These Pork Chops are filled with savory stuffing and topped with mushroom soup; they're perfect to feed a hungry family!

4 boneless pork chops (thick-cut, about 1")
6 oz box stuffing mix, any flavor (or 2 cups homemade stuffing)
10.5 oz cream of mushroom soup
salt & black pepper (to taste)

Steps:

  • Prepare stuffing mix according to box directions. Cool completely.
  • Preheat oven to 350°F.
  • Season pork chops with salt and pepper. Use a knife to butterfly the pork open and create a pocket for the stuffing.
  • Place 1/3 cup stuffing into each pork chop and place in a casserole dish or 9x13 pan. If you have extra stuffing, place in the pan with the pork.
  • Season each pork chop with pepper and top with condensed mushroom soup.
  • Bake for about 35* minutes or until the pork is cooked and reaches 145°F with a thermometer.

Creamy Spinach Mushroom Pork Chops image

These spinach mushroom pork chops have a creamy garlic sauce that comes together quickly and makes an excellent weeknight dinner.

4 pork chops (see notes)
Salt & pepper (to taste)
1 tablespoon olive oil
2 tablespoons butter (divided)
7 ounces cremini or white mushrooms (sliced)
3 cloves garlic (minced)
1/4 teaspoon Italian seasoning
1 tablespoon flour
1/2 cup chicken broth
1/2 teaspoon lemon juice
3/4 cup heavy/whipping cream
2 cups (packed) fresh baby spinach

Steps:

  • Take the pork chops out of the fridge 15-30 minutes before starting the recipe if possible. Season the pork generously with salt & pepper on both sides.
  • In a deep skillet, add the olive oil and 1 tablespoon of the butter over medium-high heat. Let the pan heat up for a few minutes, and once it's hot, cook the pork chops for 3-5 minutes/side or until golden (3 minutes for thinner chops and 5 minutes for pork chops that are up to 1" thick). Once the pork chops are done searing, transfer them to a plate.
  • Add the remaining butter and the mushrooms, garlic, and Italian seasoning to the skillet. Cook the mushrooms for about 5-6 minutes or until they've released their water and the water has just about cooked off.
  • Sprinkle the flour in and cook for about a minute, stirring nearly constantly.
  • Add in the chicken broth and lemon juice. Stir it well so the flour dissolves and let it cook for 1-2 minutes or until the liquid is reduced by half.
  • Stir in the cream.
  • Add the pork back into the skillet and cook for another 3-5 minutes or until the sauce has thickened up a bit (let the sauce bubble a bit but not furiously boil) and the pork chops are fully cooked through (145F minimum). Keep in mind the pork's temperature will continue to rise once you stop cooking it.
  • Add in the spinach (I just lift the pork chops up with tongs and tuck it under them). Take the pan off the heat and let the spinach wilt for a minute or two. Season the sauce with extra salt & pepper if needed, then serve immediately.

4 (6 ounce) thick cut pork chops
8 slices smoked Gouda cheese
½ pound fresh spinach, rinsed and torn into bite-size pieces
3 tablespoons horseradish mustard
1 cup panko crumbs or breadcrumbs
Creole-style seasoning to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Coat a 9x13 inch baking dish with cooking spray.
  • Lay each chop flat on cutting board, and with a sharp knife held parallel to the board, cut a pocket into the pork, leaving three sides intact. Stuff each chop with spinach, and then with cheese.
  • Place panko crumbs in a shallow dish. Coat each chop with a thin layer of horseradish, and then roll in crumbs. Arrange chops in prepared baking dish. Sprinkle with Creole seasoning to taste.
  • Bake in preheated oven for 45 minutes, or until brown and crispy.

  • Season the pork chops generously on both sides with salt and pepper. In a large skillet, heat the vegetable oil. Gently place the pork chops into the skillet and cook over high heat for 5 minutes on each side. Do not disturb the pork chops while cooking so that a nice golden brown crust can form.
  • Carefully remove the pork chops from the skillet onto a large plate (it is OK if they are not fully cooked yet). Add the butter, mushrooms, onion, garlic, and dried thyme to the skillet and stir fry over medium-high heat for about 5 minutes.
  • In a medium bowl, whisk together the chicken stock and the corn starch until no corn starch clumps remain. Make sure you whisk constantly and add the corn starch slowly!
  • Add the chicken stock + corn starch mixture and half and half to the skillet, and stir. Add the baby spinach and stir. Cover and continue cooking for 2-3 minutes, or until the baby spinach starts to wilt. You might need to stir a few times to get all the spinach covered in the sauce and wilted.
