Spinach Ricotta Grilled Cheese Recipes
GRILLED CHEESE WITH SPINACH & TOMATO
This is a wonderful sandwich!! I was making myself a grilled cheese sandwich about a week ago, and decided to get a little creative with it. It came out spectacular. This is a nice change from your average grilled cheese :-) AND DONT BE AFRAID TO TRY IT! Even if you dont like spinach, try the sandwich.. its great!!!

Steps:
- spray frying pan with cooking spray.
- Turn stove on to medium heat, and add tomatoes to outside edges of pan, and add spinach to center.
- Sprinkle salt and garlic over the vegetables.
- Toss spinach frequently, and turn tomatoes over after a minute or so.
- cook tomato just until it gets a little soft, but do not wait until it gets mushy.
- Cook spinach until slightly wilted.
- Take both out when they are done and set aside.
- Wipe pan out with towel, and heat on medium.
- Butter one piece of bread as you would for a regular grilled cheese sandwich.
- Put bread in pan, and place cheese on top and then place spinach and tomato on top of the cheese.
- Allow to heat.
- Butter the other piece of bread, and fry sandwich until nicely browned on both sides.
- Remove and Serve!

- Heat a large skillet over medium heat. Once pan is hot, add oil and garlic. Saute garlic, stirring constantly, for 1 minute. Add spinach. Cook until spinach wilts, 2 to 4 minutes. Remove to a bowl.
- Butter one side of each of the 4 pieces of bread. Sprinkle the butter side of the bread with garlic powder, to your liking.
- Place bread, buttered side down, in the same skillet that you used for the spinach. spread half the ricotta mixture over the bread. Layer 1/2 the spinach on top of the ricotta. Top sandwich with a second piece of bread, buttered side up.

- Add the ricotta cheese, spinach, parmesan cheese, salt/pepper and Italian herbs to the pan-fried garlic and mix until well combined.
- Spread one side of each slice of bread with butter. Divide the ricotta mixture in half and spread it on the un-buttered sides of two slices of bread; divide the mozzarella cheese in half and add it over the ricotta mixture; top with remaining bread - buttered side up (to create a sandwich).
- Return the pan/skillet to the stove over medium heat and place the sandwiches in the pan. Cook, turning once, until the cheese has melted and both sides are golden brown (about 3-4 minutes per side).
