Buffalo chicken is a favorite in our household. Combine it with pasta and you have the ultimate comfort food. If you prefer less spicy food, the addition of sour cream, ranch dressing and mozzarella provides a creamy texture and cooler flavor that nicely balances the spice in this buffalo chicken pasta dish. -Kathy White, Henderson, Nevada

2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
2 cans (10-3/4 ounces each ) condensed cream of chicken soup, undiluted
1 cup Buffalo wing sauce
1 medium onion, finely chopped
1-1/2 teaspoons garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 package (16 ounces) penne pasta
2 cups shredded part-skim mozzarella cheese
2 cups sour cream
1/2 cup ranch salad dressing
Finely chopped celery, optional

Steps:

  • In a 5-qt. slow cooker, combine the first 7 ingredients. Cook, covered, on low until chicken is tender, 4-5 hours. Cook pasta according to package directions for al dente; drain., Remove slow cooker insert. Stir in cheese until melted. Add pasta, sour cream and ranch dressing. If desired, top with celery.

2 pounds boneless skinless chicken thighs, trimmed of excess fat
1/2 cup hot sauce, such as Frank's
1 tablespoon celery salt
14 tablespoons unsalted butter
Freshly ground black pepper
1 1/2 cups panko
1 teaspoon cayenne pepper
Kosher salt
1 tablespoon thyme leaves
1 pound pasta, such as elbow macaroni, strozzapreti or campanelle
3 stalks celery, including leaves, finely chopped, plus additional leaves, chopped, for serving
1 yellow onion, finely chopped
1/2 cup all-purpose flour
5 cups whole milk
1 1/2 cups (6 ounces) coarsely grated sharp white Cheddar
1 1/2 cups (6 ounces) coarsely grated gruyere
1 cup finely grated Parmigiano-Reggiano
6 ounces blue cheese, crumbled into large pieces

Steps:

  • Position an oven rack in the center of the oven and preheat the oven to 375 degrees F. Place the chicken in a 13-by-9-inch baking dish. Toss with the hot sauce, celery salt, 4 tablespoons melted butter and black pepper to taste. Bake until the chicken is tender and cooked through, about 30 minutes. Increase the oven temperature to 425 degrees F.
  • Shred the chicken and transfer to a medium bowl, along with any juices from the baking dish. Cover loosely with plastic wrap, and set aside. Wipe out the baking dish with a paper towel and brush with 1 tablespoon melted butter. Set aside.
  • Meanwhile, in a medium skillet over medium heat, melt 6 tablespoons butter. Add the panko and cayenne and season with some salt. Saute until deeply golden, stirring constantly, 4 to 6 minutes. Remove from the heat and add the thyme. Stir to combine and set aside.
  • Bring a large pot of water to a boil and salt it generously. Add the pasta and cook to slightly less than al dente, about 3 minutes less than the package instructions. Drain.
  • In a medium pot over medium heat, melt the remaining 3 tablespoons butter. When the foaming subsides, add the celery and onion. Cook until softened, 4 minutes. Add the flour and stir to coat. Continue to cook, stirring, 1 minute. Gradually add the milk, whisking continuously, and bring to a simmer. Add the Cheddar, gruyere and Parmigiano-Reggiano and whisk until the cheeses are melted and the sauce is smooth. Season to taste with salt and pepper.
  • Add the pasta to the cheese sauce and stir to coat evenly. Transfer to the prepared baking dish. Top with the chicken mixture and half of the blue cheese. Sprinkle with the breadcrumbs and bake until bubbling around the edges and completely warmed through, 15 to 20 minutes.
  • Top with the remaining crumbles of blue cheese and celery leaves. Serve immediately.

Steps:

  • Bring a large pot of water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 12 minutes.
  • Meanwhile, combine milk, blue cheese, and cream cheese in a large skillet over medium-high heat. Cook, stirring frequently, until cheeses melt, about 5 minutes.
  • Drain pasta into a colander; reserve about 1/4 cup cooking liquid and pour into the sauce. Add Buffalo sauce, garlic powder, paprika, and black pepper and stir until smooth. Mix in the pasta and chicken and heat until chicken is warmed through, 2 to 3 minutes.

This is a nice meal for when you are craving buffalo wings. The celery is definitely optional. This isn't super healthy, but I usually help it out by using WW pasta, Olive Oil (or bake the chicken), Olive Oil Mayo, and skim milk. Also feel free to sub Ranch dressing for the Blue Cheese. Definitely serve it with a big salad!

1 tablespoon paprika
1/2 tablespoon salt
1/2 tablespoon garlic powder

1 lb chicken breast, cut into strips

1/2 cup Frank's red hot sauce
1 cup celery, diced
1 large red onion, sliced into quarter rings
1 cup mayonnaise
1/2 cup blue cheese dressing
3/4 cup milk

Steps:

  • Cook pasta according to directions.
  • While pasta is cooking, prepare chicken with spices and cook in oil.
  • When chicken is about 1/2 cook through, add the onion, celery, and saute until chicken is fully cooked.
  • Now add the hot sauce and saute with chicken for about 2 minutes.
  • Combine mayo, dressing, and milk in medium bowl. Add to skillet and heat through and stir to combine.
  • Toss with pasta.

1 ½ pounds skinless, boneless chicken breast, cut in bite-sized pieces
½ medium onion, finely chopped
3 ½ cups chicken stock
1 (16 ounce) package penne pasta
½ teaspoon salt
¼ teaspoon garlic powder
1 (8 ounce) package cream cheese, cubed
⅓ cup Buffalo wing sauce
1 cup shredded mozzarella cheese
2 tablespoons crumbled blue cheese, or to taste

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®), add butter, and select Saute function. Add chicken and onion to the melted butter and saute until chicken is browned, about 5 minutes. Hit Cancel. Remove chicken-onion mixture with a slotted spoon and set aside.
  • Add chicken stock to the pot. Scrape the bottom of the pot with a wooden or plastic spoon to loosen any browned bits. Stir in penne, salt, and garlic powder. Layer the following ingredients on top of the pasta, without stirring: cream cheese cubes, chicken-onion mixture, then Buffalo sauce.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow about 12 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Add mozzarella cheese to the pot. Stir until cream cheese and mozzarella have completely blended into the sauce. Let pasta sit in the pot until sauce has thickened, about 3 minutes.
  • Garnish servings with blue cheese.
