GRILLED WATERMELON SALAD WITH SWEET AND SPICY VINAIGRETTE

- For the vinaigrette: Combine the oil, honey, lime juice, zest, shallots, hot sauce, garlic and salt and pepper in a bowl to make a sweet and spicy vinaigrette. Set aside.
- For the salad: Line a baking sheet with wax paper and set aside. Melt the butter in a large skillet over medium heat. Toss in the pecans and brown sugar, stirring to coat. Cook over medium heat until the sugar begins to caramelize, about 3 minutes. Spread out pecans on prepared baking sheet to cool.
- Heat an outdoor gas grill to high or prepare a charcoal grill for high, direct-heat grilling. Trim the ends off the watermelon. Stand the watermelon on one cut end and cut in half, then cut each half in half again. Cut the quarters into 1/2-inch-thick slices. Brush the vinaigrette on both sides of the watermelon slices. Add the watermelon slices to the grill in a single layer and cook until warmed through and grill marks appear, 2 to 3 minutes per side. Cool the watermelon, then cut into cubes. (You won't use all the watermelon for the salad. Use as much as you like.)
- Layer the arugula leaves, grilled watermelon, strawberries, blueberries, blue cheese, pecans, parsley and scallions in a salad bowl. Add vinaigrette and toss just before serving.

- For glaze, place soy sauce, chili sauce, honey, garlic and 2 cups watermelon in a blender; cover and process until pureed. Transfer to a small saucepan; bring to a boil. Cook, uncovered, over medium-high heat until mixture is reduced by half, about 10 minutes. - First, remove all green outer rind and red meat from watermelon rind and discard, retaining only the white part. Force remaining white rind through food chopper, using coarse blade. Measure it, there should be 6 cups. Put in a large saucepan or stockpot with water.
- Cook slowly, uncovered, for 25 minutes, or until melon is translucent. Add sugar and lemon. Tie spices in a cheesecloth bag and add with salt to first mixture. Cook slowly, stirring frequently, for 1 hour, or until thickened. Remove spice bag, ladle mixture into hot sterilized jars; seal.
- Yield: about 2-1/2 pints.

- Gather the ingredients.
- Trim the dark green and pink parts from the watermelon rind and discard.
- Cut rind into 1-inch cubes and measure out 7 cups.
- Put the watermelon rind in a large container with the pickling salt and 3 cups of the water. Add more water to cover the rinds, if necessary. Soak overnight.
- Drain and rinse watermelon rind.
- Cover the rind with cold water in a large saucepan. Simmer just until tender-about 10 minutes.
- Meanwhile, in a nonreactive 6- to 8-quart kettle or Dutch oven, combine the sugar, vinegar, cinnamon, whole cloves, and remaining 1 cup water. Simmer the mixture for 10 minutes.
- Add the drained watermelon rind, lemon slices, and maraschino cherries, if using to the spiced syrup. Simmer the mixture until the watermelon rind is translucent, about 30 minutes.
- Fill half-pint jars with the hot watermelon rind and syrup mixture, leaving 1/2 inch of headspace. Add the lids.
- Process in a boiling water bath for 5 minutes and remove jars.
- Let the jars cool on a rack.
- Serve and enjoy.

- Heat an outdoor gas grill or an indoor griddle or cast iron grill to high.
- Slice the melon. Wash the melon and trim the ends so that you're able to set the melon flat on your cutting surface. Cut the melon it into two halves, then cut the halves into quarters. From there slice into 1/2 -inch triangles with the rind on (do not remove the rind/skin).
