APPLESAUCE OATMEAL CAKE WITH BROILED COCONUT TOPPING

Steps:
- In 1-quart saucepan, heat applesauce to boiling over medium-high heat. Stir in oats. Let stand 20 minutes.
- Heat oven to 350°F. Grease bottom and sides of 9-inch square pan with shortening. In large bowl, beat 1/2 cup butter and granulated sugar with electric mixer on medium speed until light and fluffy. Beat in vanilla and eggs until fluffy. Beat in applesauce mixture just until mixed. Stir in flour, baking soda, cinnamon, nutmeg and salt, scraping bowl once, just until blended. Pour into pan.
- Bake 40 to 50 minutes or until toothpick inserted in center comes out clean.
- Meanwhile, in small bowl, mix all topping ingredients until well blended. Spread topping over hot cake. Broil cake with top 6 inches from heat 1 to 2 minutes or until top is golden and bubbly. Cool 30 minutes. Serve warm.

CHOCOLATE CAKE WITH BROILED COCONUT FROSTING
Steps:
- Gather the ingredients.
- Preheat oven to 350 F. Grease and flour a 9-inch-square baking pan or spray with a flour and oil baking spray.
- Combine the flour, granulated sugar, cocoa, baking soda, and salt in a mixing bowl.
- Add the oil, buttermilk, and vanilla, along with the beaten egg into the bowl with the dry ingredients. Whisk or slowly beat until well blended.
- Pour into prepared pan and bake for 35 to 40 minutes. Allow it to cool down slightly before topping it with the coconut mixture.
- Combine topping ingredients in a small bowl, stirring until well blended.
- Spread the topping over the cooked warm cake and broil it for about 4 inches from heat for 3 minutes, or until topping is browned and bubbly.
- Serve and enjoy!

- Pour boiling water over dates in a small bowl, and let stand until cool.
- Measure flour, baking powder, soda, salt, and nuts into a small bowl. Stir to mix.
- Cream 1/4 cup butter or margarine and white sugar together in a mixing bowl; beat in egg and vanilla. Add flour mixture to creamed mixture in three parts alternately with date mixture in two parts, beginning and ending with dry mixture. Spread batter into a greased 9 x 13 inch pan.
- Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until an inserted wooden pick comes out clean.
- To Make Topping: Mix coconut, brown sugar, 6 tablespoons butter and cream in a small saucepan over medium heat. Boil for three minutes. Spread over warm cake, and brown under broiler.

LAZY DAISY CAKE
A vintage cake that has stood the test of time! Lazy Daisy Cake is a small yellow cake with a broiled coconut topping. Easy and delicious!

- Preheat the oven to 350°Fahrenheit. Grease with shortening, then dust with flour an 8" square or 9" round baking pan.
- In a mixing bowl, beat the eggs until frothy.
- Add the sugar, beating at high speed until mixture is thickened and turns a lemon color.
- Mix in the flour, baking powder and salt.
- In a saucepan over medium heat, heat the milk and butter together to boiling. Remove from the heat and stir in the vanilla.
- Add the heated milk to the ingredients in the bowl and beat to combine.
- Pour the batter into the prepared pan. Bake for 30 minutes, until the top springs back when you touch it. Allow the cake to cool for 10 minutes.
- Turn on the broiler to "low" in the oven.
- While the cake is cooling, make the topping.
- Melt the butter in a microwave safe bowl.
- Add the brown sugar, milk and coconut, stirring to combine.
- Pour the topping over the warm cake, and place under the broiler for 2 to 3 minutes, or until the topping is golden brown and bubbling. Watch it closely! Cakes under the broiler can burn easily.
- Store the cake at room temperature in an airtight container for up to 3 days.
- Freeze any leftovers in an airtight container for up to a month.
