4 oz. blue cheese crumbles
1/4 white onion, thinly sliced
1 clove garlic, minced
1/4 cup olive oil
2 Tbsp. apple cider vinegar
1 tsp. dijon mustard
1 tsp. honey
1/2 tsp. celery seed
1/2 tsp. sea salt
pinch black pepper

Steps:

  • Prep ingredients: Thinly slice cabbage and onion.Mince garlic.
  • Layer napa cabbage, onions, and blue cheese in serving bowl and chill until serving.
  • Whisk together garlic, olive oil, apple cider vinegar, dijon mustard, honey, celery seed, sea salt, and pepper until emulsified.
  • Toss dressing with cabbage and chill for 5-10 minutes before serving.

With its long crinkled leaves, Napa cabbage is more delicate in flavor than green or red cabbage, making this slaw recipe unique. Rice-wine vinegar and hot chili oil are available in most supermarkets; white or red radish may be substituted if daikon is unavailable.

1 small garlic clove, minced
Zest and juice of 1 lime
2 tablespoons rice-wine vinegar
2 teaspoons soy sauce
1/4 cup chile oil
Salt
3 cups (1/2 small head) Napa cabbage, very thinly sliced
1/2 red, yellow, or orange bell pepper, stem and seeds removed, very thinly sliced
3 scallions, white and pale-green parts only, cut into 2-inch lengths, julienned
2 ounces daikon, peeled, very thinly sliced into 1/2-by-2-inch pieces
1/4 cup (about 3 ounces) snow peas, trimmed and very thinly sliced
1/4 chives, snipped into 2-inch lengths

Steps:

  • In a small bowl, whisk together garlic, zest and juice of lime, vinegar, soy sauce, and chili oil. Season with salt; set aside.
  • In a medium bowl, toss together cabbage, pepper slices, scallions, daikon, snow peas, and chives. Pour dressing over the slaw, toss to combine, and serve.

1/4 cup rice vinegar

Steps:

  • In a large bowl, toss together cabbage and carrots. In a small bowl, combine sugar, vinegar, sesame oil, and soy sauce. Stir until sugar dissolves, then pour over cabbage mixture. Toss until slaw is coated and top with mint leaves.

1 lime, juiced
3 tablespoons rice vinegar
2 tablespoons Asian chili oil
1 tablespoon mayonnaise
1 tablespoon soy sauce
3 cups finely shredded napa cabbage
1 red bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
1/2 cup thinly sliced snow peas
3 scallions, thinly sliced
Salt and freshly ground black pepper

Steps:

  • Whisk together the lime juice, vinegar, chili oil, mayonnaise and soy sauce in a large bowl. Add the cabbage, peppers, snow peas and scallions and toss to combine. Season with salt and pepper, to taste. Refrigerate for at least 30 minutes to allow flavors to meld.

1 head napa cabbage
1 bunch minced green onions
⅓ cup butter
1 (3 ounce) package ramen noodles, broken
2 tablespoons sesame seeds
1 cup slivered almonds
¼ cup cider vinegar
¾ cup vegetable oil
½ cup white sugar
2 tablespoons soy sauce

Steps:

  • Finely shred the head of cabbage; do not chop. Combine the green onions and cabbage in a large bowl, cover and refrigerate until ready to serve.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Make the crunchies: Melt the butter in a pot. Mix the ramen noodles, sesame seeds and almonds into the pot with the melted butter. Spoon the mixture onto a baking sheet and bake the crunchies in the preheated 350 degrees F (175 degrees C) oven, turning often to make sure they do not burn. When they are browned remove them from the oven.
  • Make the dressing: In a small saucepan, heat vinegar, oil, sugar, and soy sauce. Bring the mixture to a boil, let boil for 1 minute. Remove the pan from heat and let cool.
  • Combine dressing, crunchies, and cabbage immediately before serving. Serve right away or the crunchies will get soggy.

1 large red bell pepper, coarsely chopped
1 large green bell pepper, coarsely chopped
1 small jicama, peeled, julienned (matchstick-cut) 1x1/4x1/4 inch (2 cups)
3 tablespoons sliced fresh chives
3 tablespoons rice vinegar
3 tablespoons honey
2 tablespoons olive oil
1 teaspoon grated lemon peel
1 to 2 tablespoons fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon grated gingerroot, if desired

Steps:

  • In 3-quart clear bowl, mix slaw ingredients.

1 head napa cabbage, chopped
4 spring onions, diced

Steps:

  • Melt butter in a large skillet over medium heat; cook and stir sunflower kernels and ramen noodles in hot butter until sunflower kernels are lightly browned and fragrant, 3 to 5 minutes. Remove from heat and transfer into a bowl to cool.
