These dense, fudgy brownies get their flavor and texture from ripe bananas. An easy favorite with our family.

1 cup semisweet chocolate chips
½ cup all-purpose flour
½ cup white sugar
½ teaspoon baking powder
¼ teaspoon salt
2 large ripe bananas, mashed
2 eggs, well beaten
1 teaspoon vanilla extract
½ cup chopped pecans
3 tablespoons butter
2 tablespoons unsweetened cocoa powder
1 ½ cups confectioners' sugar
2 tablespoons milk, or more as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square glass baking dish.
  • Melt chocolate chips in a microwave-safe bowl on low power in 15-second intervals, stirring after each melting, 1 to 3 minutes. Cool slightly, about 5 minutes.
  • Mix flour, sugar, baking powder, and salt together in a bowl. Add melted chocolate, bananas, eggs, and vanilla extract; beat with an electric mixer on medium speed until well-blended. Stir in pecans. Spread batter in the prepared baking dish.
  • Bake in the preheated oven until top is dry and edges have started to pull away from the sides of the pan, 30 to 35 minutes. Let cool, about 25 minutes.
  • Combine butter and cocoa powder in a saucepan over low heat; cook, stirring constantly, until smooth, about 3 minutes. Stir in confectioners' sugar and milk. Add more milk, 1 tablespoon at a time, until frosting is spreading consistency.
  • Spread frosting over cooled brownies. Cut into squares.

1 pound dark chocolate chips
½ cup butter
4 eggs
1 dash vanilla extract
3 ripe bananas, or more to taste
1 cup all purpose flour
1 cup white sugar
1 tablespoon unsweetened cocoa powder
1 tablespoon baking powder

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a deep baking pan.
  • Melt chocolate and butter in top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  • Mix eggs and vanilla extract together in a large bowl; mash bananas into egg mixture until well mixed.
  • Combine flour, sugar, cocoa powder, and baking powder in a separate bowl.
  • Mix chocolate mixture into the banana mixture; add flour mixture and stir until smooth. Pour mixture into the greased baking pan.
  • Bake in preheated oven until top is dry and edges have started to pull away from the sides of the pan, about 60 minutes.

1 cup quick-cooking oats
1 cup boiling water
4 large egg whites, room temperature
1-1/2 cups mashed ripe bananas (about 3 medium)
3/4 cup packed brown sugar
1/2 cup sugar
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 cup all-purpose flour
1/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • In a small bowl, combine oats and boiling water; let stand for 5 minutes. In a large bowl, beat the egg whites, bananas, sugars, oil and vanilla until blended. Combine the dry ingredients; gradually add to creamed mixture. Stir in the oat mixture. , Spread into a 13x9-in. pan coated with cooking spray. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean (do not overbake). Cool on a wire rack. Cut into bars.

1/2 cup butter, melted, cooled
1 cup sugar
3 tablespoons baking cocoa
2 large eggs, lightly beaten
1 tablespoon whole milk
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup mashed ripe bananas (2-1/2 to 3 medium)
1/2 cup chopped walnuts
Confectioners' sugar, optional

Steps:

  • In a bowl, combine butter, sugar and cocoa. Stir in eggs, milk and vanilla. Blend in flour, baking powder and salt. Stir in bananas and nuts. , Pour into a greased 9-in. square baking pan.
