HOMEMADE BUFFALO SAUCE
The best homemade buffalo sauce made with Frank's Hot Sauce, butter, and spices!

- For the buffalo sauce, quarter the cold stick of butter lengthwise. Make eight cuts across so that the butter is cut into tiny cubes. Transfer to the refrigerator until ready to use. Add Frank's hot sauce, onion powder, Kosher salt, and garlic powder to a small saucepan and place over medium heat. Stir and allow to come to a simmer.
- Reduce the heat to low. Begin adding in the butter 2-3 cubes at a time, whisking constantly. Once the butter has melted into the sauce, add another 2-3 cubes, and repeat until all of the butter has been incorporated. Do not rush this process.
- Once all of the butter has been added, remove the sauce from the heat and set aside until ready to use. Makes about 1 1/2 cup of sauce.
- Store-Bought Nugget Variation: 16 ounces (about 20) frozen chicken nuggets. Cook the chicken nuggets according to package directions, dip in prepared buffalo sauce and serve right away.

BUFFALO CHICKEN BALLS

- Heat oven to 350°F. Line 2 large cookie sheets with sides with foil. Spray foil with cooking spray.
- In large bowl, beat 1/4 cup wing sauce, the melted butter and egg with whisk; stir in chicken, cheese and onions. Sprinkle Bisquick™ mix over mixture, and use hands to fully mix in. Slightly wet hands with water for easier shaping; shape mixture into 1 1/4-inch balls (about 36); place 1 inch apart on cookie sheets.
- Bake, rotating pans once halfway through, 23 to 25 minutes or until light brown and cooked through in center. Immediately remove from cookie sheet. Using spoon, drizzle with additional wing sauce. Serve warm with dressing and carrot and celery sticks.

SPICY BUFFALO CHICKEN BITES

- In a plastic container that comes with a lid such as the "ziploc" plastic containers mix the Frank's Red Hot Buffalo Sauce with the tabasco sauce.
- Cook the popcorn chicken bites according to the directions on the bag or the box or bag the chicken came in.(Microwave on HIGH for about 2 min with a couple handfuls of popcorn chicken).
- Once the popcorn chicken is done in the microwave put it in the ziploc container containing the Franks Red Hot Buffalo Sauce and tabasco sauce.
- Put the lid on(make sure its on tight) and shake the container until the sauce smotheres the chicken inside the container.
- Serve with a side of bleu cheese dressing or ranch dressing.
- Enjoy!
