ASIAN CUCUMBER AND PEANUT SALAD
A fresh cucumber salad with a real kick! My mom adds rice noodles making it a great lunch or dinner add-on. I prefer it as it is.

Steps:
- Heat vegetable oil in a small skillet over medium heat; cook and stir garlic until softened and lightly browned, about 5 minutes. Set garlic aside to cool.
- Whisk vinegar and sugar in a salad bowl until sugar has dissolved; add chili-garlic sauce, fish sauce, coriander, cooked garlic, and red pepper flakes until thoroughly combined. Stir in cucumbers, peanuts, and green onions to coat with dressing. Refrigerate at least 1 hour to overnight.

Try this Thai-inspired salad with chicken or fish. The sugar in the dressing balances the heat of the red pepper. From Cooking Light. (Prep time doesn't include 1 hour for cucumber to drain).

Steps:
- Place the cucumber slices in a colander; sprinkle with salt. Toss well. Drain 1 hour.
- Place cucumber slices on several layers of paper towels; cover with additional paper towels. Let stand 5 minutes, pressing down occasionally. Rinse and pat dry.
- Note: Salting the cucumber removes moisture so they'll be more crisp in the salad.
- Combine vinegar, water, sugar, and pepper in a small saucepan. Bring to a boil. Reduce heat; cook until reduced to 1/3 cup (about 10 minutes). Remove from heat; cool. Stir in onion.
- Combine cucumbers and vinegar reduction in a medium bowl; toss well. Sprinkle with peanuts.

Steps:
- Cut cucumbers in half lengthwise and remove seeds.
- Slice the cucumbers thinly
- Place cucumbers, onions and chillies in a bowl
- Combine remaining ingredients (except the peanuts) and drizzle over the salad
- Toss well, (at this point you may place the salad in the fridge for an hour or so but I like to finish it and serve at once)
- Garnish with the peanuts & serve.
