Time 40m

Number Of Ingredients 14

12 oz large shrimp
1 small yellow onion
2 large jalapenos (seeded)
2 medium tomatoes "on a vine'
1-2 Tbsp vegetable oil for cooking
1 1/2 cups heavy cream
1/2 cup sour cream
2 garlic cloves
1/4 tsp cayenne pepper
1/4 tsp chipotle chili powder
1/4 tsp cumin
Salt
4 medium tortillas (flour tortillas recommended)
5 oz Monterrey Jack cheese (grated)

Steps:

  • Preheat oven to 350 and grease a 9-inch baking dish.
  • Preheat oil in a large cooking pan over medium heat.
  • Slice onions and seeded jalapenos thinly and dice tomatoes.
  • Saute veggies with some salt until softened.
  • Whisk heavy cream, sour cream, pressed garlic, spices and salt in a mixing bowl and add it to the pan with veggies. Stir well.
  • Add shrimp and cook, still over medium heat, until shrimp is almost done.
  • Add some cheese in the center of each tortilla.
  • Using slotted spoon, scoop out about a quarter of shrimp/veggie mixture, draining most of the sauce, into the tortilla. Roll tortilla and place it in the baking dish, seam down. Repeat with remaining tortillas, shrimp and veggies.
  • Pour sauce over enchiladas and spread remaining cheese on top.
  • Bake for 15-18 minutes.
  • Serve right away.

cooking spray
2 tablespoons butter
½ cup finely diced red bell pepper
½ cup finely diced white onion
2 cloves garlic, minced
1 pound medium shrimp - peeled, deveined, and cut into 1-inch pieces
¼ cup chopped fresh cilantro
2 tablespoons lime juice
1 teaspoon chili powder
½ teaspoon salt
4 tablespoons butter
4 tablespoons all-purpose flour
1 ½ cups chicken broth
1 ¾ cups shredded Monterey Jack cheese, divided
1 cup sour cream
½ cup fresh green salsa (salsa verde)
8 (6 inch) flour tortillas
1 jalapeno pepper, seeded and diced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch pan with cooking spray.
  • Melt 2 tablespoons butter in a large skillet over medium-high heat. Saute bell pepper and onion until slightly soft, about 5 minutes. Add garlic and cook for 1 minute more. Transfer mixture to a bowl.
  • Add shrimp to the skillet and cook until starting to turn pink, 2 to 3 minutes. Add to vegetable mixture and stir in cilantro, lime juice, chili powder, and salt.
  • Melt butter in the same skillet over medium heat. Stir in flour and cook, 1 to 2 minutes. Slowly add chicken broth and cook over medium-high heat, stirring constantly, until sauce thickens, about 5 minutes. • Remove from the oven and let sit for 10 minutes before serving.

Spicy Shrimp Enchiladas image

A family favorite. My husband took these to work and they were a huge hit. Now I send them about once a month. Enjoy!

Categories     Southwestern U.S.

Time 1h15m

Yield 6-8 serving(s)

Number Of Ingredients 12

2 lbs shrimp, cooked and chopped lightly
2 green onions, chopped
3 cups colby-monterey jack cheese, shredded
1/2 cup salsa (I prefer to use fresh)
4 ounces green chili peppers (I use Hatch brand)
1/2 cup sour cream
16 ounces red enchilada sauce (I use Macayo's brand)
1 small fresh jalapeno, chopped fine
12 -16 corn tortillas
1 teaspoon fresh cilantro, chopped fine
1/4 cup vegetable oil
1 pinch salt & fresh ground pepper

Steps:

  • Mix together shrimp, onion, jalapeno, cilantro, green chili, salsa and half of the cheese.
  • Mix 1/2 cup enchilada sauce and sour cream and fold into shrimp mixture.
  • Heat tortillas in hot vegetable oil, just to make them pliable, not crisp.
  • Coat bottom of baking pan with enchilada sauce and lay tortilla in pan and spread 2 to 3 tablespoons of the shrimp mixture in the center of each tortilla and then roll up the tortillas with the mixture inside. Continue to roll them until mixture or tortillas are all used up. Lining the rolled tortillas up crossways in the pan.
  • Top with remaining Enchilada sauce and top with remaining cheese.
  • Bake in a 350' oven for 45 minutes.

Time 2h35m

Yield 4

Number Of Ingredients 26

1 tablespoon olive oil
½ cup finely chopped onion
4 teaspoons minced garlic
1 teaspoon dried oregano
3 ½ teaspoons chili powder
1 teaspoon dried basil
¼ teaspoon salt
¼ teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon dried cilantro
½ cup prepared salsa
1 (6 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 cups chicken broth
1 pound ground beef
¾ cup finely chopped onion
1 tablespoon minced garlic
½ teaspoon chili powder
½ teaspoon ground cumin
½ cup prepared red enchilada sauce
½ cup beef broth
½ cup shredded Mexican-style cheese blend
cooking spray
8 (6 inch) flour tortillas
2 cups shredded Mexican-style cheese blend
½ cup chopped fresh cilantro

Steps:

  • To make the spicy red sauce, heat the olive oil in a large saucepan over medium heat, and cook and stir 1/2 cup of onion until the onion is softened, 3 to 4 minutes. Stir in 4 teaspoons of garlic, and cook and stir until fragrant, another 3 to 5 minutes, watching carefully to avoid burning the garlic. Stir in the oregano, 3 1/2 teaspoons of chili powder, basil, salt and black pepper, 1 teaspoon of cumin, the dried cilantro, salsa, tomato sauce, tomato paste, and chicken broth until the sauce is smoothly combined.
  • Bring the sauce to a simmer, reduce heat to low, and simmer about 30 minutes, stirring often, until the flavors have blended and the sauce has thickened slightly.
  • While spicy red sauce is simmering, cook and stir the ground beef in a large skillet over medium-high heat until the meat is evenly browned. Break the meat up into crumbles as it cooks, and drain off excess grease. Mix in 3/4 cup of onion, 1 tablespoon of garlic, 1/2 teaspoon of chili powder, and 1/2 teaspoon of cumin into the meat, and cook and stir until the onions are softened and the meat mixture is fragrant with spices, 5 to 10 more minutes. Stir in the enchilada sauce and beef broth; simmer for 5 more minutes. Stir in 1/2 cup of Mexican cheese blend, and allow the cheese to melt into the meat sauce. Reduce heat to low, and simmer the meat sauce for 30 more minutes to thicken.
  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Spray both sides of each tortilla with cooking spray, stack up the tortillas with a piece of aluminum foil between each tortilla, and wrap the stack with aluminum foil. Place the tortillas into the preheated oven to warm, about 10 minutes.
  • Spread about 1/2 cup of the spicy red sauce over the bottom of the prepared baking dish. Fill each tortilla with the meat sauce, reserving about 1/2 cup of the meat sauce; roll the tortillas into enchiladas, and arrange in the baking dish, seam sides down. Pour the remaining spicy red sauce over the enchiladas. Sprinkle with the reserved 1/2 cup of meat mixture, and top with remaining 2 cups of Mexican cheese blend.
  • Bake until the cheese topping is golden brown and the sauce is bubbly, about 30 minutes. Remove from oven and sprinkle with cilantro to serve.

  • Remove the shells and tails from the shrimp and reserve. Rinse the shrimp and pat dry. Cut each one into 3 or 4 bite-size pieces.
  • In a medium saucepan, combine the shrimp shells and tails, parsley, 1 of the garlic cloves, bay leaves and ½ teaspoon of the salt. Cover with water, place over medium-high heat and bring to a boil. Reduce heat to medium and simmer 20 minutes. Strain the broth into a large measuring cup or heat-proof bowl.
  • Combine the tomatoes, remaining garlic, and chile(s) in a medium saucepan. Cover with water, and bring to a simmer over medium-high heat. Reduce the heat to medium and simmer uncovered until the tomatoes are thoroughly soft, about 10 minutes.
  • Using a slotted spoon, transfer the tomatoes and garlic clove to a blender. Add the 4 coarsely chopped scallions; if you have simmered 2 chiles, begin by adding only 1 of them to the blender, then once you taste the finished puree you can decide if you want to add the other. Add ½ teaspoon salt, the grated nutmeg, and 1 cup of the strained shrimp shell broth. Purée until completely smooth, taste and add the other chile if you would like more chile presence and heat (the sauce will become milder as it cooks and other ingredients are added).
