1/4 cup butter, melted
1 cup milk
1 teaspoon baking soda
1 (10 ounce) package frozen spinach, thawed, drained and chopped
8 ounces monterey jack cheese, cubed
3 eggs
1 cup flour

Steps:

  • Combine eggs, milk, flour, and baking powder.
  • Beat well.
  • Add spinach and cheese; mix well.
  • Pour melted butter into a 13 x 9" pan.
  • Pour spinach mixture over butter and combine. Bake at 350 degrees for 35 minutes.
  • Cool 10 minutes before cutting into squares.

6 sheets phyllo dough (14x9 inches)
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2-1/2 cups shredded part-skim mozzarella cheese
1-1/2 cups shredded reduced-fat cheddar cheese
1-1/2 cups fat-free cottage cheese
4 large eggs
1-1/2 teaspoons dried parsley flakes
3/4 teaspoon salt
6 large egg whites
1-1/2 cups fat-free milk

Steps:

  • Layer three phyllo sheets in a 13x9-in. baking dish coated with cooking spray, lightly spraying the top of each sheet with cooking spray., In a large bowl, combine the spinach, cheese, 2 eggs, parsley flakes and salt; spread over phyllo dough. Top with remaining phyllo sheets, lightly spraying the top of each sheet with cooking spray. Using a sharp knife, cut into 12 squares; cover and chill for 1 hour. , In a large bowl, beat the egg whites, milk and remaining eggs until blended; pour over casserole. Cover and refrigerate overnight., Remove from the refrigerator 1 hour before baking. Bake, uncovered, at 375° for 40-50 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

This recipe is a favorite at every Christmas party. Note: This recipe freezes well. To serve, defrost and reheat at 325 degrees F (165 degrees C) for 12 to 15 minutes.

2 tablespoons butter
3 eggs
1 cup all-purpose flour
1 cup milk
1 teaspoon baking powder
1 pound shredded Cheddar cheese
2 (10 ounce) packages frozen chopped spinach
1 tablespoon minced onion

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place butter or margarine in a 9x13 inch baking dish and melt butter in oven. Remove when melted, approximately 3 minutes.
  • In large mixing bowl, beat eggs well. Mix in flour, milk and baking powder. When the dough is well combined, mix in cheese, spinach, and onion. Spoon mixture into the baking dish with melted butter.
  • Bake for 35 minutes. Let cool 45 minutes then cut into bite-size squares.

2 tablespoons butter, melted
3 eggs
1 cup milk
1 cup Gold Medal™ all-purpose flour
1 teaspoon baking powder
4 cups shredded Cheddar cheese (16 oz)
2 packages (10 oz each) frozen chopped spinach, thawed, squeezed to drain
1 tablespoon finely chopped onion

Steps:

  • Preheat oven to 350°F. Place melted butter in 13 x 9-inch baking dish; set aside.
  • In large bowl, beat eggs, stir in milk. Stir in flour and baking powder until well blended. Stir in cheese, spinach and onion. Spoon egg mixture into baking dish.
  • Bake 35 minutes or until center is set. Cool 30 minutes; cut into 6 rows by 4 rows. Serve immediately.

2 tablespoons butter, melted, divided
1 cup all-purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon pepper
3 large eggs
1 cup whole milk
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
1 cup chopped onion
Sliced pimientos, optional

Steps:

  • Brush the bottom and sides of a 13x9-in. baking dish with 1 tablespoon butter; set aside. In a large bowl, combine the flour, baking powder, seasonings, eggs, milk and remaining butter. Stir in the spinach, cheeses and onion. Spread in prepared pan. , Bake, uncovered, at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean and edges are lightly browned. Cut into squares. Garnish with pimientos if desired.

1/2 cup butter
3 eggs
1 cup flour
1 1/2 cups half-and-half cream
1/2 teaspoon cayenne pepper (or to taste)
1 teaspoon garlic powder (optional or to taste)
1/3 cup grated parmesan cheese
3 green onions, chopped (optional)
1/2 teaspoon seasoning salt (or to taste)
1 teaspoon fresh ground black pepper (or to taste)
1 teaspoon baking powder
2 1/2 cups grated cheddar cheese or 2 1/2 cups mozzarella cheese
1 (10 ounce) package frozen spinach, thawed, well drained, squeeze out any excess moisture with hands
2 -3 tablespoons melted butter
grated parmesan cheese (any amount desired)
1 cup shredded cheddar cheese (optional) or 1 cup mozzarella cheese (optional)

Steps:

  • Heat oven to 350 degrees F.
  • Butter a 13 x 9-inch baking pan.
  • Place the butter in the prepared baking dish, and melt in the oven; remove pan and set aside.
  • In a large bowl beat the eggs thoroughly.
  • Blend in flour, half and half, cayenne, garlic powder and Parmesan cheese seasoning salt, black pepper and baking powder.
  • Add in 2-1/2 cups grated cheddar or mozzarella cheese, green onion and spinach; mix well.
  • Spoon the mixture into baking dish on top of the melted butter, and level off.
  • Drizzle the top with 2 tablespoons melted butter.
  • Sprinkle with grated Parmesan cheese.
  • Bake for about 30 minutes or until golden brown and set.
  • Remove from oven, and cool for 40-45 minutes.
  • If desired you may sprinkle about 1 cup shredded cheddar or mozzarella cheese immediately after baking.
  • Cut into squares.
  • Note: these squares freeze very well.

1 cup milk
1/2 lb sharp cheddar cheese, grated
1 cup flour
1 cup chopped onion

Steps:

  • Cook spinach according to package instructions and drain.
  • Preheat oven to 350.
  • Melt butter in a 9x13" baking pan (don't let it burn).
  • Remove from oven.
  • Combine remaining ingredients with spinach and mix well.
  • Turn into pan with melted butter, stirring in butter and spreading evenly.
  • Bake 30 minutes.
  • Cool 5 minutes.
  • Cut into large 3"x3" squares to serve as a side dish or 1 1/2" squares to serve as an appetizer.
