My husband and I both love Mexican food-the hotter the better. But since our children and friends like milder dishes, I created this recipe. It's delicious, inexpensive and quick to fix. -Norma Jean Shaw of Stephens City, Virginia

24 uncooked jumbo pasta shells
1 pound lean ground beef (90% lean)
2 cups salsa
1 can tomato sauce
1 cup frozen corn
1/2 cup canned black beans, rinsed and drained
1 cup shredded reduced-fat Mexican cheese blend
TOPPINGS:
8 tablespoons reduced-fat sour cream
8 tablespoons salsa
1/4 cup sliced ripe olives
1/4 cup sliced green onions

Steps:

  • Cook pasta shells according to package directions; drain. In a large nonstick skillet, cook beef over medium heat until no longer pink; drain. Stir in the salsa, tomato sauce, corn and beans. Spoon into pasta shells., Place in a 13x9-in. baking dish coated with cooking spray. Sprinkle with cheese. Cover and bake at 350° for 25-30 minutes or until heated through. Top with sour cream, salsa, olives and onions.

Enjoy a warm plate of stuffed shells loaded with filling turkey and tasteful taco seasoning for a hearty meal! Just cook it up in under two hours.

12 oz 1 box jumbo pasta shells
2 lbs ground turkey
7 oz 1 can, chopped green chiles
¾ cup water
1.25 oz 1 package taco seasoning
1 cup salsa
1½ cups shredded Cheddar Cheese

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Cook the pasta shells in the boiling water, stirring occasionally, for 12 minutes until tender yet firm to the bite. Drain.
  • Preheat the oven to 350 degrees F.
  • Combine the turkey, chopped green chiles, water, and taco seasoning in a large saucepan.
  • Cook and stir for 8 to 10 minutes until the turkey is cooked through and the moisture is absorbed. Remove from heat.
  • Spread the salsa in the bottom of a 9 x 13-inch baking pan.
  • Stuff each pasta shell with some of the turkey mixture, then arrange on top of the salsa in the baking dish.
  • Sprinkle cheddar cheese on top, then cover the pan with aluminum foil.
  • Bake in the oven for 30 minutes until the cheese is melted and bubbly.
  • Serve, and enjoy!

These shells have that "zing" that will keep them coming back for more. This is my favorite dish to make as well as eat. Easy to do and well worth it.

Number Of Ingredients 10

1 lb ground turkey
1 (16 ounce) jar Pace Picante Sauce
1 (32 ounce) can tomato sauce
1 (7 ounce) can chopped green chilies
1 (15 ounce) container ricotta cheese
1 (14 ounce) can French-fried onions
1 cup onion
1 (7 ounce) can mushrooms
1 (4 ounce) bag shredded Mexican blend cheese
1 (16 ounce) box jumbo pasta shells

Steps:

  • First brown your turkey meat and start boiling your jumbo shells, they should be done in about ten minutes.
  • While that is cooking, in a large bowl add your tomato sauce and picante sauce mix well, and layer bottom of 13x9-inch baking dish with just enough to cover bottom save rest for shells.
  • When meat is done, drain, and add chiles, onion, half of ricotta cheese or more if you like it really cheesy, 1/2 cup on fried onions, and 1/2 cup of your tomato sauce mixture. Stir well on no heat and set aside.
  • When shells are done drain and rinse.
  • Now your ready to fill as many shells as you can with mixture. Arrange in baking pan, top each with more of your sauce mixture and a pinch of shredded cheese on each. You may need another pan depending on how big you stuff shells.
  • Cover with foil and bake at 325°F for 25 minutes, then if desired sprinkle some more crunched up fried onions and more shredded cheese. Bake uncovered for 5 more minutes.
