I bake something almost every day-either in the morning before everyone's awake or in the evening. I whip up these tender muffins in no time and serve them with jam for breakfast or ice cream and chocolate syrup for dessert. -Stephanie Kienzle, North Miami Beach, Florida

Number Of Ingredients 10

1/2 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
2 large eggs
1-1/2 cups mashed ripe bananas (about 3 large)
3 teaspoons vanilla extract
2 cups all-purpose flour
3 teaspoons baking soda
1 cup chopped walnuts
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350°. Cream butter and sugars. Beat in eggs, bananas and vanilla. In another bowl, combine flour and baking soda; add to creamed mixture just until combined. Stir in walnuts and chocolate chips. Fill greased or paper-lined muffin cups two-thirds full. , Bake until a toothpick comes out clean, 20-25 minutes. Cool 5 minutes before removing from pans to wire racks.

These muffins are so moist and full of flavor! I have looked at dozens of recipes and most had too much sugar for my liking. There is absolutely no need for a lot of sugar to make these muffins delicious. Because they have bananas and chocolate chips, I just added 1/2 cup of sugar, which turned out perfect!

1 ½ cups all-purpose flour
¼ cup unsweetened cocoa powder
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup white sugar
½ cup canola oil
1 egg
¼ cup milk
1 teaspoon vanilla extract
2 large very ripe bananas, mashed
¾ mini semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a muffin tin with paper liners.
  • Combine flour, cocoa, baking powder, baking soda, and salt together in a large bowl.
  • Whisk sugar, oil, egg, milk, and vanilla extract together in a separate bowl. Stir into flour mixture until just moistened. Fold in bananas and chocolate chips.
  • Divide batter among the muffin cups, filling each about 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

1-1/2 cups all-purpose flour
1 cup sugar
1/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1-1/3 cups mashed ripe bananas (about 3 medium)
1/3 cup canola oil
1 large egg, room temperature
1 cup miniature semisweet chocolate chips

Steps:

  • Preheat oven to 350°. Whisk together the first 6 ingredients. In a separate bowl, whisk bananas, oil and egg until blended. Add to flour mixture; stir just until moistened. Fold in chocolate chips., Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm.

¾ cup white sugar
½ cup butter, softened
1 tablespoon brown sugar
1 tablespoon instant hot chocolate mix
3 bananas, peeled
1 large fresh peach - peeled, pitted, and diced
¼ cup milk
2 eggs
1 tablespoon vanilla extract
2 cups all-purpose flour
½ cup chopped walnuts
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease the bottom of a 5x9-inch loaf pan.
  • Beat white sugar and butter together in a large bowl with an electric mixer until light and fluffy. Add brown sugar and hot chocolate mix; stir well.
  • Place bananas, peach, milk, eggs, and vanilla extract in a blender; blend until smooth. Stir into butter mixture until well incorporated.

Steps:

  • Combine flour, baking powder, salt, cinnamon.

4 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 cup sugar
1 1/2 cups fruit juice (I used pomegranate blueberry juice)
1/4 cup coconut oil
1 peach, peeled and diced
2 bananas, ripe, mashed
1 ounce semi-sweet chocolate baking square, shredded

Steps:

  • Preheat oven to 325.
  • Line muffin pan with cups, or grease lightly.
  • In large bowl, combine flour, baking powder, cinnamon and sugar.
  • In medium bowl, beat together juice, oil and banana. Mix in peach and chocolate.
  • Add wet ingredients to dry and mix until well combined.
  • Pour batter into muffin pan and bake 35-45 minutes or until golden brown.

You know the trouble to finish off banana before they all go brown... But it turned out really really really nice! Give it a go if you are in the mood of experimental muffin :)

3/4 cup unsalted butter
2/3 cup whole milk
2 large eggs
2 large egg yolks
1 1/2 teaspoons vanilla extract
3 cups all-purpose flour
1 cup brown sugar
2 tablespoons cocoa powder
1 tablespoon baking powder
1 teaspoon salt
3 large bananas

Steps:

  • Preheat oven to 375 degrees. (190C).
  • Place rack in top third of oven.
  • Place muffin cups on the trail.
  • Melt butter in a small saucepan over moderately low heat, then remove from heat.
  • Whisk in milk, then whisk in whole egg, yolk, and vanilla until combined well.
  • Whisk together flour, sugar, baking powder, cocoa powder, and salt in a bowl, then add milk mixture and stir until just combined. Notice: NEVER over mix the ingredients, for muffins, the best way is to mix by hand with a fork :).
  • Cut banans into small cubes, and then fold them in and mix slightly.
  • Divide batter among the muffin cups, spreading evenly. I tend to fill the cups a bit full so that the muffins will get over the cup top after baking - just like what we get from the shops!
  • Bake about 18 to 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
  • Open the oven a bit to let the muffins settle before move out. Then cool in pans on a rack 15 minutes.
  • Serve warm or at room temperature.
