SWEET AND SPICY BROILED SHRIMP (SHEET PAN MEAL)



Sweet and Spicy Broiled Shrimp (Sheet Pan Meal) image

Broiled shrimp and veggies is a delicious sheet pan meal, full of protein and healthy nutrients. This recipe includes an easy-to-make fish marinade, that adds amazing flavor to the dish.

4 ounces orange juice
2 Tablespoons lime juice
1/4 cup olive oil
1 teaspoon garlic
1 Tablespoon tamari sauce (gluten free soy sauce)
1 Tablespoon honey
1 teaspoon cumin
1/4 teaspoon chili powder or paprika
1/2 teaspoon kosher salt and black pepper
Pinch of crushed red pepper flakes (optional)
1 lb medium shrimp
1 lb snap peas, snow peas, zucchini, or green beans
1 cup sliced cherry tomatoes, optional
Chopped cilantro, to garnish
Fresh lemon slices, to garnish
Salt and pepper, to taste

Steps:

  • In a small bowl, whisk together the marinade ingredients. Set aside.
  • Clean shrimp, devein, and peel, leaving tails on. Place shrimp in a glass pan or ziplock bag. Pour marinade over shrimp and place in fridge to marinate for 15 to 20 minutes.
  • Set oven to broiler. While broiler is heating, prep any additional veggies you want to add to the pan. Note that veggies with less starch/skin (peas, green beans, tomato, etc.) work best to cook evenly with shrimp!
  • After shrimp has marinated, place shrimp on large sheet pan. Brush additional marinade on top. Place green beans or snap peas and cherry tomatoes around the shrimp. Broil for 5-7 minutes (total). Half way through cooking time, turn shrimp over. Flesh will be opaque with whitish color when fully cooked. Shrimp will continue to cook once you remove it from oven.
  • Remove from oven and garnish with fresh herbs and lemon.

Number Of Ingredients 7

1 lb large or jumbo uncooked shrimp - peeled and deveined
1/4 c butter
2 Tbsp vegetable oil
1 tsp each lawreys season salt, creole seasoning, dried rosemary, crushed
3/4 - 1 tsp hot pepper sauce
3/4 tsp garlic powder with parsley
1/4 tsp each - paprika, dried basil, dried oregano

Steps:

  • 1. Peel, devein and rinse shrimp. Pat dry in paper towels.
  • 2. In a small saucepan, over low heat, melt butter. Stir in all other ingredients, except for shrimp...stirring often for about 3 minutes. Make sure not to burn. Remove from heat.
  • 3. Place the shrimp on a broiler pan and brush generously with the butter mixture.
  • 4. Broil about 5 inches from broiler flame, for 3 - 5 minutes or until turn pink, then turn and brush again with butter, turning one last time and buttering.
  • 5. Plate and pour any remaining seasoned butter over the shrimp. Serve with lemon slices.

8 extra-large shrimp, peeled
Bamboo skewers, soaked in water for 15 to 30 minutes
1 cup extra-virgin olive oil
1/3 cup fresh lemon juice
4 sprigs fresh thyme
4 cloves garlic, smashed
1 shallot, sliced thin
2 1/2 tablespoons paprika
2 tablespoons garlic powder
2 tablespoons mustard powder
2 tablespoons cayenne pepper
1 tablespoon dry thyme
1 tablespoon salt
1 teaspoon oregano

Steps:

  • Combine the ingredients for the marinade. Add the shrimp, cover, and chill for approximately 3 hours.
  • Meanwhile, combine the spice rub ingredients and set aside.
  • To cook: Remove the shrimp from the marinade, skewer onto bamboo skewers, and season with a pinch of the spice rub. Preheat a grill pan over medium-high heat and grill the shrimp for 2 1/2 minutes on each side.

2 pounds large shrimp (16 to 20 per pound), peeled and deveined (see note)
3 cloves garlic, minced
1 medium yellow onion, small-diced
1/4 cup minced fresh parsley
1/4 cup minced fresh basil
1 teaspoon dry mustard
2 teaspoons Dijon mustard
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup good olive oil
1 lemon, juiced

Steps:

  • Combine all the ingredients and allow them to marinate for 1 hour at room temperature or cover and refrigerate for up to 2 days.
  • Skewer the shrimp. I use 3 or 4 shrimp on a 12-inch skewer for dinner. Heat a grill with coals and brush the grill with oil to prevent the shrimp from sticking. Grill the shrimp for only 1 1/2 minutes on each side.

1 tablespoon minced peeled fresh ginger
1/8 teaspoon cayenne pepper

1/2 pound uncooked large shrimp, peeled, deveined
1/4 cup chopped green onions
Lemon wedges

Steps:

  • Preheat broiler. Melt butter in heavy small skillet over medium heat. Stir in ginger and cayenne. Remove from heat. Stir in lime juice and peel. Season ginger-lime butter to taste with salt and pepper.
  • Place shrimp in bowl. Add ginger-lime butter; toss to coat. Transfer shrimp to small rimmed baking sheet. Broil until pink and just cooked through, about 2 minutes per side. Transfer shrimp to plate; drizzle with pan juices. Sprinkle with onions. Serve with lemon wedges.

60 uncooked peeled deveined medium shrimp (about 2 pounds), thawed if frozen
1/4 cup olive or vegetable oil
1 teaspoon red pepper sauce
1 cup canned coconut milk (not cream of coconut)
2 teaspoons curry powder
2 teaspoons cornstarch
1 teaspoon honey
1/4 teaspoon salt

Steps:

  • Soak twenty 6-inch wooden skewers in water 30 minutes. Meanwhile, heat coals or gas grill for direct heat. Make Coconut-Curry Sauce.
  • Place shrimp in large bowl. Drizzle with oil and pepper sauce; toss to coat. Thread 3 shrimp on each skewer.
  • Cover and grill kabobs 4 to 6 inches from medium heat 4 to 6 minutes or until shrimp are pink and firm. Serve with sauce.
  • Mix all sauce ingredients in small microwavable bowl. Microwave uncovered on High about 2 minutes, stirring every 30 seconds, until mixture bubbles and thickens.
