SPICY SQUASH & APPLE CHUTNEY
The sweet flesh of squash or pumpkin takes on a new character as it nestles down in the pan with onion, apple, spices, sugar and vinegar

Steps:
- Heat the oil in a large preserving pan, then gently fry the onions, ginger, chilli, cardamom, cinnamon, mustard and cumin seeds together for 5 mins, until the spices are aromatic.
- Stir the garlic, squash and apples into the onions, then cook for 10-15 mins more, until the onions and apples are soft and the squash yields a little here and there.
- Stir in the turmeric and sugar and let it melt around the vegetables. Simmer for 5 mins - this process almost candies the chunks of pumpkin, so that it doesn't entirely break down during the next step.
- Pour in the vinegar, season with 2 tsp salt, then bring the chutney back to a simmer. Cook, stirring regularly, for about 30 mins or until the apple has cooked down to make a squishy base for the chutney, with chunks of tender pumpkin here and there, and a little syrupiness at the bottom of the pan - you don't want the chutney to be too dry as it will thicken as it cools.
- Spoon the hot chutney into sterilised jars and seal. The chutney can be eaten straight away, or left to mellow in a dark place. You can store it for up to six months.

SPICY YELLOW SQUASH CASSEROLE
This is a recipe I found on Allrecipes.com. It was submitted by: Liz. She states: "This spicy cheese and ground beef casserole can be used as a side dish or a main course! Any type of squash or ground meat may be used. For winter squash, you may want to pre-cook in the microwave before frying in butter to speed the process."

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Melt butter in a large skillet over medium heat.
- Saute squash in butter until tender, about 10 minutes. Set aside.
- In a large skillet, cook the ground beef, onion, and jalapeno, stirring until beef is evenly browned. Drain off grease.
- In a large bowl, mix together the squash, eggs, and mayonnaise.
- Stir in the ground beef mixture and Cheddar cheese.
- Season with salt and pepper.
- Pour into a 9x13 inch baking dish, and sprinkle cracker crumbs evenly over the top.
- Bake for 20 minutes in the preheated oven, until heated through, and the top is nicely browned.

FRESH FIG CHUTNEY

- In a large saucepan combine the vinegar, sugar, onion, ginger, mustard seeds, lemon zest, cinnamon stick, salt, allspice, and cloves and bring to a boil. Reduce the heat to a simmer and cook until mixture is thickened and reduced by 2/3, forming a thick syrup. Add the figs and cook gently until the figs are very soft and beginning to fall apart and most of the liquid they've given off has evaporated, about 30 minutes.
- Transfer the chutney to a non-reactive container and allow to come to room temperature before serving. The chutney may be made up to 3 weeks in advance and stored in the refrigerator in an airtight container. (Alternately, hot chutney may be ladled into hot sterilized canning jars and processed in a hot-water bath according to manufacturer's directions.)
SUMMER SQUASH CHUTNEY
A very good chutney with meats, cheeses and just off the spoon. Just guessed at the amount of jars....because it is not stated in the recipe.

- Peel and core the squash and apples.
- Chop the squash and apples with the tomatoes and onions.
- Put this mixture into a saucepan with the remaining ingredients.
- Cook over a low heat, stirring constantly, until the sugar is dissolved.
- Bring to a boil. Reduce heat and simmer for 2 hours, stirring occasionally.
- Pour into warm sterilized jars and seal.
