to a rolling boil. Add the sliced yellow potatoes first and then the trimmed broccoli crowns. If your pot is not large enough to fit both, blanch the broccoli first and then the potatoes. The broccoli will be blanched in about 3 to 4 minutes. Remove the broccoli from the water when they’re bright green, but still crisp. Let them cool while you continue blanching the potatoes for 1 or 2 more minutes as the potatoes take a bit longer to cook. Drain the potatoes to let them cool and discard the water.
  • When the broccoli crowns are cool, place them on a parchment lined baking sheet. Use a sharp knife to make 1 cut in the center of the crown, being careful not to go all the way down. Make 2 more cuts ¾ of an inch on either side of the center cut. Repeat with remaining broccoli crowns.
