PATTI LABELLE'S PEACH COBBLER
Steps:
- Preheat oven to 375 degrees F. Grease a 13x9-inch baking pan with 1/2 stick (4 tbs) of the butter. Set aside.
- On a lightly floured surface, roll out the pie crusts until they are large enough to cover the baking pan surface.
- In a large skillet, melt the remaining 1/2 stick (4 tbs) butter over medium heat. Mix in agave syrup, cinnamon, nutmeg, and peaches. Add in 2 pinches of salt and mix well. Once the mixture begins to simmer, reduce the heat to low and continue cooking for 10 minutes. Remove mixture from heat and set aside to cool.
- Pour half of the peach mixture into the prepared baking pan in an even layer. Grate half of the orange zest on top of the peaches. Place the first sheet of pie crust on top. Bake for 15 minutes or until light brown.
- Take the cobbler out of the oven. Pour the remaining half of the peach mixture on top and grate the remaining orange zest on top of the peaches. Place the second pie crust on top, brush with a thin layer of egg wash and sprinkle cinnamon.
- With a fork, poke holes on the top layer. This will help it cook evenly and allow steam to escape. Bake for 40 minutes or until the peach juices start to bubble and the top crust is golden brown.
- Serve with a scoop of vanilla ice cream on top.

- Preheat oven to 400°. Pour butter into a shallow 2-qt. baking dish; set aside. Drain peaches, reserving 1/4 cup juice. In a saucepan, bring peaches and reserved 1/4 cup juice just to a boil. Meanwhile, in a bowl, combine 1 cup sugar, flour, baking powder and salt. Stir in milk; mix well. Pour over butter in baking dish. Spoon hot peaches over batter. Sprinkle with remaining 1/4 cup sugar. Bake until bubbly and golden, 20-25 minutes. Serve warm and if desired, with whipped cream.

- Preheat oven to 325 degrees, 300 degrees for glass pan.
- Pour peaches and juice in 13x9 pan.
- Pour milk over peaches.
- Sprinkle cake mix evenly over milk and peaches.
- Slice butter or margaine into thin slices and put on top.
- Bake for 1 hour until golden brown and bubbling.
- Serve warm or cold with vanilla ice cream or frozen vanilla yogurt.

- Whisk all the ice cream ingredients together in a large measuring cup. Cover with plastic wrap and refrigerate until chilled, about 1 hour. Pour the mixture into the ice cream maker and mix until it begins to look slushy and like soft serve, about 12 to 15 minutes. Transfer the ice cream to freezer container and cover the container tightly with a lid. Freeze until firm.
- Preheat the grill to medium heat.
- Toss the peaches in a bowl with the sugar, vanilla, and allspice. Put the peaches on grill and cook for 2 to 3 minutes per side.
- Divide the peaches and ice cream among 4 bowls. Sprinkle with the crumbled shortbread cookies and serve immediately.

- Heat oven to 180C/160C fan/gas 4. Grease a baking dish with a little butter, then lay the drained peach slices in the base. Sprinkle with 2 tbsp of the sugar and the ground ginger and set aside.
- Tip the flour, remaining sugar, baking powder, cinnamon and a pinch of salt into a food processor. Whizz until combined, then add the cubes of butter, pulse until the mixture resembles breadcrumbs, then add the egg and continue to blitz until it comes together to make a thick dough.
- Spoon the dough in dollops on top of the peaches, creating a good covering, but leave some gaps for the dough to spread into. Sprinkle with a little caster sugar then bake for 40 mins, until golden. Serve with scoops of vanilla ice cream.

- 1. Heat oven to 350^. Coat 9x9-inch baking dish with no stick cooking spray.
- 2. Combine sweetened condensed milk, lemon juice and 2 Tablespoons of flour or Bisquick in a large bowl. Stir in peaches. Spread evenly in prepared pan. Bake for 15 minutes.
- 3. Mix the remaining 1 cup of flour or bisquick, baking powder, sugars and shortening in a large bowl with a pastry blender until crumbs form. Stir in milk. Place teaspoonfuls of dough over hot peaches, covering top surface. Sprinkle with cinnamon/sugar mixture.
- 4. Bake 35 to 40 minutes or until peaches are fork tender and top in golden brown. Cool 20 minutes before serving.
