FAMILY-FRIENDLY STUFFED CHEESEBURGERS

- In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into twelve thin patties., Combine the cheddar cheese, mushrooms and cream cheese; spoon onto centers of six patties. Top with remaining patties; press edges firmly to seal., Grill burgers, covered, over medium heat or broil 4 in. from heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. Serve on rolls.

- In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Cook and stir mushrooms, onion and peppers in bacon drippings until tender. Using slotted spoon, remove to a small bowl; cool completely. Stir in bacon., In a large bowl, combine beef, steak sauce and seasoned salt, mixing lightly but thoroughly. Shape into 16 thin patties. Top eight of the patties with cheese, folding cheese to fit within 3/4 inch of edge. Spread with mushroom mixture. Top with remaining patties, pressing edges to enclose filling., Grill burgers, uncovered, over medium-high heat or broil 4 in. from heat 5-6 minutes on each side or until a thermometer inserted in meat portion reads 160°. Serve on rolls.

STUFFED ADOBO CHEESEBURGERS
Steps:
- Combine the chiles with the shredded cheese and cream cheese in a medium bowl. Stir to combine. Set aside.
- Combine the beef with 1 teaspoon salt and 1/2 teaspoon pepper in a medium bowl. Gently mix with your hands and form into 8 equal balls.
- Flatten 2 of the beef balls into patties and place about 1 tablespoon of the adobo cheese filling between the 2 patties. Pinch around the edges to seal and enclose the filling. Repeat with the remaining beef to form a total of 4 stuffed patties.
- Heat the oil in a large skillet over medium-high heat and cook the burgers until well-browned, 3 to 4 minutes per side.
- Spread the mayonnaise on the split sides of the buns. Top the bottom buns with the onion, lettuce, tomato and stuffed patties. Close the burgers and serve.
CHIPOTLE CHEESEBURGERS

STUFFED BACON CHEESEBURGERS
Steps:
- Combine the jack cheese and chopped bacon in a bowl. Put the beef in another bowl and season with salt and pepper; use a rubber spatula to mix it in. Flatten 1/4 of the meat mixture in the palm of your hand. Squeeze together about a tablespoon of the cheese and bacon mixture to make a little nugget; put it in the center of the ground beef. Bring up the sides of the patty over the filling, making sure the cheese is completely covered by the meat. Flatten slightly for a nice patty shape. Set them side by side on a platter in the refrigerator while preparing the grill.
- Place a large grill pan on 2 burners over medium-high heat or preheat an outdoor gas or charcoal barbecue and get it very hot. Brush the grates with oil to keep the burgers from sticking. Grill the burgers for 8 minutes per side for medium. (The USDA recommends cooking ground beef until it is no longer pink and the internal temperature is 160 degrees F.) Remove the burgers to a clean side plate while you toast the buns.
- Rub the grill rack with more oil and place the buns cut-side down, toast for 1 minute. Serve the burgers with your favorite condiment and any garnish you like, such as lettuce, sliced tomato, onion, and/or avocado.

- Combine beef, Worcestershire sauce, salt, & pepper. Divide into 12 equal parts.
- Combine cheese, bacon, & scallions.
- Take a portion of ground beef, form a well in the center. Pile in cheese mixture, then top with another portion of ground beef, forming the burger around the filling. Make sure the filling is completely covered with the meat.
- Cook 2 minutes each side on high, reduce to med-low and cook an additional 7-8 minutes more turning occasionally.
- Let rest 5 minutes before serving.
