SPICY CAJUN CABBAGE
I threw this together one night when I was craving a Cajun chicken pasta dish I used to make. I've missed it since going low-carb. This dish was a perfect substitute! Great texture and a very, very mild vegetable flavor. Mostly just Cajun yumminess! Adjust the spices to your taste.

Steps:
- Combine chili powder, thyme, smoked paprika, oregano, cayenne pepper, cumin, onion powder, and salt in a bowl.
- Melt butter in a large skillet over medium heat; cook and stir onion in hot butter until translucent, about 5 minutes. Add garlic and cook until soft, about 2 minutes; stir shredded cabbage into onion and garlic. Cook and stir cabbage mixture until cabbage starts to soften, about 5 more minutes.
- Stir spices into cabbage mixture and cook, stirring often, until spices are evenly mixed in and cabbage is tender, 3 more minutes.

SPICY CAJUN CABBAGE AND NOODLES
This recipe was a fortunate "accident" I had with leftover cabbage a few years ago but it is so good I find myself craving it. I'm the only one in my family that likes cabbage so I get to eat all of it by myself:)Hope you like it. The seasonings are approximations. This is supposed to be sweet.

Steps:
- Cook the sausage and keep it chopped up like hamburger.
- Add in the cabbage, tomatos, salsa and spices.
- Continue to cook down on low boil for about 15-20 minutes.
- Put one cup water into the mixture with the noodles.
- Cook till the noodles are soft.
- Turn the heat off and cover the pot.
- Allow to set about another 30 minutes before serving.
- The longer this sits, the better it tastes.

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the egg noodles; return to a boil. Cook, uncovered, stirring occasionally, until the noodles are cooked through, but still firm to the bite, about 5 minutes. Drain; return to the pot and stir in the butter.
- Meanwhile, place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
- Place the onion into the skillet with the bacon grease, and cook and stir over medium heat until the onion begins to soften, about 2 minutes. Stir in the cabbage, and cook and stir until wilted, about 5 minutes. Chop the bacon, add it to the skillet, and cook until the cabbage is tender, about 10 minutes. Stir in the noodles, and continue cooking just until heated through.

- In small bowl, stir all sauce ingredients until well mixed; set aside.
- Cook fettuccine as directed on package. Drain and rinse in warm water.

- Bring a large pot of salted water to a boil.
- Place a large saute pan over medium-high heat. When the pan is hot, add a film of oil along with the onions and a pinch of salt. Cook, stirring occasionally, until the onions begin to soften and caramelize, 2 to 3 minutes. Move the onions to one side of the pan, and then add the butter, cabbage and a pinch of salt. Cook until everything is caramelized and softened, 4 to 5 minutes. Add the chicken stock. Simmer this mixture until the cabbage is cooked through and the liquid has reduced, about 5 minutes.
- In the meantime, drop your pasta. Cook at a gentle boil for 2 minutes less than the package directions. Then drain and add to the cabbage mixture. Gently fold in the parsley and sour cream and serve immediately, adding black pepper and a drizzle of oil.

- In a dutch oven or other large soup pot put the oil and heat over medium-high heat. Add the sausage (Hillshire can also be used or whatever brand that you want) and stir-fry until lightly browned.
- Add the cabbage, onions, potatoes and carrots. Stir-fry for 3 or 4 minutes.
- Add the bay leaf, cajun seasoning spices, garlic, salt (1-2 teaspoons depending on how salty you like it) and black pepper. If you don't like too much of a spicy taste, reduce the cajun spices. Stir to blend.
- Add the chicken broth and water, increase heat to high until the liquid is boiling, reduce heat and simmer for 30 minutes.
- Rinse and drain the white beans (small white beans, white kidney beans, whatever you desire), and add to the soup. Simmer 30 more minutes.
- Good served with a rustic type of bread.

- Combine the spices for the Cajun spice mix in a bowl, then set them aside. Finely shred the cabbage.
