CREAMY COLESLAW WITH PINEAPPLE

Creamy Coleslaw With Pineapple image

We love creamy coleslaw with pineapple. This one comes out great. Goes great with B-B-Q ribs or pulled pork. If you don't want as sweet you can use less sugar and add a little more apple cider vinegar.

Ingredients

SLAW MIX
6 c finely shredded cabbage
2 medium carrots, shredded
1 Tbsp grated onion
1 can(s) drained pineapple chunks, diced, 18 - 20 oz.
to taste salt and pepper
DRESSING
2/3 c mayonnaise
2 Tbsp apple cider vinegar
1 Tbsp vegetable oil
2 Tbsp celery seed
1/2 c milk or half & half
1/2 c sugar

Steps:

1. Toss all the slaw mix ingredients together in a large bowl.
2. Put all the dressing ingredients in a separate bowl and whisk well
3. Pour dressing over slaw mix and toss well. Cover and refrigerate for at least 2 hours.
4. Before serving, toss well again.

Ingredients

3 cups shredded cabbage
3/4 cup shredded carrot
1 can (8 ounces) unsweetened crushed pineapple, drained
1/3 cup mayonnaise
4 teaspoons sugar
4 teaspoons white vinegar

Steps:

In a small bowl, combine the cabbage, carrot and pineapple. In another small bowl, whisk the mayonnaise, sugar and vinegar; pour over pineapple mixture; toss to coat. Serve immediately.

Ingredients

1 (1 1/3 ounce) package whipped topping (dream whip)
1/2 cup cold milk
1/2 teaspoon vanilla extract
1 (3 ounce) package cream cheese, softened
1/4 cup sugar
1 (15 1/2 ounce) can crushed pineapple, drained
1/2 cup nuts
1 cup fresh strawberries, sliced

Steps:

Prepare topping with milk and vanilla according to package directions on box and chill.
Cream together cream cheese and sugar.
Add pineapple and nuts.
Fold in whipped topping then fold in strawberries.
Chill 3 hours.
Garnish with whole strawberrys.
