BREAKFAST STRATA

Breakfast Strata image

My grandmother makes this every Christmas morning, and it's amazing. My husband hates eggs and he always has seconds, even my 1- and 2-year-old gobble this up. Perfect for breakfast, lunch, or dinner! Ingredients are forgiving; add your favorites or spice it up. Just make sure your veggies are not going to water it down.

BREAKFAST STRATA

Breakfast Strata image

This is the only breakfast casserole I make. It's worth the effort. You could probably throw some breakfast sausage in here instead of the ham and bacon. This one has to sit overnight in the refrigerator before baking in the morning.

Provided by Laura O.

Categories     Breakfast

Time 1h40m

Yield 12-16 serving(s)

Number Of Ingredients 11

1 lb sliced bacon, cut into 1/2 inch pieces

2 cups cubed cooked potatoes
3 cups shredded cheddar cheese (12 oz)
8 eggs

Estimated Reading Time 4 mins
  • Strawberry Cheesecake Breakfast Bars. These strawberry cheesecake bars may appear to be too decadent for breakfast, but they are actually quite wholesome, thanks to a crust made with oats and applesauce, and a cream cheese filling that’s lightened up with Greek yogurt.
  • Zucchini and Asparagus Strata. This simple breakfast casserole features one of spring’s most loved vegetables: asparagus. Assemble the strata the night before and all you have to do in the morning is toss it in the oven.
  • Freeze-and-Bake Lemon Poppy Seed Scones. Freeze a couple batches of these buttery scones unbaked and you can bake off just as many as you need throughout the spring season.
  • How To Make Slow Cooker Breakfast Casserole Kits. Don’t pack away your slow cooker just yet! Assemble and store these kits in the freezer and then simply toss one into your slow cooker before you go to bed to wake up to a cheesy ham and spinach breakfast casserole in the morning.
  • Yogurt Breakfast Popsicles. These creamy, cool popsicles are basically your usual bowl of yogurt, fruit, and granola in frozen stick form. If you don’t have time to make the strawberry compote, you can make things easier on yourself by substituting a cup of your favorite fruit jam.
  • The Most Lemony of Lemon Muffins. There’s just something about the fresh, bright flavor of lemon that screams spring. While many muffin recipes are best baked off and eaten fresh, these actually hold up quite well for a few days at room temperature.
  • How To Make a Foolproof Quiche. It’s hard not to be happy digging into a slice of custardy quiche for breakfast any time of the year, but the pie may just be at its best in the spring, when you can load it with the season’s produce like asparagus, spinach, and arugula.
  • How To Make a Hearty Breakfast Fruit Salad. While this fruit and whole-grain salad should be eaten within an hour or two of putting it all together, the components can be prepared up to five days in advance and stored in the fridge for when you’re ready to toss them together.
  • Cinnamon Roll Breakfast Bake. What puts this sweet make-ahead breakfast casserole over the top is the cinnamon-spiked cream cheese that’s hiding between layers of eggy bread.
  • Overnight Yeasted Waffles. While these overnight waffles make for a special breakfast all year long, they just might be at their best in the spring, when they can be topped with the season’s freshest strawberries.
