My secret to these rich no-bake bites? Pretzels in the crust. They add a salty crunch to the classic peanut butter and chocolate pairing. -Jennifer Beckman, Falls Church, Virginia

Number Of Ingredients 6

1 package (16 ounces) miniature pretzels
1-1/2 cups butter, melted
1-1/2 cups peanut butter
3 cups confectioners' sugar
2 cups semisweet chocolate chips
1 tablespoon shortening

Steps:

  • Line a 13x9-in. baking pan with foil, letting ends extend up sides. Set aside 1-1/2 cups pretzels for topping. Pulse remaining pretzels in a food processor until fine crumbs form. In a large bowl, mix butter, peanut butter, confectioners' sugar and pretzel crumbs., Press into prepared pan. In a microwave, melt chocolate chips and shortening; stir until smooth. Spread over peanut butter layer. Break reserved pretzels and sprinkle over top; press down gently. Refrigerate, covered, until set, about 1 hour. Lifting with foil, remove from pan. Cut into 48 bars.

I often make a big batch of these peanut butter-flavored cereal bars on days that I don't want to heat up the kitchen. Kids especially love them, so they're great for picnics, potlucks and school bake sales. -Jane Thompson, Eureka, Illinois

Number Of Ingredients 6

1 cup sugar
1 cup light corn syrup
1/2 cup peanut butter
5 cups Rice Krispies
2 cups pretzel sticks
1 cup plain M&M's

Steps:

  • In a large microwave-safe bowl, combine the sugar and corn syrup. Microwave on high for 2 minutes or until sugar is dissolved. Stir in peanut butter until blended. Add the cereal, pretzels and M&M's; stir until coated. Press into a greased 15x10x1-in. pan. Cut into bars.

This candy tastes just like Skor or Heath candy bars. I adapted this recipe from "At Home with Family & Friends" cookbook from Cornerstone Television and also from a recipe my Aunt Rhoda often made. I used Matzoh crackers since I had some on hand and it tasted even better than the saltines that this recipe usually calls for! You may also substitute semi-sweet chocolate. This candy makes a great hostess gift or thank you gift.

Number Of Ingredients 6

3 -4 large matzoh crackers or 1 package saltine
1 cup butter
1 cup sugar or 1 cup sucanat
1 (12 ounce) package milk chocolate chips
3/4 cup chopped pecans or 3/4 cup sliced almonds
nonstick cooking spray

Steps:

  • Preheat oven to 350.
  • Line a cookie sheet with"sides" or jellyroll pan with aluminum foil.
  • Make sure there are no holes or room for liquid to leak out.
  • Lightly spray the foil with cooking spray.
  • Arrange matzoh or saltines (whole NOT crushed) in a single layer over foil.
  • In saucepan combine sugar and butter and bring to a boil.
  • As soon as mixture boils, remove from heat and pour gently over crackers.
  • Sprinkle nuts over crackers if desired.
  • Bake in preheated oven for 10 minutes.
  • Remove from oven and rearrange any crackers that have moved.
  • Immediately sprinkle chocolate chips over crackers and wait 1-3 minutes until softened and spread out evenly with a knife.
  • Cool and then chill in refridgerator for several hours.
  • Break apart then store in a sealed container or jar.
  • This candy tastes just like Skor or Heath bars!

SKOR OR HEATH BAR CAKE

Tomorrow (December 3) is my DH's birthday, and he requested a Skor 2-layer cake. After looking at several recipes on 'Zaar, this is what I ended up making. It's more of a process than a recipe, though. I used milk chocolate cake mix and milk chocolate frosting, but you can use any variety. We haven't tasted it yet; I will post an update when we do.

Number Of Ingredients 4

1 (2 1/4 ounce) box chocolate cake mix, prepared according to directions with water, oil, and eggs
1 (16 ounce) container chocolate frosting
3/4-1 cup Heath candy bars (Bits O'Brickle) or 3/4-1 cup Skor English toffee bit, toffee bar bits (Bits O'Brickle)
1 1/2 cups caramel ice cream topping (I used Smucker's)

Steps:

  • Prepare the cake mix according to the directions on the box for either two 8-inch or 9-inch layers. This step can be done a day in advance, provided that the layers are completely cooled before wrapping in nonstick aluminum foil.
  • Assemble the cake by placing one layer on the end destination plate/platter. Spread the top ONLY with 1/2 of the caramel topping, allowing a little bit to dribble down the sides.
  • Place the second layer on top of the caramel-topped first layer. Spread the remaining caramel on top of the second layer.
  • Frost the cake with the chocolate frosting. It is okay (even preferable) for the caramel and chocolate frosting to blend a bit.
  • On top of the frosting on the top layer, lightly press in the toffee bits until the top is coated. Although I didn't do so, you can also press toffee bits into the sides if enough remain.
