SPICY RICE, BEAN & CHEESE SKILLET
What's the spicy secret in this rice, bean and cheese skillet? A can of diced tomatoes with green chiles.

Steps:
- Cook and stir peppers and garlic in hot oil in large skillet on medium-high heat 2 to 3 min. or until crisp-tender. Add beans, tomatoes and water; stir. Bring to boil.
- Add rice; stir. Cover; simmer on medium-low heat 5 min. Remove from heat.
- Stir in cilantro; top with cheese. Let stand, covered, 5 min.

- In a large nonstick skillet, cook sausage over medium-high heat, turning occasionally, until lightly browned. Remove from skillet., In the same skillet, heat oil over medium-high heat. Saute squash, zucchini, pepper, onion, apple, garlic and salt until the vegetables are tender, 5-7 minutes. Add rice, beans, 1/4 cup water and sausage; cook and stir until heated through, about 5 minutes, adding more water if needed.
