GLUTEN FREE RUSSIAN TEA COOKIES

Easy buttery, melt in your mouth gluten free Russian tea cookies.

Number Of Ingredients 6

1 cup butter (softened)
1/2 cup powdered sugar
2 cups gluten free flour blend
1 teaspoon vanilla
dash salt
1/4 cup raw pecans (chopped)

Steps:

  • Preheat the oven to 350º F.
  • In a mixing bowl, add butter, vanilla and sugar. Beat on low speed until sugar is incorporated.
  • Slowly add flour on low speed and mix until blended. Add pecans and mix on low.
  • Roll dough into 1 1/2 inch balls.
  • Place dough balls onto parchment paper lined cookie sheet.
  • Bake for 8-10 minutes.
  • Remove GENTLY with a thin spatula onto a cooling rack. These cookies are very crumbly when hot.
  • Allow to cool 15 minutes. Roll in powdered sugar.

These are a soft delicate sugar cookie perfect for a mother daughter tea, or with green and red sprinkles for a xmas luncheon. I got this recipe recently from my cousin Margaret, but it was originally one of my Grandma Kaphingst's Christmas cookie recipes.. These are Oh so delicious.

2 egg yolks
1 c powdered sugar
2 c flour
1 tsp vanilla
1/2 tsp cream of tartar
1/2 tsp soda
1 c butter

Steps:

  • 1. Cream together butter, yolks,vanilla and powdered sugar.
  • 2. Gradually add cream of tartar, baking soda, and flour.
  • 3. Roll into balls, place on cookie sheet and press down with fork.
  • 4. Sprinkle with red and green sugar.
  • 5. Bake at 350 degrees for 8 to 10 minutes.

This is a family recipe that's been made at Christmas time by at least 4 generations. This year will be the first for number 5!!! 'Bubba' brought it with her when she came from Lithuania. I pass it on in the true spirit of this season!

1 cup butter
1 teaspoon vanilla extract
6 tablespoons confectioners' sugar
2 cups all-purpose flour
1 cup chopped walnuts
⅓ cup confectioners' sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream butter and vanilla until smooth. Combine the 6 tablespoons confectioners' sugar and flour; stir into the butter mixture until just blended. Mix in the chopped walnuts. Roll dough into 1 inch balls, and place them 2 inches apart on an ungreased cookie sheet.
  • Bake for 12 minutes in the preheated oven. When cool, roll in remaining confectioners' sugar. I also like to roll mine in the sugar a second time.

1 cup butter
½ cup confectioners' sugar
¼ teaspoon salt
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 cup chopped pecans
⅓ cup confectioners' sugar for dusting, or as needed
¼ cup finely crushed peppermint candy canes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream the butter with 1/2 cup of the confectioners' sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.
  • Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it's better to undercook them than to overcook them. While cookies are still hot, roll them in confectioners' sugar. Once they have cooled, roll them in confectioners' sugar once more.

1 cup confectioners' sugar
1 pinch salt

Steps:

  • Combine the butter, flour and confectioners' sugar together. At first it will have a pie crust consistency. Roll into one large log and wrap in wax paper or plastic wrap. Chill for at least one hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Slice chilled log into 1/4 inch thick slices. Place cookies on a baking sheet. Bake in preheated oven until edges just begin to turn golden, about 10 minutes. Watch carefully so they don't burn.

2 1/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1/2 cup butter, softened (no substitutions)
1/2 cup confectioners' sugar
1/2 cup granulated sugar, plus
2 tablespoons granulated sugar
1 egg
1/2 cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350.
  • On waxed paper, combine flour, baking soda, cream of tartar and salt.
  • In a large bowl, beat butter, confectioners sugar, and 1/2 cup granulated sugar on medium speed about 2 min or until creamy. Reduce speed to low, beat in egg, then beat in oil and vanilla. Gradually beat in flour mixture just until blended, occasionally scraping bowl.
  • Place remaining 2 tbsp sugar in a small bowl or saucer. Shape dough by rounded tsp into 3/4 inch balls. Place balls 2 inches apart on ungreased cookie sheet. Dip punch cup or glass with raised or cut design on bottom, or coarse side of meat mallet into sugar in bowl, use to flatten each ball into a 1 1/2 inch round.
  • Bake 10-11 min until edges are golden. Transfer to wire rack to cool. Store cookies in tightly covered container at room temp up to 1 week or in freezer up to 3 monthes.

Oh wow...these are gooood cookies! This recipe was in the Taste of Home Cookies Magazine and was submitted by Sue Call of Indiana. It's a delicious melt in your mouth sugar and buttery flavored cookie! Prep time does not include time to chill the dough!

1/2 cup butter, softened
1/2 cup vegetable oil
1/2 cup sugar
1/2 cup confectioners' sugar
1 large egg
1/2 teaspoon vanilla extract
2 1/3 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
additional sugar

Steps:

  • In a mixing bowl, cream butter, oil and sugars; add egg and vanilla and mix.
  • Combine flour, baking soda and cream of tartar in a separate bowl; gradually add to the creamed mixture.
  • Chill for several hours or overnight (I've made these and have only chilled them for 2 hours and they turned out fine, however when I've chilled them for several hours they were perfection!).
  • Drop by rounded teaspoonfuls 2-inches apart onto ungreased baking sheets.
  • Flatten with a fork dipped in flour; sprinkle with sugar.
  • Bake at 350° for 12-15 minutes or until lightly browned.
  • Cool on wire racks.

3 ounces cream cheese, softened
1 cup sugar
1 large egg yolk
1/2 teaspoon vanilla extract

1/2 teaspoon salt
1/4 teaspoon baking soda
Tinted frosting, coarse sugar and/or colored sugar

Steps:

  • In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Beat in egg yolk and extracts. Combine the flour, salt and baking soda; gradually add to creamed mixture and mix well. Cover and refrigerate for 3 hours or until easy to handle., On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with a floured 2-1/2-in. cookie cutter. Place 1 in. apart on ungreased baking sheets. Bake at 375° for 8-10 minutes or until edges begin to brown. Cool for 2 minutes before removing from pans to wire racks. Decorate as desired.

This is one of my mom's favorite Christmas cookie recipes that I found in her Baking is Fun! cookbook from 1948 (the cookbook has a $.25 price on it). The book calls these "Holiday Nuggets" which doesn't sound too appetizing to me, so I have renamed them. I hope you love them as much as I do!

2 1/2 cups sifted all-purpose flour
1/2 teaspoon salt
3/4 cup shortening
1/4 cup butter (softened)
1/2 cup confectioners' sugar
1 tablespoon vanilla
1 teaspoon almond extract
1/2 cup chopped walnuts

Steps:

  • Cream the shortening, butter and sugar together.
  • Blend in the vanilla, almond extract and nuts.
  • Sift together flour and salt, adding it to wet ingredients and mixing until dough is smooth and well blended.
  • Shape into small balls (1 tbsp of dough for each).
  • Place balls on ungreased baking sheet and flatten bottoms just enough so they won't roll.
  • Bake at 325 degrees for 20-25 minutes.
  • Roll cookies in powdered sugar after baking.
  • Option: If desired, top with colored sugar, coconut or more nuts before baking and then don't roll in powdered sugar after baking.
