CHERRY COCONUT BARS

I came across these easy maraschino cherry bars while stationed at a Michigan Air Force base in 1964 and have been making the recipe ever since. My children don't think an event is special unless they are part of it. -Marguerite Emery, Orland, California

Number Of Ingredients 13

1 cup all-purpose flour
3 tablespoons confectioners' sugar
1/2 cup cold butter, cubed
FILLING:
2 large eggs, room temperature
1 cup sugar
1 teaspoon vanilla extract
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped walnuts
1/2 cup quartered maraschino cherries
1/2 cup sweetened shredded coconut

Steps:

  • In a small bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into a lightly greased 13x9-in. baking pan. Bake at 350° for 10-12 minutes or until lightly browned. Cool on wire rack. , For filling, in a small bowl, combine the eggs, sugar and vanilla. Combine flour, baking powder and salt; add to the egg mixture and mix well. Stir in walnuts, cherries and coconut. Spread over crust. Bake for 20-25 minutes or until firm. Cool on a wire rack. Cut into bars.

1-1/2 cups all-purpose flour
1 cup graham cracker crumbs
2/3 cup packed brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, melted
FILLING:
4 cups unsweetened finely shredded coconut
2 cans (14 ounces each) sweetened condensed milk
2 jars (10 ounces each) maraschino cherries, drained and chopped
2 teaspoons vanilla extract
1 teaspoon almond extract

Steps:

  • Preheat oven to 325°. In a small bowl, mix the first 5 ingredients; stir in melted butter. Press onto bottom of a greased 13x9-in. baking pan., In another bowl, mix filling ingredients; pour over crust. Bake until edges are lightly browned, 35-40 minutes. Cool on a wire rack 1 hour. Refrigerate, covered, 4 hours before cutting. Store in an airtight container in the refrigerator.

This is a very good recipe from a neighbor, and it is requested often. Fresh or frozen cherries may be used in this recipe.

3 tablespoons butter, melted
1 cup all-purpose flour
¼ teaspoon salt
1 teaspoon baking powder
½ cup milk
1 cup white sugar
1 tablespoon cornstarch
1 cup boiling water
3 ½ cups fresh cherries, pitted
¾ cup white sugar

Steps:

  • Mix 3/4 cup sugar, butter or margarine, flour, salt, baking powder, and milk together. Place cherries in the bottom of a 9 inch square pan. Spread dough over cherries.
  • In a small bowl, combine 1 cup sugar and cornstarch. Stir in boiling water. Pour mixture over the dough.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes. Serve warm.

½ cup butter
1 cup all-purpose flour
1 cup white sugar
1 teaspoon baking powder
1 cup milk
1 (21 ounce) can cherry pie filling

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Place butter or margarine in a 9x13 inch baking dish and set on oven rack to melt.
  • In a medium bowl, mix together flour, sugar, and baking powder. Stir in milk.
  • Remove baking dish from oven as soon as butter or margarine is melted. Pour flour mixture into dish, but DO NOT STIR. Pour fruit evenly into pan, and DO NOT STIR.
  • Raise oven temperature to 350 degrees F (175 degrees C). Bake cobbler for 50 to 60 minutes, until golden brown.

1 (21 ounce) can cherry pie filling
1/2 cup sour cream
1 cup shredded sweetened coconut
4 teaspoons margarine
1 1/2 cups self rising flour
2 pinches salt
1/8 teaspoon sugar
1 1/2 cups milk

Steps:

  • In mixing bowl, combine pie filling,sour cream, and coconut.
  • Use 2 tsps margarine to grease pyrex or glass baking pan, I use 8 X 11.
  • Pour in cobbler filling.
  • Preheat oven 375*.
  • In mixing bowl, combine flour, salt, sugar and milk. Make sure it is mixed well.
  • Pour and spoon over filling.
  • Bake 35 minutes.
  • Brush 2 tsps margarine on top of crust.
  • Bake about 7 more minutes.
  • Take out and cool to room temperature before serving. Serve with vanilla ice cream.

1 ½ cups all-purpose flour
½ cup white sugar
2 teaspoons baking powder
½ teaspoon salt
¼ cup butter
1 cup chocolate chips
1 egg
¼ cup milk
1 (21 ounce) can cherry pie filling

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 2 quart casserole dish with vegetable cooking spray. Melt chocolate chips in a measuring cup in the microwave, stirring every 20 seconds until smooth. Let stand for 5 minutes to cool slightly.
  • In a medium bowl, stir together the flour, sugar, baking powder, and salt. Cut in butter until the dough is a uniform crumbly texture. Beat the egg into the melted chocolate chips, then stir the milk in. Pour the chocolate mixture into the dry ingredients, and stir until well blended.
  • Pour the cherry pie filling in an even layer in the bottom of the greased casserole dish. Drop spoonfuls of the chocolate batter over the cherries in a random pattern.
  • Bake for 40 to 45 minutes in the preheated oven, until top crust is not doughy when lifted. Serve warm.
