SPICED ORANGES AND DATES
Fresh oranges and dates in a spiced syrup. Recipe modified from a Woolworths Fresh Magazine recipe. I love fresh dates and this makes for a great fresh fruit dessert. Great served with fresh Greek yogurt or custard. You can add some orange liquer to make this extra special (add with the water and sugar). To toast your almonds- add them to a dry pan and heat them until fragrant and toasted. keep turned or tossed as they will toast quickly. Vegan suitable if served without the custard or yogurt

Steps:
- Add the water and sugar to a saucespan. Stir over heat until the sugar has dissolved. Add the peel from one orange. cloves, ginger, star anise and cinnamon stick pieces. SImmer 10 minutes or until a syrup forms. Remove from the heat.
- Slice the oranges into thick rounds. Remove the pits from the dates and cut the dates into halves. Add the oranges and dates to the sugar syrup. Set aside for 20 minutes.
- Spoon the fruit onto one large platter to serve -- or into serving bowls. Sprinkle the toasted almonds over the top.
- Serve with yogurt or custard.

SPICED ORANGES
Serve these sweet-sour oranges like a chutney.

Steps:
- Place orange slices in a large stainless-steel saucepan; cover with cold water. Simmer until skins are tender, about 1 1/4 hours.
- Remove oranges with a slotted spoon; place in a colander to drain. Discard water.
- Combine sugar and vinegar in the same saucepan; stir over low heat. Bring to a boil. Add spices; simmer 10 minutes.
- Add oranges and simmer, covered, for 40 minutes, or until skins are translucent. Cool.
- Layer oranges in sterilized jars, cover with syrup, and seal. The oranges can be used right away, but the flavor will be improved by waiting 4 to 6 weeks.
CINNAMON-ORANGE PARFAIT WITH DATES IN COGNAC
Steps:
- Boil Cognac, water and sugar 5 minutes in a saucepan and set aside in a bowl to cool.
- Dip dates in boiling water 30 seconds; drain, and with a paring knife remove transparent outer skin. Remove pits and cut each date lengthwise into 4 or 5 pieces. Add dates to the syrup and let steep overnight or longer.
- Place milk in a small saucepan with cinnamon sticks and orange zest. Bring just to a boil and remove from flame. Let cool completely, and strain, discarding the solids.
- Choose a metal bowl (preferably the bowl of an electric mixer) that will fit over a pot of boiling water without touching the water. Fill the pot with water and set it to boil. In the metal bowl mix together the whole eggs and egg yolks. Now, place the bowl over the boiling water, and start whisking eggs. Slowly add sugar and continue beating until thick, pale in color and tripled in volume, 5 to 8 minutes. Remove from heat and whip either by hand or in an electric mixer until completely cool.
- Whip cream until peaks just hold their shape.
- Fold cooled cinnamon-orange milk into whipped cream and pour over the cooled sugar-and-yolks mixture. Dust with ground cinnamon. Fold together.
- With plastic wrap, line a standard bread-loaf pan that will hold 8 cups, leaving a generous overhang of wrap on all sides. Pour parfait mixture into the pan and seal tightly. Freeze for at least 4 hours.
- To serve, unwrap and cut parfait into 3/8-inch slices. Spoon several date slices, with syrup, over each portion.

- Pat duck breasts dry with a paper towel. Using a sharp knife, cut a 1/2-inch crosshatch pattern into the fatty skin, taking care not to penetrate the flesh underneath. Season both sides generously with 1 1/2 teaspoons salt. Sprinkle the meat sides with 1 1/2 teaspoons ras el hanout. Let stand, skin sides up, 30 minutes to 1 hour, until duck breasts come to room temperature.
- Meanwhile, place couscous in a medium heatproof bowl. Combine chicken stock, zest, 1/2 cup orange juice, turmeric, and 1 1/4 teaspoons salt in a small saucepan. Bring to a boil over medium-high. Pour boiling liquid over couscous, and immediately cover bowl with plastic wrap. Set aside to allow the couscous to absorb the liquid while you prepare the duck.
- Place duck breasts, fat sides down, in a cold large skillet. Place skillet over medium heat. Cook until duck skin is crisp and deep golden brown and most of the fat has rendered, 6 to 8 minutes. Flip duck, and cook, adjusting heat as needed, until thickest part of each breast registers 120°F to 125°F on an instant-read thermometer for medium-rare, 2 to 4 minutes. Transfer duck breasts to a cutting board, fat sides up; let rest about 10 minutes while you finish the dish.
- Pour off and reserve duck fat from pan. Add mandarin segments, honey, 1/2 teaspoon salt, remaining 1/2 cup orange juice, and remaining 1/2 teaspoon ras el hanout to pan. Bring to a simmer over medium-high, scraping up bits from bottom of pan. Simmer until juice is slightly thickened, about 2 minutes. Remove pan from the heat. Stir in 1/2 teaspoon salt.
