SPINACH SALAD WITH HONEY DRESSING
This recipe is one of my favorite ways to use oranges - they pair nicely with the spinach and other vegetables. It's very easy to make and quite refreshing on a hot summer day. I've taken it many times to salad suppers at church, and each time I receive many compliments.

- In a large bowl, combine the first seven ingredients. In a small bowl, stir mayonnaise, honey and lemon juice until smooth. Pour over the salad and toss to coat. Serve immediately.

- In a large salad bowl, combine the spinach, parsley, mushrooms, tomatoes, celery, bean sprouts, cheese, sunflower kernels and seasonings. , In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Drizzle desired amount over salad and toss to coat. Serve immediately. Refrigerate any leftover dressing.

- Combine first 6 ingredients with 5 of the cooked, crumbled bacon strips in a large bowl.
- In a small bowl, whisk together the honey, vinegar, oil, mustard lemon juice and remaining 2 strips of cooked, crumbled bacon.
- Pour over salad.
- Serve immediately.
SPINACH SALAD WITH HONEY-BROWN BUTTER DRESSING
Steps:
- Melt the butter in a small skillet over medium heat. Add the shallot and cook until the shallot is tender and the butter turns a light brown color, 2 to 3 minutes. Remove from the heat and stir in the vinegar, honey, and salt and pepper. Pour over the spinach in a bowl and toss.

- Thinly slice apple; brush with lemon juice. In a large salad bowl, toss the spinach, lettuce, onion, oranges and apple slices. Sprinkle with sunflower kernels and bacon., In a microwave-safe bowl, whisk the dressing ingredients. Microwave, uncovered, on high for 45 seconds. Stir and drizzle over salad.

SPINACH SALAD WITH HONEY-MUSTARD DRESSING

- To prepare the croutons: Preheat the oven to 350°F.
- Cut the bread into 1/2-inch cubes and place them on a baking sheet. Pour the butter over the bread cubes and toss them until they are evenly coated. Bake for 10 minutes, or until they are golden brown.
- To prepare the salad ingredients: Gently place the eggs in a small saucepan and cover them completely with cold water. Bring the water to a boil and simmer over medium heat for 10 minutes. Turn off the heat and let the eggs stand in the water until they are cool. Peel the eggs and dice them into 1/4-inch pieces.
- Meanwhile, cut the bacon into 1/4-inch-thick strips and place them in a sauté pan. Cook over medium heat for 12 to 15 minutes, or until crisp. Transfer to paper towels to drain.
- Wash the mushrooms and cut into 1/4-inch thick slices.
- To prepare the dressing: Place the honey and Dijon mustard in a small bowl and stir until combined.
- Place the spinach in a large bowl and toss with the dressing. Arrange the mushrooms, eggs, bacon, and croutons on top of the spinach.
SWEET AND SPICY HONEY-GLAZED GRILLED CHICKEN WITH SPINACH SALAD AND PANTRY DRESSING

- For the chicken: Preheat a grill or oven to 450 degrees F. If using a gas grill, set to medium-high heat on one side and low on the other side. If using a charcoal grill, bank hot coals on one side of the grill.
- Brush the chicken with the oil and season with the spice mix and a liberal amount of salt and pepper. Put the chicken on the hot side of the grill bone-side down, close the lid and cook for 3 to 4 minutes.
- Meanwhile, whisk together the honey, mustard and soy sauce in a small bowl.
- Flip the chicken, brush with the glaze and grill for 1 to 2 minutes. Move the chicken to the cool side of the grill bone-side down and apply the remaining glaze. Close the lid, open the vents halfway if using a charcoal grill and continue to cook until the chicken registers 160 degrees F in the thickest part, 15 to 20 minutes longer. If using the oven, place the chicken bone-side down on a baking sheet and roast, brushing with the glaze occasionally, until the chicken registers 160 degrees F in the thickest part, 25 to 30 minutes.
- For the spinach salad: In a medium bowl, mix together the spinach, chickpeas and onions in a large bowl; set aside.
- Put a heavy-bottomed skillet on the hot side of the grill, add the bacon and cook until crisp.
- Add the vinegar, mustard, and honey to an almost-empty ketchup container and shake vigorously (or whisk together the vinegar, mustard, honey and ketchup in a small bowl). Remove the skillet from the heat and mix in the ketchup mixture to make a warm dressing.
- Pour the dressing over the greens and toss together. Transfer the greens to a platter and top with the chicken.
SPINACH SALAD DRESSING - SPICY AND FABULOUS
Everyone who has tried this has asked me for the recipe - even my mother-in-law! Traditionally you would serve this on a salad of baby spinach, hard-boiled eggs, and bacon, but it is good on any type of robust salad.

- Mix all ingredients except for oil in blender.
- When well blended, add oil in a slow stream while blender is running to create a thick dressing.
- Blend in a tbsp or two of water until the dressing is thin enough to pour out of the blender (but the dressing should still stay quite thick).
- Will keep for a long time in refridgerator.
