Mark's Old-Fashioned Sausage and Peppers image

1/4 cup extra-virgin olive oil
2 cloves garlic, thinly sliced
1 large red onion, cut into 2-inch chunks
2 red bell peppers, cored, seeded, and cut into 2-inch chunks
2 green bell peppers, cored, seeded, and cut into 2-inch chunks
4 fresh, hot Italian sausages
4 fresh, sweet Italian sausages
1 cup milled or crushed canned Italian plum tomatoes
1 1/2 cups dry red wine
1 pinch of dried oregano
Salt and freshly ground pepper

Steps:

  • In a large skillet with a lid, heat the olive oil over medium-high heat. Add the garlic, onion, and peppers, and cook, stirring, until the onion is translucent, about 5 minutes. Add the sausages, and cook about 4 minutes more, until sausages begin to brown. Add the tomatoes, wine, oregano, and a large pinch of salt. Cover, bring to a simmer, and simmer gently about 25 minutes, until the peppers are very soft. Season with salt and pepper to taste. Serve immediately. Super-Easy Sausage and Peppers image

A simple and delicious way to serve sausage and peppers with a tomato-based sauce. This is one of my husband's and kids' favorite meals. They like it served over rice because it makes a lot of 'gravy' that soaks into the rice. It 's one of my favorites because it's quick, easy, and has only a few ingredients that I usually have on hand.

7 sweet Italian sausages, or more to taste, removed from the casings and cut into bite-size pieces
1 tablespoon olive oil, or more to taste
1 large sweet onion, halved and sliced
2 (14.5 ounce) cans tomato sauce
3 green bell peppers, sliced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spread sausage pieces into a baking dish.
  • Bake sausage in preheated oven until heated through, about 20 minutes.
  • Heat olive oil in a large skillet over medium-high heat. Saute onion in oil until translucent, 5 to 7 minutes.
  • Stir sausage with the onion. Pour tomato sauce over the sausage mixture; bring to a simmer and cook for 20 minutes.
  • Stir bell pepper into the mixture to coat in tomato sauce; cook until the bell pepper is tender, about 20 minutes more.

1 cup canned crushed Italian plum tomato
1 1/2 cups chianti wine
1 pinch dried oregano
salt and black pepper

Steps:

  • Divide oil between 2 large skillets with lids; heat over medium heat.
  • Divide garlic, onion and peppers between skillets and cook, stirring as needed, until onion is translucent, about 5 minutes.
  • Add sausages, 4 to a skillet, and cook about 4 minutes more until sausages begin to brown.
  • Add tomatoes, wine, oregano and a pinch of salt to pans.
  • Cover, bring to simmer for about 25 minutes, until peppers are soft.
  • Season with salt and pepper.
  • Serve with crusty bread.

2 pounds Italian sausage, thin link with cheese is preferable
2 green bell peppers, sliced
1 large yellow onions, sliced
2 large potatoes, sliced
5 cloves garlic, whole, smashed
¼ cup olive oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon Italian seasoning
Loaf of crusty Italian bread

Steps:

  • Place a saute pan on grill service to heat. Toss vegetables together with olive oil and seasoning. Place in hot saute pan. Cover with foil while sausage is cooking. Grill sausage over medium-hot coals 5-6 minutes on each side. Serve with a great loaf of crusty bread, a hunk of Parmesan cheese and some good olive oil! When sausage is finished place in the pan with vegetables, remove foil. Continue grilling until vegetables are tender, approximatley 30 minutes.

1 red onion, minced
2 red peppers, roasted and cut 1/2-inch slices
2 yellow peppers, roasted and cut 1/2-inch slices
1 dried ancho chile
Salt and pepper, to taste
2 cloves garlic, minced
8 fresh basil leaves, torn
1 teaspoon fresh oregano, minced
2 pounds sweet Italian sausage
2 cups dry red wine
28-ounce can whole San Marzano tomatoes, crushed by hand

Steps:

  • Saute onions, peppers and chile in olive oil until onions are brown. Add salt and pepper to taste. Stir in garlic and basil. Add oregano. Hold aside.
  • Prick sausage all over with a fork. Saute in skillet over medium heat until brown. Add enough wine to cover about 2/3 of the sausage. Add Sauteed vegetables, tomatoes and any liquid. Simmer gently, partially covered, for 20 minutes. Remove sausage and slice into 1-inch pieces. Can be served on pasta or with bread.

  • Heat the oil in a skillet over medium heat. Add the sausages; cook until browned on all sides, following cooking instructions indicated on the packaging. Remove sausages from the pan. Drain grease, leaving about a tablespoon for the vegetables.
  • Cook peppers and onions in skillet over medium heat until they begin to soften. Add garlic, salt, and pepper and cook one more minute.
  • Stir in Classico Tomato & Basil Sauce. Increase heat until sauce begins to boil; reduce heat and simmer over low heat.
  • Cut the sausages into 1-inch pieces; add to the pan and stir to combine. Cook until the sauce has thickened and the peppers and onions are soft, about 10 minutes.
  • Serve in bowls or on rolls as sandwiches.

This is from a Redpack Plum Tomatoes label. I didn't want to lose it, so I'm posting it here. It is great over pasta or on Italian rolls. I don't always use red bell peppers, mostly all green.
