SLOW COOKER ROAST BEEF DINNER



Slow Cooker Roast Beef Dinner image

A one pot no fuss roast beef dinner!

Number Of Ingredients 9

One 1.5-1.8 kg, 3-4 pounds beef roast
One 454 g, approx. 16 oz bag baby carrots
8-10 potatoes
1/2 red onion
One 900 mL, approx. 4 cups carton beef broth OR 4 cups water
1/4 cup red wine/cooking wine/sherry
1 bay leaf
1 tsp. each rosemary, sage, savory, thyme and salt
1 tbsp Worcestershire/HP Sauce

Steps:

  • Spray slow cooker with non-stick spray or olive oil.
  • Cut potatoes into 1-2 in. pieces.
  • Cut onions into chunks. (I leave mine large to add flavor but so the kids can pick around them!)
  • Place roast in center of slow cooker.
  • Surround roast with potatoes and then carrots.
  • Top with onions.
  • Pour beef broth or water and wine/sherry over everything.
  • Submerge bay leaf into liquid.
  • Sprinkle with herbs, spices and Worcestershire/HP sauce.
  • Cover and cook until roast is cooked through approximately on high for 4 hours or low 8 hours.

Get a head start on dinner with this fresh take on a slow-simmered, all-in-one meal that makes clean-up a breeze.

1 tablespoon cornstarch
8 medium carrots, cut into thirds
2 medium onions, each cut into 8 wedges
Coarse salt and ground pepper
1 beef chuck roast (3 pounds), trimmed of excess fat
2 tablespoons Worcestershire sauce

Steps:

  • In slow cooker, stir together cornstarch and 2 tablespoons cold water until smooth. Add carrots and onions; season with salt and pepper, and toss.
  • Sprinkle roast with 1 teaspoon salt and 1/2 teaspoon pepper; place on top of vegetables, and drizzle with Worcestershire. Cover; cook on high, 6 hours (or on low, 10 hours).
  • Transfer roast to a cutting board; thinly slice against the grain. Place vegetables in a serving dish; pour pan juices through a fine-mesh sieve, if desired. Serve roast with vegetables and pan juices.

1 Pork Roast (small enough to fit in pot)
6-8 potatoes cut up
1 small bag of crrouts cut up
1 pk. lipton onion soup mix
cooking sherry

Steps:

  • - Pour 3 cups of water in crock pot - Add your cut up potatoes and carrots - Lay out 2 sheets of aluminum foil on top of each other - Place roast on foil - Turn up ends of fol so that sherry won't drip off Pour 3 tbs. of cooking sherry on roast - Sprinkle onion soup mix over roast - Fold up foil and seal closed - Lay foil roast on top of potatoes and carrots - Cover pot Cook on low 8-10 hours

This recipe I made up because I could not find one for this cut of meat and for the slow cooker. So I decided to experiment. Turned out great and the family loved it.

1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon ground black pepper
1 (3.5 pound) eye of round roast
6 Yukon Gold potatoes, peeled and quartered
2 carrots, cut into 2-inch pieces
2 stalks celery, diced
2 sweet onions, diced
1 cup beef broth
½ cup Marsala wine
1 (1.2 ounce) package dry beef gravy mix
1 tablespoon all-purpose flour

Steps:

  • Mix paprika, oregano, garlic powder, onion powder, salt, and black pepper together in a bowl; rub evenly over roast.
  • Arrange potatoes, carrots, celery, and onions in the bottom of a slow cooker. Place roast atop vegetables.
  • Whisk beef broth, Marsala wine, and gravy mix together in a bowl; pour over roast and vegetables.
  • Cook on Low until meat is fully cooked and vegetables are tender, about 8 hours (or on High for 5 hours).
  • Strain sauce into a bowl and whisk with flour until thickened. Serve on the side of roast and vegetables.
