2 canned chipotle peppers in adobo sauce with 1 Tbsp. adobo sauce
2 lb. ground turkey
1-1/2 cups KRAFT Shredded Cheddar & Monterey Jack Cheeses
1/2 cup dry bread crumbs
2 eggs, beaten
1 cup TACO BELL® Thick & Chunky Mild Salsa, divided

Steps:

  • Heat oven to 400°F.
  • Chop peppers. Mix with all remaining ingredients except 1/2 cup salsa.
  • Shape into loaf in 12x8-inch baking dish sprayed with cooking spray; top with remaining salsa.
  • Bake 1 hour or until done (165°F). Let stand 3 min. before removing from pan and slicing to serve.

This cheesy turkey version is a family favorite spin on meatloaf.

cooking spray
½ sweet onion, chopped
1 tablespoon minced garlic
2 pounds ground turkey
1 pound processed cheese (such as Velveeta®), cubed
½ cup crushed buttery round crackers
⅓ cup ketchup
1 egg
1 pinch garlic salt, or to taste
salt and ground black pepper to taste
aluminum foil
¼ cup ketchup, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a loaf pan with cooking spray.
  • Spray a medium skillet with cooking spray. Add onion and garlic and saute until the onion is tender, about 5 minutes. Set aside to cool.
  • Mix ground turkey, cheese cubes, crushed crackers, 1/3 cup ketchup, egg, garlic salt, salt, and pepper in a large bowl. Add cooled onion and garlic mixture and mix until well combined. Transfer to the prepared loaf pan. Place the loaf pan on a baking sheet and cover with aluminum foil.
  • Cook in the preheated oven for 1 hour. Remove foil and drain any excess juices from the loaf pan. Top meatloaf with ketchup and cook, uncovered, until no longer pink in the center, about 30 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

A household favorite, I created this recipe after giving up flour, cheese and most sugar. It is a turkey meatloaf with an Italian touch.

1 pound mild Italian turkey sausage, casings removed
1 pound ground turkey
2 eggs, beaten
1 ½ cups rolled oats
½ cup chopped onion
½ cup milk
1 tablespoon Worcestershire sauce
1 teaspoon Italian-style seasoning
½ teaspoon garlic powder
½ teaspoon salt
2 cups spaghetti sauce
5 dashes hot pepper sauce
1 tablespoon Worcestershire sauce
½ teaspoon liquid smoke flavoring

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ground turkey, sausage, eggs, oats, onion and milk. Season with 1 tablespoon Worcestershire sauce, Italian seasoning, garlic powder and salt. Mix well and form into a loaf. Place into a 9x13 inch baking dish.
  • In a separate small bowl, mix together the spaghetti sauce, hot sauce, 1 tablespoon Worcestershire sauce and liquid smoke. Smooth over the entire meatloaf.
  • Bake in preheated oven for 50 to 60 minutes.

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

1 ½ pounds ground turkey
¾ cup crushed buttery round crackers
½ cup milk
1 small onion, chopped
1 egg
1 ½ teaspoons salt
2 cloves garlic, minced

1 tablespoon Worcestershire sauce
