1/2 cup vegetable oil
1/3 cup sugar
1/4 cup cider vinegar or 1/4 cup red wine vinegar
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon paprika
1 pinch white pepper
8 cups torn romaine lettuce
4 cups torn bibb lettuce or 4 cups boston lettuce
2 1/2 cups sliced fresh strawberries
1 cup shredded monterey jack cheese
1/2 cup chopped walnuts, toasted

Steps:

  • Combine the first seven ingredients in a jar with tight fitting lid; shake well.
  • Just before serving, toss the salad greens, strawberries, cheese and walnuts in a large salad bowl.
  • Drizzle with dressing and toss.

Poppyseed Dressing: 1/4 cup white sugar 1 teaspoon stevia sweetener (or two additional tablespoons sugar) 1/2 cup apple cider vinegar or white balsamic vinegar 1/8 cup orange juice 1 teaspoon salt 2 teaspoons Dijon mustard 1 teaspoon minced onion 1 cup vegetable oil or canola oil 1 tablespoon poppy seedsIn a blender or food processor, combine the sugar, stevia, vinegar, orange juice, salt, mustard, and onion, and process for 20 seconds. With the blender on high, gradually add the oil in a slow, steady stream. Remove from the blender and stir in the poppy seeds. Set aside or refrigerate until ready to use. Shake well before using on salad. Salad: 1 large head romaine lettuce, washed, chopped 1- 6 oz bag spinach or spring mix (greens combined should equal about 15 cups total) 1 can mandarin oranges, drained well 1/2 lb strawberries, washed and sliced 1 pint blueberries, washed and patted dry 1 cup pineapple, sliced into chunks, then thinly sliced (about 1/2 of a medium size pineapple) 1 cup pecans, toasted and cut in half To prepare salad: Using a large bowl or platter, arrange the greens on the platter. Sprinkle with a few pieces of fruit. Layer additional greens. Place the remaining fruits and chopped pecans on the greens. Top with sliced chicken. Drizzle about half of the dressing on the salad. Toss before serving. you may also plate the salad individually. In this case, toss the greens with the dressing and place on plates. Top each plate with fruit, nuts and chicken. Serve immediately. Meet the Cook: One reason I particularly like this recipe is that it's so versatile. I've served the salad with poultry, ham and pork all throughout the year and even used it to add color to the table at Christmas. Recently, when I brought this for a dinner at church, one lady asked if she could take home the little that was left for her husband's lunch the next day - and he very rarely eats salad or fruit. 1/4 cup sugar
2/3 cup pecan halves
2/3 cup vegetable oil
1/4 cup lime juice
2 tablespoons orange juice
2 tablespoons sugar
1 teaspoon lime zest, grated
1 teaspoon orange zest, grated
8 cups leaves lettuce, torn
8 cups romaine lettuce, torn
1 red onion, thinly sliced
1 orange, peeled, sliced
1 pint strawberry, cut into halves
2 avocados, thinly sliced

Steps:

  • For the pecans, mix the sugar with the pecans in a small skillet. Cook over low heat until te sugar melts, stirring to coat the pecans well.
  • spread on foil and cool, break pecans apart.
  • For the dressing, combine the oil, lime juice, orange juice, sugar, lime zest and orange zest in an airtight jar and shake well.
  • Chill until serving time.
  • For the salad, combine the lettuce, Romaine, onion, oranges, and strawberries in a large bowl and toss gently. Chill until serving time.
  • When ready to serve, add avocados to the salad and drizzle with dressing.
  • Toss gently and top with pecans.

Cupping the orange in one hand and working over the serving bowl, carefully cut the segments out from between the membranes. (Be sure to cut only until you reach the middle of the fruit!) Over a separate small bowl, firmly squeeze the remaining membranes to release all the orange juice.
  • Add the lemon juice and brown sugar to the freshly squeezed orange juice and stir until the sugar is dissolved. Pour over the strawberries and orange segments and gently toss to combine.
