2 tablespoons crumbled blue cheese
4-1/2 teaspoons dry bread crumbs
4-1/2 teaspoons minced fresh parsley
4-1/2 teaspoons minced chives
Dash pepper
4 beef tenderloin steaks (4 ounces each)
1-1/2 teaspoons butter
1 tablespoon all-purpose flour
1/2 cup reduced-sodium beef broth
1 tablespoon Madeira wine
1/8 teaspoon browning sauce, optional

Steps:

  • Preheat oven to 350°. In a small bowl, combine the blue cheese, bread crumbs, parsley, chives and pepper. Press onto 1 side of each steak., In a large nonstick skillet, cook steaks over medium-high heat for 2 minutes on each side. Transfer to a 15x10x1-in. baking pan coated with cooking spray. , Bake until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 6-8 minutes., Meanwhile, in a small saucepan, melt butter. Whisk in flour until smooth. Gradually whisk in broth and wine. Bring to a boil; cook and stir until thickened, 2 minutes. If desired, stir in browning sauce. Serve with steaks.

6 tablespoons butter, softened
2 ounces blue cheese
1 (2 pound) beef top sirloin steak, cut into 4 equal pieces
salt and ground black pepper to taste
12 drops liquid smoke flavoring
2 tablespoons minced garlic, or to taste

Steps:

  • Preheat Panasonic Countertop Induction Oven to Medium-High on the "Grill" setting.
  • Mix butter and blue cheese together in a mixing bowl. Refrigerate until ready to use.
  • Season steak pieces on one side with salt and pepper. Flip and add 3 drops liquid smoke, salt, and pepper to each piece of steak.
  • Place steak pieces on the grill pan. Close oven and set timer for 6 minutes. Flip steak pieces after 3 minutes and spread minced garlic evenly on top. Press "Start" again to continue cooking.
  • Allow steaks to rest for a few minutes before transferring to a serving plate. Garnish with blue cheese butter mixture.

1/2 cup crumbled blue cheese
1/4 cup butter, softened
1/4 cup chopped walnuts, toasted
2 tablespoons minced fresh parsley
1-3/4 teaspoons minced fresh rosemary, divided
6 large garlic cloves, peeled
1/4 teaspoon salt
1/4 teaspoon pepper
2 beef top sirloin steaks (6 ounces each)

Steps:

  • In a small bowl, combine the blue cheese, butter, walnuts, parsley and 3/4 teaspoon rosemary. Shape into a 5-in. log; wrap and refrigerate until firm, 30 minutes., In a small food processor, combine the garlic cloves, salt, pepper and remaining rosemary. Cover and process until blended. Rub over both sides of steaks. , Grill steaks, covered, over medium heat or broil 4-6 in. from the heat for 5-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). , Unwrap blue cheese butter; cut two 1/2-in.-slices from log. 4 beef steaks (3/4 inch thick-rib-eye, t-bone, whatever you have)
1/2 cup crumbled blue cheese
salt, to taste
pepper, to taste
butter or oil, to taste

Steps:

  • Fire up your frying pan to high heat, or get the grill ready.
  • Sprinkle steaks with salt and pepper to taste.
  • Toss a dab of butter in the pan (or a spritz of oil).
  • Place steaks on the hot pan; grill 3 minutes; turn.
  • Scatter bleu cheese crumbles over steak while grilling for another 3 minutes.
  • Remove meat from heat, let stand a few minutes.
  • Serve with oven-roasted potato wedges or whole baked potatoes.

4 tablespoons (1/2 stick) chilled butter
3 garlic cloves, chopped
1 large shallot, chopped
1 tablespoon chopped fresh thyme
3/4 cup low-salt beef broth
1/2 cup dry red wine
1/2 cup coarsely crumbled Maytag blue cheese (about 2 ounces)
1/4 cup panko (Japanese breadcrumbs)*
1 tablespoon chopped fresh parsley
4 1-inch-thick filet mignon steaks (each 6 to 8 ounces)

Steps:

  • Melt 1 tablespoon butter in heavy medium skillet over medium-high heat. Add garlic, shallot, and thyme. Sauté until shallot is tender, about 5 minutes. Add broth and wine. Boil until sauce is reduced to 1/2 cup, about 12 minutes. Set sauce aside.
  • Blend cheese, panko, and parsley in small bowl to coat cheese evenly with panko. (Sauce and cheese mixture can be made 1 day ahead. Cover separately and chill.)
  • Preheat broiler. Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Sprinkle steaks with salt and pepper. Add steaks to skillet and cook to desired doneness, about 5 minutes per side for medium-rare. Transfer steaks to rimmed baking sheet; reserve skillet. Press cheese mixture onto top of steaks, dividing equally. Broil until cheese browns, about 2 minutes. Transfer steaks to plates.
  • Pour sauce into reserved skillet. Bring to boil, scraping up browned bits. Boil 2 minutes. Whisk in remaining 1 tablespoon butter. Season with salt and pepper. Spoon sauce around steaks and serve.
  • *Available at Asian markets and in the Asian section of some supermarkets.

2 tablespoons chopped fresh Italian parsley
3/4 teaspoon plus 1 tablespoon dried rosemary, finely crumbled
1/4 cup chopped toasted walnuts (about 1 ounce)
6 large garlic cloves, peeled
1 1/2 teaspoons salt
1 1/2 teaspoons ground black pepper
2 1 1/2-to 1 3/4-pound top sirloin steaks (1 inch thick)

Steps:

  • Combine cheese, butter, parsley and 3/4 teaspoon rosemary in medium bowl. Stir to blend well. Mix in walnuts. Season to taste with salt and pepper. Transfer blue cheese butter to small bowl. (Blue cheese butter can be prepared 2 days ahead. Cover and refrigerate. Bring butter to room temperature before using.)
  • Combine 1 tablespoon rosemary, garlic, salt and pepper in processor. Blend until mixture resembles coarse paste. Pat steaks dry. Place in large baking dish. Rub 2 teaspoons of garlic paste on each side of each steak. Cover and let stand 1 hour at room temperature.
  • Prepare barbecue (medium-high heat). Grill steaks to desired doneness, about 5 minutes per side for medium-rare. Transfer steaks to platter and let stand 5 minutes. Cut each steak into 3 equal portions. Top each portion with a spoonful of blue cheese butter and serve.
