SPICED CHOCOLATE WAFFLE COOKIES

1 1/2 cup all-purpose flour
1/2 cup cocoa powder
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon baking powder
1/2 teaspoon fine sea salt
2 sticks (16 tablespoons) unsalted butter, softened
1/2 cup sugar
1/2 cup stevia in the raw bakers bag
3 large eggs
1 teaspoon vanilla
2 ounce cream cheese, softened
1 tablespoon stevia in the raw bakers bag
1 1/2 teaspoon tapioca starch
1/2 teaspoon vanilla
1 to 2 tablespoon heavy cream

Steps:

  • In a medium bowl, whisk to combine flour, cocoa powder, cinnamon, cardamom, baking powder, and salt.
  • In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, beat butter, sugar, and Stevia In The Raw® until smooth.
  • Beat in eggs one at a time, then vanilla.
  • Stir in flour mixture just until combined.
  • Cover batter and refrigerate at least 2 hours.
  • Preheat a waffle iron.
  • Add small spoonfuls (about 2½ tablespoons per cookie) of batter to waffle iron, spacing them evenly (in a standard Belgian waffle iron you should be able to make 4 cookies at a time).
  • Close the iron and cook until golden brown.
  • Transfer to a rack to cool completely and repeat with remaining batter.
  • For glaze, in a food processor combine cream cheese, Stevia In The Raw, tapioca starch, and vanilla and process until smooth, scraping down sides of bowl as needed.
  • With machine running, add cream to reach a smooth, pourable consistency.
  • Drizzle cookies with glaze before serving.

1 cup brown sugar
½ cup white sugar
2 eggs
1 stick butter
4 oz unsweetened chocolate
1 cup flour
½ cup cocoa powder
1 ¼ teaspoons baking soda
1 tablespoon cinnamon
½ teaspoon salt
1 teaspoon chili powder
¼ teaspoon cayenne pepper, optional
½ cup chocolate chips
12 large marshmallows

Steps:

  • Beat brown sugar, white sugar, and eggs.
  • Melt the unsweetened chocolate and butter, allow to cool. Mix into the egg and sugar mixture.
  • Add all of the dry ingredients, and mix thoroughly (you don't want any cayenne pepper clumps!).
  • Stir in the chocolate chips.
  • Space out 12 cookies on a baking sheet.
  • Bake at 350°F (180°C) for 13 minutes. Remove the cookies from the oven.
  • Top each one with a large marshmallow.
  • Broil for 30 seconds, until the marshmallows have just started to brown.

The main recipe will result in a patterned cookie laced with cocoa, embossed with a cookie stamp, and brushed with an orange-butter glaze; head to the variation for a simpler-but no less delicious-version that is packed with chopped semi-sweet chocolate and rolled in sanding sugar for sweet sparkle.

1 1/2 cups unbleached all-purpose flour, plus more for dusting
3 tablespoons Dutch-process cocoa powder
3/4 teaspoon kosher salt
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 stick unsalted butter, room temperature
3/4 cup packed light-brown sugar
1 tablespoon grated fresh ginger (from a 2-inch piece)
1/2 teaspoon baking soda
1 large egg, room temperature
2/3 cup confectioners' sugar
2 tablespoons Cointreau or strained orange juice, plus more if needed
1 tablespoon melted unsalted butter
Pinch of kosher salt

Steps:

  • Cookies: Preheat oven to 375°F. Whisk together flour, cocoa, salt, ground ginger, cinnamon, and cloves. In a large bowl, beat butter with brown sugar, fresh ginger, and baking soda until creamy. Add egg; beat to combine. Reduce speed to low; beat in flour mixture.
  • Scoop a scant 1/4 cup of dough (1.75 ounces); roll into a ball. Dust a cookie stamp with flour, tapping out excess. Place dough in center of stamp, then press evenly to cover shape of design. Place, dough-side down, on a parchment-lined baking sheet and press until dough is about 1/4 inch thick.
  • Carefully remove (if it sticks, just gather up dough and start over). Repeat with remaining dough, arranging cookies 2 inches apart. Refrigerate 20 minutes; use a 2 3/4-inch round cutter to trim excess. Bake until firm to the touch, 11 to 13 minutes.
  • Glaze: Meanwhile, whisk together confectioners' sugar, Cointreau, butter, and salt; glaze should have the consistency of honey. (If too thick, whisk in more Cointreau.) Let cookies cool on sheets on a wire rack 8 minutes, then brush with glaze. Let cool completely. Cookies can be stored in an airtight container at room temperature up to 3 days.

Steps:

  • Heat Waffle Iron.
  • In a big mixing bowl combine the softened butter, sugar, eggs, cocoa, and vegetable oil. Mix together well.
  • Add in flour, salt, and vanilla. Mix all ingredient together until combined.
  • Drop batter by heaping tablespoon onto the generously greased waffle iron.
  • Keep the batter towards the center/middle of each quarter of the waffle iron. It will squish towards the outside edges when you close the lid.
  • Close the lid and cook for about 1 minute. You can open slightly to test for doneness. All waffle irons vary, so watch closely for the cook time that works best for you.
  • After they are done cooking, lift them off of the waffle iron with a fork and cool on a plate or cooling rack.
  • Be sure to spray the waffle iron in between each batch to prevent them from sticking.
  • While the cookies are cooling, make the frosting.
  • Mix the softened butter, powdered sugar, milk, vanilla, and cocoa until creamy and smooth.
  • Frost the cooled cookies and add sprinkles if desired.

3 ounces unsweetened chocolate, coarsely chopped
18 tablespoons (2 1/4 sticks) unsalted butter
4 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups granulated sugar
1/2 teaspoon coarse salt
1 1/2 teaspoons ground cinnamon
1/2 cup unsweetened Dutch-process cocoa powder, plus 2 tablespoons for icing
1 1/2 cups all-purpose flour
1/4 cup confectioners' sugar, plus more for dusting
1 1/2 tablespoons milk
Vegetable oil, cooking spray

Steps:

  • Melt chocolate with 1 cup butter (2 sticks) in a saucepan over medium-high heat, stirring constantly. Let cool slightly.
  • Put eggs, vanilla, and granulated sugar in bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale, 4 to 5 minutes. Mix in chocolate mixture, salt, cinnamon, 1/2 cup cocoa powder, and the flour.
  • Heat a waffle iron until hot. Lightly coat grids with cooking spray. Spoon about 1 tablespoon batter onto center of each waffle-iron square to make 1 1/2-inch rounds. Close cover; cook until set, about 1 1/2 minutes. Transfer to a wire rack, bottom sides up. Let cool completely. Repeat with remaining batter, coating grids with cooking spray after each batch.
  • Melt remaining 2 tablespoons butter in a small saucepan over low heat. Add confectioners' sugar and remaining 2 tablespoons cocoa powder; stir until smooth. Stir in milk.
  • Gently dip 1 surface of each cookie in icing so that just the waffle lines (not gaps) are coated. Repeat with remaining cookies and icing. Transfer to wire racks; let stand until set, about 10 minutes. Dust iced surfaces of cookies with confectioners' sugar.
