CLASSIC RUM BALLS RECIPE
These Easy Rum Balls are a classic no bake Christmas recipe. Boozy truffles with cookies and cocoa - these are super delicious and perfect any way you coat them!

Steps:
- Place toasted pecans in a food processor and process until fine. Be careful not to process so much they turn into pecan butter. Remove the pecans from the food processor.
- Add the vanilla wafers to the food processor and process until finely ground.
- Add the pecans back into the food processor along with the powdered sugar, cocoa, corn syrup, vanilla and rum. Process until mixture is thick and combined.
- Scoop 1 tablespoon size balls and roll between your hands. Roll in additional cocoa powder and/or powdered sugar. Store in an airtight container in the refrigerator for up to 2 weeks.

EASY, FESTIVE (AND BOOZY!) RUM BALLS RECIPE
If you'd like to gift rum balls, you may want to pick up a set of Mini Foil Wrappers, which are perfect for rum balls or truffles or chocolate-dipped peanut butter balls or anything else similarly sized. A #100 scoop is also particularly helpful for shaping, though you absolutely can use a teaspoon or simply your hands to pinch of portions of the dough and roll into balls.

- Place vanilla wafers in a food processor and pulse into fine crumbs. There might be a few large pieces that don't catch the blade at this step, but they'll eventually end up getting pulverized, so don't worry. (Alternatively, place vanilla wafers into a Ziploc bag and bash them with a rolling pin until they are fine pieces).
- Add confectioners' sugar, cocoa and corn syrup and pulse till combined. Add the 1/3 cup rum and pulse to combine. If necessary, slowly add more rum to the food processor until the mixture comes together and forms a mass around the blade or holds together when you pinch it.
- Using a teaspoon or a #100 scoop, scoop out balls from the processor, roll them gently with your hands into irregular-shaped balls, and drop them into a plate (or shallow tupperware) filled with a thin layer of powdered sugar. Shake the vessel to coat the balls, then transfer balls to an airtight storage container until you are ready to serve them. Store in the fridge or freeze for up to 3 months. Bring to room temperature briefly before serving.
COCOA RUM BALLS
This delicious smooth confection is an impressive dessert for the holidays. These are wonderful for parties, and perfect for holiday gifts to your loved ones. A half cup of orange juice plus one teaspoon of freshly grated orange peel can be substituted for the rum in this recipe.

- Attach the following instructions to the jar: Mocha Rum Balls: Place contents of jar into a bowl.

RUM BALLS
I wanted a good rum ball with a lot of kick, so I sat down and came up with this recipe. I didn't realize how good these were until one year I didn't make them for work. I just about got lynched! Needless to say, I've made them every year since (about 20 years). These are best if you use Meyers Original Dark Rum® chilled, and Nabisco® 'Nilla wafer cookies. They are at their peak if you make them 2 days in advance. Remove from fridge 30 minutes before serving.

- Place vanilla cookies in a food processor and process into fine crumbs.
- Heat chocolate chips and corn syrup together in a saucepan over low heat. Cook, stirring often, until chocolate is melted and smooth, about 5 minutes. Remove from heat and stir in rum and confectioners' sugar until smooth. Fold in cookie crumbs; dough will be sticky.
- Place saucepan in the refrigerator until dough is firm and easy to roll, about 15 minutes. Cover 2 plates with waxed paper; dust with confectioners' sugar.
- Roll dough into 1-inch balls and place on the prepared plates. Dust rum balls with confectioners' sugar. Refrigerate until firm, about 30 minutes.
- Remove rum balls from refrigerator and transfer to a resealable bag, including the extra confectioners' sugar. Seal the bag and shake to coat the rum balls completely with confectioners' sugar.

- Preheat oven to 325°. In a large bowl, cream butter and sugar until light and fluffy. Beat in vanilla. In another bowl, whisk flour, cocoa and coffee granules; gradually beat into creamed mixture. MOCHA BALLS
Amazing good little chocolate covered balls. Very addictive and so pretty! Cook time is fridge time.

Steps:
- Combine crumbs, cocoa, coconut, jam, liqueur and water in a bowl and mix well.
- Roll mixture into balls.
- Use two level teaspoons of mixture for each ball.
- Place balls onto baking paper lined trays and refrigerate, covered, for 30 minutes.
- Dip balls, one at a time, into the melted dark chocolate.
- Return to fridge on the tray and refrigerate until chocolate is set.
- Spoon the melted white chocolate into a zip lock bag and snip one small corner off the bag.
- Drizzle chocolate decoratively over the balls and allow chocolate to set.
- These can be made up to 1 week ahead of serving and stored in an airtight container in the fridge.

- Heat a skillet over medium-high heat. Add the almonds, stirring occasionally, and toast for about 10 minutes just until the nuts smell warm and fragrant. Allow toasted almonds to cool completely, and them grind them in a food processor until they’re the texture of fine sand. Do not over-process or they’ll become pasty.
- In a large glass bowl, add dry ingredients: ground almonds, ground cookies, ground coffee beans, cocoa powder, and powdered sugar. Stir with a large rubber spatula to combine ingredients. Then, add the wet ingredients: honey or corn syrup, and rum. Stir well to incorporate. Press ingredients against the side of the bowl with the spatula to thoroughly saturate them. Work the ingredients into a dough. If dough appears too grainy or won’t stick together easily, add more rum – a teaspoon at a time.
- Form the balls: Using a small cookie scoop or a Tablespoon-sized measuring spoon, scoop portions of dough into your hand and squeeze it together. Gently roll the dough into 1” sized balls, then roll each ball in your choice of coatings (cocoa, cookie crumbs, etc.) right away. If you wait too long after rolling them, the coatings won’t stick as well to the rum balls.
