Do you have extra apples but don't feel like making a pie? Try this easy-to-make bar with layers of brown sugar and oats surrounding apples and melted caramel.

1 cup packed brown sugar
1/2 cup butter or margarine, softened
1/4 cup shortening
1 3/4 cups Gold Medal™ all-purpose flour
1 1/2 cups quick-cooking oats
1 teaspoon salt
1/2 teaspoon baking soda
4 1/2 cups coarsely chopped peeled tart apples (3 medium)
3 tablespoons Gold Medal™ all-purpose flour
1 bag (14 ounces) caramels

Steps:

  • Heat oven to 400°F. Mix brown sugar, butter and shortening in large bowl. Stir in 1 3/4 cups flour, the oats, salt and baking soda. Reserve 2 cups oat mixture; press remaining oat mixture in ungreased rectangular pan, 13x9x2 inches.
  • Toss apples and 3 tablespoons flour; spread over mixture in pan. Heat caramels over low heat, stirring occasionally, until melted; pour evenly over apples. Sprinkle with reserved oat mixture; press lightly.
  • Bake 25 to 30 minutes or until topping is golden brown and apples are tender. For 36 bars, cut into 6 rows by 6 rows while warm. Store covered in refrigerator.

1/2 cup butter, softened
1/4 cup shortening
1 cup packed brown sugar
1-3/4 cups all-purpose flour
1 cup old-fashioned or quick-cooking oats
1 teaspoon salt
1/2 teaspoon baking soda
1/2 cup chopped pecans, optional
FILLING:
4-1/2 cups coarsely chopped peeled tart apples
3 tablespoons all-purpose flour
1 package (11 ounces) caramels
3 tablespoons butter

Steps:

  • In a large bowl, cream butter, shortening and brown sugar until light and fluffy, 5-7 minutes. Add flour, oats, salt and baking soda; mix well. If desired, stir in pecans. Set aside 2 cups. Press remaining oat mixture into an ungreased 13x9-in. baking pan. , For filling, toss apples with flour; spoon over the crust. In a saucepan, melt the caramels and butter over low heat; drizzle over apples. Top with the reserved oat mixture. , Bake at 400° until lightly browned, 25-30 minutes. Cool before cutting into bars.

Caramel Apple Cookie Bars full of apple, caramel, and oats!

1 1/2 cups all-purpose flour
1 1/2 cups old-fashioned oats ((or quick oats))
1 cup brown sugar (packed)
3/4 teaspoon baking soda
1 teaspoon salt
6 tablespoons unsalted butter (melted & cooled)
1 large egg
1 teaspoon vanilla
3 cups apple (peeled, cored, and chopped (about 3 apples such as Granny Smith))
16 ounces caramel squares (unwrapped)
1/3 cup heavy cream

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 13x9 baking dish or spray with nonstick spray.
  • In a large mixing bowl, mix together flour, oats, brown sugar, baking soda, and salt until well combined. Mix in melted butter, egg, and vanilla until well combined.
  • Spread about 2/3 of mixture onto bottom of prepared baking dish to form an even thin crust layer. You may need to use the back of a fork or your hands to spread evenly. Set remaining crust mixture aside.
  • Bake crust for about 12-14 minutes or until slightly puffed.
  • Meanwhile, place chopped apples, caramels, and cream in small saucepan over low heat. Stir until caramel is smooth and melted and apples are slightly soft.
  • Pour caramel apple mixture over baked crust. Sprinkle remaining crust mixture on top.
  • Bake an additional 15-20 minutes at 350 degrees F or until edges are slightly browned. Cool then cut into bars.

1/2 cup (115g) unsalted butter, melted
1/4 cup (50g) granulated sugar
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1 cup (125g) all-purpose flour (spoon & leveled)
2 large apples, peeled and thinly sliced (1/4 inch thick)*
2 Tablespoons all-purpose flour
2 Tablespoons granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/2 cup (40g) old-fashioned oats
1/3 cup (70g) packed light or dark brown sugar
1/4 teaspoon ground cinnamon
1/4 cup (31g) all-purpose flour (spoon & leveled)
1/4 cup (60g) unsalted butter, cold and cubed
homemade salted caramel or store-bought caramel sauce

Steps:

  • Preheat the oven to 300°F (149°C). Line the bottom and sides of an 8-inch square baking pan with parchment paper leaving enough overhang on all sides. Set aside.
  • Stir the melted butter, granulated sugar, vanilla, and salt together in a medium bowl. Add the flour and stir until everything is combined. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes and then remove from the oven. (As the crust bakes, you can prepare the filling and streusel.)
  • Combine the sliced apples, flour, granulated sugar, cinnamon, and nutmeg together in a large bowl until all of the apples are evenly coated. Set aside.
  • Whisk the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the chilled butter with a pastry blender or two forks (or even with your hands) until the mixture resembles coarse crumbs. Set aside.
  • Turn the oven up to 350°F (177°C). Evenly layer the apples on top of the warm crust. It will look like there are too many apple slices, so layer them tightly and press them down to fit. Sprinkle the apple layer with streusel and bake for 30-35 minutes or until the streusel is golden brown.
  • Remove from the oven and allow to cool for at least 20 minutes at room temperature, then chill in the refrigerator for at least 2 hours (or overnight). Lift the foil or parchment out of the pan using the overhang on the sides and cut into bars. I usually cut them into 16 smaller bars, but you can cut them into 12 larger bars. Once cut, drizzle some salted caramel sauce on top of each. These apple pie bars can be enjoyed warm, at room temperature, or even cold.

2 granny smith apples (large, cored, peeled, and cut in 1 cm cubes)
1/4 cup water
2 -3 tablespoons sugar
1/2 teaspoon cinnamon
1 tablespoon cornstarch
1/2 cup butter, softened (no substitutes)
3/4 cup all-purpose flour (I usually substitute 1 Tbsp flour for corn starch)
1/4 cup icing sugar
1/2 cup icing sugar (scant 1/2 cup)
1/2 cup sugar (scant 1/2 cup)
3/4 cup flour (scant 3/4 cup)
1/2 cup butter, softened (scant 1/2 cup)
3 -4 tablespoons caramel topping

Steps:

  • Core and peel apples, cut into 1 cm cubes.
  • For the filling, combine apples in a small pot with water, sugar, cinnamon and cornstarch.
  • Set on medium-low heat to soften while you prepare the crust and topping.
  • For the shortbread crust, mix the icing sugar into the butter.
  • Add the flour and stir until smooth and whipped-looking.
  • Spread crust mixture evenly into the bottom on a 9"x9" pan.
  • Once the apples are softened but not mushy, spread on top of the crust.
  • Mix the icing sugar, sugar, and flour of the topping ingredients; stir in the butter until it is crumbly like moist bread crumbs.
  • Take handfuls of the topping and sprinkle over the apples, breaking up big clumps until you can't see apples anymore. You may not use all of the topping.
  • Bake at 375 degrees Fahrenheit for 20 to 30 minutes or until lightly browned on top; cool completely.
  • Drizzle with caramel ice cream topping in a nice diagonal grid.
  • Cut into 9 pieces.
  • If you want to be really decadent, you could serve it with ice cream.

2 cups all-purpose flour
2 cups quick cooking oats
1 ½ cups packed brown sugar
1 teaspoon baking soda
1 ¼ cups butter, melted
2 cups apples - peeled, cored and sliced
½ cup chopped walnuts
1 ½ cups caramel ice cream topping
½ cup all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 15x10 inch jellyroll pan.
  • In a large bowl, combine the flour, quick cooking oats, brown sugar, and baking soda. Stir in the melted butter. Mix until crumbly. This is the crust. Press 1/2 of this mixture into the prepared baking pan. Bake for 8 minutes in preheated oven.
  • In a small pan, over medium heat combine the caramel topping and the remaining 1/2 cup of flour. Stirring constantly, bring to a boil and cook for 3 to 5 minutes. This is the caramel filling.
  • Spread apple slices evenly over the baked crust. Sprinkle on the nuts. Then Pour the caramel filling over the apple layer. Crumble the remaining crust mixture over the top of everything. Bake again for 20 to 25 minutes or until golden brown. Cool before cutting into bars.
