MY MOM was known as the best cook in the country. This delicious glaze was in her collection of handwritten recipes. I laminated the ones I use most often, and this favorite was included. It's easy to prepare, and everyone seems to like ham made this way. -Dorothy Smith, El Dorado, Arkansas

Number Of Ingredients 5

1 fully cooked boneless ham (4 to 5 pounds)
3/4 to 1 cup water
1/4 cup orange marmalade
1/4 cup prepared mustard
1/4 teaspoon ground ginger

Steps:

  • Place ham in a shallow roasting pan; add water to pan. Bake, uncovered, at 325° for 1 hour. , In a small bowl, combine the marmalade, mustard and ginger. Brush some over the ham. Bake 1 hour longer or until a thermometer reads 140°, brushing occasionally with glaze.

This is from the 2003 Chrisco calenser. It looks good, so I'm putting here to keep it safe til next Christmas!

3 kg ham
800 g apricots in syrup
75 g brown sugar
7 1/2 ml ground ginger
10 ml apricot jam, smooth
4 whole cloves
reserved apricot syrup, from glaze
1 cinnamon stick
25 ml ground mixed spice
10 ml white wine vinegar
reserved apricot
cherries

Steps:

  • Score ham, insert cloves in squares and bake at 170C for 45 minutes basting with the glaze until crisp and golden brown.
  • GLAZE:.
  • Drain syrup from apricots, measure out 125ml and reserve remainder.
  • Place apricot syrup, sugar, ginger and jam in a small pan and melt over a low heat, stirring.
  • Make reserved apricot syrup up to 250ml, with water if necessary.
  • Heat syrup, spices and vinegar in a large shallow saucepan.
  • Add apricots, hollows down and gently simmer for 5 minutes.
  • Remove from heat and cool apricots in syrup.
  • Place a cherry in each half and arrange around ham.

7 1/2 lbs cured ham (about)
1/2 cup honey
1 tablespoon ground ginger
2 tablespoons Dijon mustard
1/2 teaspoon fresh ground pepper

Steps:

  • Preheat oven to 325°.
  • Remove ham from refrigerator 1 hour before cooking to bring to room temperature.
  • Put ham in a roasting pan and place on a rack.
  • Using a knife, score fat on top in a diamond pattern.
  • Mix remaining ingredients in a bowl.
  • Brush about 3/4 of honey mixture on ham with a pastry brush.
  • Bake 2 hours, basting with remaining mixture and pan drippings every 45 minutes.
  • Remove from oven and serve warm or at room temperature.
