Peculiar looking flourless cookies. For rum-packed flavor try using 2 teaspoons rum extract in place of the vanilla.

Number Of Ingredients 10

1 ½ cups dates, pitted and chopped
¼ cup butter
2 eggs
1 cup white sugar
¼ teaspoon salt
1 teaspoon vanilla extract
½ cup chopped walnuts
3 cups crisp rice cereal
½ cup flaked coconut
⅓ cup confectioners' sugar

Steps:

  • Melt butter or margarine in heavy skillet. Add slightly beaten eggs. Stir in dates, sugar, salt and vanilla. Cook over low heat stirring constantly until thick and well blended.
  • Have ready crisp rice cereal and chopped nuts in large bowl. Stir cooked mixture into them until coated.
  • Chill. Put by teaspoonful on cookie sheet. Chill again. When cold roll in crisp rice crumb and coconut mixture or powdered sugar.

Don't let the dates turn you off from this recipe; you can't even tell that they are the main ingredient. My grandma made these cookies every year for the Christmas holidays, and I always looked forward to them more than her sugar cookies.

1 1/2 cups dates
1 cup brown sugar
1 egg
1 cup walnuts, chopped
1 tablespoon butter
1 1/2 cups coconut
1 cup Rice Krispies

Steps:

  • Mix dates, brown sugar, egg, chopped walnuts, and butter in a cold frying pan.
  • Turn element on and cook slowly for 10 minutes.
  • Add Rice Krispies and 1 cup of the coconut.
  • Shape into balls.
  • Roll balls in coconut.
  • Store in an air tight container.

2 eggs
1 cup lightly packed brown sugar
2 cups chopped dates
1 teaspoon vanilla
1/2 cup chopped walnuts
1/2 cup chopped candied red cherries
1/2 cup chopped green glazed cherries
2 cups crisp rice cereal
2/3 cup desiccated coconut

Steps:

  • Beat eggs and brown sugar together; stir in dates.
  • Pour mixture into a lightly greased heavy frying pan.
  • Cook, stirring constantly, over medium heat until dates are soft (8 to 10 minutes); remove from heat.
  • Stir in remaining ingredients except coconut; cool to lukewarm.
  • Shape mixture into small balls and roll in coconut.

3 cups flour, sifted
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/4 teaspoons salt
2 teaspoons nutmeg
1 cup sugar
1 cup raisins or 1 cup currants
1 cup shortening
6 tablespoons milk
2 eggs

Steps:

  • Heat frying pan to 350°F.
  • Beat together 2 eggs and 6 Tbsps Milk.
  • Add dry ingredients & shortening in a mixing bowl, blend well.
  • Add Egg and Milk mixture to dry ingredients, stir until well mixed.
  • Place plastic on bowl to cover dough & chill dough in refrigerator about 2 hours.
  • On floured board, roll dough in 4 parts to 1/4" thickness.
  • Cut shapes with floured glass or cookie cutter.
  • Fry in electric fry pan until golden.

  • In a 9-inch skillet over medium heat, melt the butter. When it's fully melted, stir in the brown sugar until dissolved and incorporated. Take it off the heat and let it cool while you prepare the other ingredients.
  • In a small bowl, beat the egg with the vanilla extract. In another bowl, whisk together the flower, baking soda, and salt. Add the dry ingredients to the skillet and stir in the egg mixture until a dough begins to form. Stir in half the bag of mini chocolate chips.
  • Flatten the dough with the back of a spoon until it reaches the edges of the pan all around. Top with the remaining mini chocolate chips, if desired (and trust me, I desired). Move the skillet back onto the heat and lower the temperature to medium-low. Allow to cook in the skillet for 40-50 minutes, checking periodically to make sure the bottom isn't burning. The finished cookie should be set on the sides and bottom, but slightly gooey in the center.
