SPICY BACON GRILLED POTATO SKINS
Verde salsa and crispy turkey bacon make terrific toppers for these crowd-pleasing grilled potato skins. Top with sour cream and prepare for compliments.

Steps:
- Heat grill to medium heat.
- Pierce potatoes with fork or small sharp knife. Wrap individually in foil.
- Grill 1 hour or until tender. Unwrap potatoes; cool 10 min.
- Cut potatoes lengthwise in half; scoop out centers, leaving 1/4-inch-thick shells. Discard removed centers or reserve for another use. Brush insides of shells with butter; fill with salsa, cheese and bacon.
- Grill 10 to 12 min. or until skins are crisp. Top with remaining ingredients.

GRILLED BBQ POTATO SKINS
Steps:
- Preheat oven to 350 degrees F.
- Bake potatoes on middle rack until fork tender, about 1 hour. Remove from oven and let sit until cool enough to handle.
- Bake 4 strips of bacon on a small sheet pan in the oven for 15 minutes. Crumble bacon when it's cooled.
- Preheat grill to medium heat.
- Cut potatoes in half, lengthwise, and spoon out the flesh, leaving a half inch shell.
- Melt the butter in saucepan and add minced garlic. Brush potatoes with the butter and garlic mixture. Flip over and butter the bottoms.
- Place potatoes on grill and cook until crisp, about 4 to 4 1/2 minutes on each side and remove from grill.
- Divide the cheese, barbecue sauce and pulled pork among the potatoes. Top potato skins with sour cream, crumbled bacon and chives for garnish.

- Cut each potato lengthwise into four wedges. Cut away the white portion, leaving 1/4 in. on the potato skins. Place skins on a microwave-safe plate. Microwave, uncovered, on high for 8-10 minutes or until tender. Combine the butter, rosemary, salt and pepper; brush over both sides of potato skins., Grill potatoes, skin side up, uncovered, over direct medium heat for 2-3 minutes or until lightly browned. Turn potatoes and position over indirect heat; grill 2 minutes longer. Top with cheese. Cover and grill 2-3 minutes longer or until cheese is melted. Sprinkle with bacon and onions. Serve with sour cream.

GRILLED BACON WRAPPED POTATO STICKS
A great grilling dish. So easy, so tasty and does not heat up the kitchen!!

Steps:
- 1. Scrub potato skins, then cut in half, then into thirds. If you want to use jalapeno slices, cut jalapeno in half, take out seeds and cut into about 6 slices per half.
- 2. Place potatoes in bowl and drizzle with olive oil and generously season with your favorite potato seasoning, toss to coat well.
- 3. You will need 1/2 slice of bacon for each, or be indulgent and use 1 slice. Place a slice of jalapeno on the side of potato and wrap with bacon.
- 4. You could probably secure them with toothpicks, but if you have a grilling basket that has a top and bottom, it is much easier I think. Spray bottom and top of basket, place them in bottom of basket leaving a little room in between. Secure top of basket tightly against potatoes.
- 5. Heat one side of grill to med heat and place basket on other side with NO heat, and cook indirectly for 1- 1 1/2 hrs. The bacon browns so nicely and does not burn. Use a toothpick to check for doneness after 1 hr. Toothpick will insert easily if done.
GRILLED BBQ POTATO SKINS

The recipe for the pulled pork is probably out there on Food Network; however, it might be just as easy to stop by the local BBQ restaurant and pickup some chopped beef or pulled pork if they have it. Any bbq'd meat would do for this delicious dish.
