1 tbsp olive oil
2 garlic cloves , crushed
400g can chopped tomato
140g mascarpone
500g pack gnocchi
200g bag baby spinach
handful basil leaves
parmesan (or vegetarian alternative), shavings, to serve (optional)

Steps:

  • Heat the olive oil in a frying pan. Fry the garlic until golden, then add the tomatoes. Season, then simmer for 10 mins. Stir in mascarpone, then cook for 2 mins more.
  • Meanwhile, boil the gnocchi according to pack instructions. Add the spinach for the final min of cooking. Drain well, pour back into the pan, then stir the sauce through. Mix well and serve immediately with basil leaves and Parmesan shavings scattered over, if you like.

Raise your hand if you're obsessed with anything involving gnocchi. (We all have our hands raised over here.) If you're new to gnocchi, it's a pasta/dumpling hybrid that's partially-made with potatoes, resulting in an extra-tender, extra-carby bite. In this vegetarian dish, it's paired with spinach and colorful grape tomatoes, then tossed in a creamy sauce. To top things off-in this case literally-there's a layer of garlicky panko breadcrumbs. It's the perfect crispy contrast to this rich dish. Once you take a bite, don't be surprised when you find yourself making excuses to whip it up again and again!

4 ounce Heirloom Grape Tomatoes
1 teaspoon Garlic Powder
4 tablespoon Cream Cheese
5 ounce Spinach
1 teaspoon Chili Flakes
¼ cup Panko Breadcrumbs
8.8 ounce Gnocchi
1 unit Veggie Stock Concentrate
¼ cup Parmesan Cheese
2 tablespoon Butter
Kosher Salt
Pepper

Steps:

  • • Bring a medium pot of salted water to a boil. Wash and dry all produce. • Halve tomatoes.
  • • Melt 1 TBSP butter in a large pan over medium-high heat. Add panko and cook, stirring, until golden and toasted, 2-3 minutes. • Stir in half the garlic powder (you'll use the rest later) and cook until just fragrant, 30 seconds. Turn off heat; transfer to a plate and season with salt and pepper. Wipe out pan. • 4 SERVINGS: Use 2 TBSP butter.
  • • Once water is boiling, add gnocchi to pot. Cook until tender, 3-4 minutes. Drain.
  • • Meanwhile, melt 1 TBSP butter in pan used for panko over medium-high heat. Add remaining garlic powder and cook until fragrant, 30 seconds. • Stir in 1/3 cup water, stock concentrate, and cream cheese. Bring to a simmer, stirring, until combined and creamy, 2-3 minutes. Season with salt and pepper. • 4 SERVINGS: Use 2 TBSP butter and ½ cup water.
  • • Stir tomatoes and spinach into pan with sauce. Cook, stirring, until spinach is wilted and tomatoes are softened, 3-4 minutes.
  • • Stir gnocchi into pan with sauce until thoroughly coated. If needed, add a splash or two of water. Taste and season with salt and pepper. • Divide gnocchi between bowls and top with Parmesan. Sprinkle with as much garlic panko as you like. Add a pinch of chili flakes to taste and serve.

Spinach and Ricotta Gnocchi With Quick Tomato Sauce image

Number Of Ingredients 16

2 pounds fresh ricotta cheese, wrapped in cheesecloth and hung overnight in refrigerator
1 (9-ounce box) frozen spinach, defrosted and water squeezed out
4 eggs
2 cups grated Parmigiano-Reggiano, plus more for sprinkling
2 to 3 grates fresh nutmeg
Kosher salt
1/4 to 1/2 cup all-purpose flour, plus more for the outside of the gnocchi
Semolina, for holding the gnocchi
12 to 15 super-ripe plum tomatoes
Extra-virgin olive oil
1 small onion, finely diced
Kosher salt
Pinch crushed red pepper flakes
2 cloves garlic, smashed and finely chopped
6 to 7 basil leaves, cut into a chiffonade
Grated Parmigiano-Reggiano, for garnish

Steps:

  • Unwrap the ricotta cheese from the cheesecloth; the texture should be pretty dry and crumbly. If it is really dry (this is good) pass it through the food mill with the biggest holes. Put the cheese into a large bowl.
  • Finely chop the squeezed spinach and add it to the ricotta. Add the eggs, grated Parmigiano-Reggiano and nutmeg. Mix until well combined. Taste and season with salt, if needed. Add in 1/4 cup of flour. If the mixture is still very wet, add in the remaining 1/4 cup of flour.
  • Dust a sheet tray generously with flour. Coat another sheet tray generously with semolina flour. Fill a pastry bag with the ricotta/spinach mixture. Pipe 1 1/2-inch balls of the cheese mixture onto the all-purpose flour lined tray. Shake the tray around to coat the balls in flour. Roll each flour coated cheese piece around in your hand to form a ball. Do this gently so as to not squish the cheese balls. Arrange them on the semolina lined tray.
  • Bring a saucepan full of water to a boil over medium heat. Set up a bowl of ice water. In the bottom of each tomato cut an "X" in the skin. Working in batches, put the tomatoes in the boiling water for 15 to 20 seconds ONLY! Remove the tomatoes from the boiling water and put them immediately into the ice water. When the tomatoes have cooled, remove them from the ice water and the skin should come off very easily.
  • Remove the stems and seeds from the tomatoes; coarsely chop the tomatoes and reserve.
  • Coat a large straight-sided saute pan, over medium-high heat, with olive oil. Add the onions, season with salt, to taste. Toss in the crushed red pepper and cook the onions until they are soft and aromatic, about 8 to 10 minutes. Add in the garlic and cook for 2 to 3 more minutes. Stir in the tomatoes and season with salt, to taste. Bring the tomato mixture to a boil, then reduce the heat and simmer for 15 to 20 minutes. Taste and adjust the seasoning, if needed.
  • Toss in the basil just before serving.
  • Bring a large pot of well-salted water to a boil over medium heat, then reduce the heat until the water is at a simmer. Carefully add the gnocchi to the simmering water. Cook until the gnocchi float and have begun to swell, 3 to 5 minutes.
  • On individual serving plates, spoon some sauce on each plate and spread it out until it becomes a 4 to 5-inch circle.
  • Using a spider or long handled mesh strainer, carefully remove the gnocchi from the cooking water, blot on a tea towel and arrange 5 gnocchi on each circle of sauce. Sprinkle with Parmigiano-Reggiano and serve.

SPINACH GNOCCHI

1 pound yukon gold potatoes, unpeeled
2 quarts water
1/2 cup cooked and chopped spinach
2 eggs
1 cup flour
1 teaspoon salt
1 teaspoon ground black pepper
3 tablespoons butter
1 tablespoon poppy seeds

Steps:

  • Put the potatoes in a pot with the water. Bring the water to a boil and cook the potatoes at a strong simmer for 20 minutes or until tender. Drain the water from the pot and let the potatoes cool for only a few minutes before you begin to pull the skins from the potatoes. Discard the potato skins and, while still hot, pass the potatoes through a ricer into a bowl.
  • To the riced potatoes add the spinach and mix well.
  • Add the eggs, one at a time, and incorporate well.
  • Add the flour in two stages so that only the amount that is necessary will be used to bind the potato. Add the second half of the flour (and have some additional flour available if necessary) and mix well to form a dough.
  • Divide the dough in half, and on a floured work surface, roll the first half of dough into a log 1-inch thick. Cut the log into 1/2-inch thick round pieces.
  • Lay the pieces out, and the back of a fork or your thumb, make an indentation on one side.
  • Set aside and refrigerate until needed.
  • Cook as you would pasta in several quarts of boiling water for 10 to 15 seconds. They cook very quickly and are cooked when they float to the surface.
  • Heat the butter in a saucepan, add the poppy seeds and pour over the gnocchi in a large serving bowl.

SPINACH GNOCCHI WITH TOMATO SAUCE

1 tablespoon extra-virgin olive oil
1 small onion, finely chopped
3 garlic cloves, minced
1/4 cup dry white wine
1 can (28 ounces) whole plum tomatoes with juice, coarsely chopped
1 can (14 1/2 ounces) tomato sauce
2 sprigs basil
1/4 teaspoon crushed red pepper flakes
1 tablespoon coarse salt, plus more for seasoning
Freshly ground pepper
Basic Potato Gnocchi, made with spinach (recipe above)
Thinly shaved Parmesan cheese, for serving

Steps:

  • Heat the oil in a large saucepan over medium heat until hot but not smoking. Add the onion and garlic; cook, stirring occasionally, until onion is translucent, 5 to 7 minutes. Add the wine; cook until most of the liquid has evaporated. Add the tomatoes and juice, tomato sauce, basil, and red pepper flakes. Reduce heat to medium-low; simmer until slightly thick, about 30 minutes. Season with salt and pepper. Remove from heat; cover to keep warm.
  • Bring a large pot of water to a boil; add the salt. Add half the gnocchi; when they rise to the top (after about 2 minutes), continue to cook until tender, about 15 seconds more. Transfer the gnocchi with a slotted spoon to the pan with sauce. Repeat the process with the remaining gnocchi.
  • Reheat the gnocchi over low heat; gently toss. Serve with cheese shavings.

1 garlic clove, minced
1/3 cup finely chopped onion
1 tablespoon olive oil
a 14- to 16-ounce can whole tomatoes, drained, reserving juice, and chopped
1/4 cup dry red wine
For gnocchi
a 10-ounce package frozen chopped spinach
1 cup whole-milk ricotta
2/3 cup freshly grated Parmesan
1 large egg yolk
2 tablespoons all-purpose flour plus additional for forming gnocchi
freshly grated nutmeg to taste

Steps:

  • Make sauce:
  • in a 9- to 10-inch heavy skillet cook garlic and onion in oil over moderately low heat, stirring, until onion is softened. Add tomatoes with reserved juice, wine, and salt and pepper to taste and simmer, uncovered, stirring occasionally, until thickened, 20 to 25 minutes.
  • Make gnocchi while sauce is cooking:
  • In a small saucepan combine spinach with 1/2 cup water and simmer, covered, breaking up with a fork occasionally, 5 to 7 minutes. Drain spinach in a colander and rinse under cold water to cool. Squeeze spinach in a small handfuls until as dry as possible and chop fine.
  • In a 5-quart saucepan bring 4 quarts salted water to a boil for cooking gnocchi. Set broiler rack about 4 inches form heat and preheat broiler.
  • In a bowl stir together spinach, ricotta, 1/3 cup Parmesan, yolk, 2 tablespoons flour, nutmeg, and salt and pepper to taste until combined well (mixture will be very soft). With well-floured hands form rounded tablespoons of mixture into logs about 2 inches long and 1 inch in diameter (about 18) and transfer gnocchi as formed to a sheet of wax paper.
  • Working in 2 batches, carefully transfer gnocchi with a spatula to boiling water and cook until they rise to surface, about 2 minutes. Transfer gnocchi as cooked with a slotted spoon to a buttered shallow baking dish large enough to hold them in one layer and sprinkle with remaining 1/3 cup Parmesan. Broil gnocchi until very hot and cheese is melted, 3 to 5 minutes.
  • Serve gnocchi with tomato sauce.

Mine usually cook for about 4-5 minutes total (*see notes). Be sure to taste test! Stir in parmesan, spinach, and half-and-half. Add additional vegetable stock if desired (see notes). The spinach will wilt with the heat of the gnocchi. Serve immediately with additional parmesan and/or fresh basil as desired.
