Grilled Cheese With Spinach & Tomato image

This is a wonderful sandwich!! I was making myself a grilled cheese sandwich about a week ago, and decided to get a little creative with it. It came out spectacular. This is a nice change from your average grilled cheese :-) AND DONT BE AFRAID TO TRY IT! Even if you dont like spinach, try the sandwich.. its great!!!

1 slice American cheese (or whatever kind you prefer)
2 slices tomatoes
6 spinach leaves, torn in half (more or less, you decide, I like a lot!!)
2 slices white bread (or whatever kind you prefer, if you use large slices you may need to add more ingredients)
1 tablespoon margarine or 1 tablespoon butter
1 dash salt
1 dash garlic powder

Steps:

  • spray frying pan with cooking spray.
  • Turn stove on to medium heat, and add tomatoes to outside edges of pan, and add spinach to center.
  • Sprinkle salt and garlic over the vegetables.
  • Toss spinach frequently, and turn tomatoes over after a minute or so.
  • cook tomato just until it gets a little soft, but do not wait until it gets mushy.
  • Cook spinach until slightly wilted.
  • Take both out when they are done and set aside.
  • Wipe pan out with towel, and heat on medium.
  • Butter one piece of bread as you would for a regular grilled cheese sandwich.
  • Put bread in pan, and place cheese on top and then place spinach and tomato on top of the cheese.
  • Allow to heat.
  • Butter the other piece of bread, and fry sandwich until nicely browned on both sides.
  • Remove and Serve!

100g chopped butternut squash
2 tsp olive oil
1 tbsp tamarind paste
160g bag baby spinach
2 thick slices of white bread
2 tbsp butter
2 tbsp grated mozzarella
1 tbsp grated cheddar
hot sauce
pinch allspice

Steps:

  • Heat oven to 190C/170C fan/gas 5. Tip the chopped butternut squash onto a tray and drizzle over the olive oil mixed with half the tamarind paste. Toss together and roast in the oven for 45 mins, or until soft.
  • Tip the baby spinach into a colander set over the sink, pour over boiling water until wilted, then leave to cool. Once cool enough to handle, squeeze out the excess water, then roughly chop. Take the slices of white bread and spread one with half the butter and the other side with a very thin layer of your remaining tamarind paste. Pile the spinach and cooked squash on top of the buttered side, then add the grated mozzarella and cheddar.
  • Dot with a splash of hot sauce, season and add a pinch allspice, then close the sandwich. Fry the sandwich in the rest of the butter for 3-4 mins each side or until the cheese has melted and the bread is golden.

1/2 bag fresh spinach, chopped
1 cup grated swiss cheese
1/2 cup parmesan cheese
1/4-1/2 cup mayonnaise
2 tablespoons mustard
4 -8 slices rye bread
4 -8 slices bacon
butter

Steps:

  • Mix spinach, swiss cheese, parmesan cheese, mayonnaise and mustard until well blended.
  • Spread on bread of your choice, I prefer rye.
  • Add 2-3 slices crisp bacon (to save time, I sprinkle bacon bits on instead).
  • Butter bread and toast on hot griddle.
  • Serve with chips and a pickle.
