BANANA SPICE WAFFLES



Banana Spice Waffles image

Mashed banana, apple pie spice and vanilla make these waffles reminiscent of warm banana bread.

Yield 4 to 6 servings

Number Of Ingredients 11

2 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon apple pie spice
1/4 teaspoon fine salt
1 3/4 cups buttermilk, at room temperature
2 large eggs
4 tablespoons unsalted butter, melted and cooled slightly, plus more for the waffle iron
1 teaspoon pure vanilla extract
1 very ripe banana, mashed
Warmed honey, sliced bananas and chopped peanuts, for serving

Steps:

  • Whisk together the flour, sugar, baking powder, apple pie spice and salt in a large bowl. Whisk together the buttermilk and eggs in a medium bowl until well blended and then whisk in the melted butter, vanilla and mashed banana. Pour the buttermilk mixture into the flour mixture and stir until just combined with a few lumps. Set aside for 10 minutes.
  • Preheat the oven to 200 degrees F. Preheat a waffle iron to medium-high. Lightly brush the top and bottom of the waffle iron with butter.
  • Fill each waffle indent about three-quarters full. Close the lid gently and cook until the waffle is golden brown and crisp, 5 to 7 minutes. Repeat with additional butter and the remaining batter, keeping the cooked waffles warm in the oven until ready to serve.
  • Serve the waffles topped with warmed honey, sliced banana and chopped peanuts.

2 cups old-fashioned rolled oats
1/3 cup wheat germ
2 tablespoons Truvia™ natural sweetener spoonable*
2 teaspoons pumpkin pie spice
1/4 teaspoon Diamond Crystal® kosher salt
2 tablespoons vegetable oil
2 tablespoons walnut oil
1/2 cup blanched almonds, coarsely chopped
1/2 cup dried apricots, chopped
1/4 cup dried dates, chopped
1/4 cup golden raisins or dried figs, chopped
Greek Yogurt, serving suggestion
*May substitute with 7 packets Truvia™ natural sweetener

Steps:

  • 1. Preheat the oven to 325 degrees F. In a medium bowl combine the oats, wheat germ, Truvia™ natural sweetener, pumpkin pie spice and salt. Add both oils and toss well to coat. Spread in a single layer on a parchment lined baking sheet. Bake until toasted, about 10 minutes. Stir in almonds and continue to bake until the nuts are toasted and the granola is dry, about 10 more minutes.
  • 2. Remove from the oven, stir in the apricots, dates, and figs or raisins. Cool on the baking sheet. Serve over yogurt as desired. Store granola in a sealed container for up to 2 weeks.

Spiced Fruit and Nut Waffles image

A different waffle that I like to serve company. The recipe says to cook the raisins in boiling water for 5 minutes, then drain and chop. I don't do this. I just add the raisins. The recipe also says to use cake flour. You can have these for breakfast or serve them as a dessert with ice cream or with whipped cream. I found this recipe in the High Altitude Cookbook and tried this recipe for the first time in 1989. If you know company is coming ahead of time, you can mix the dry ingredients early; then all you have to do is add the wet ingredients.

2 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon allspice
3/4 cup sugar
3 eggs, separated
1 cup milk
1/2 cup shortening, melted
3/4 cup pecan pieces

Steps:

  • Mix and sift dry ingredients.
  • Beat egg yolks.
  • Add milk to yolks.
  • Add dry ingredients and mix well.
  • Add melted shortening and beat with a few quick strokes.
  • Beat egg whites.
  • Fold in the raisins, nuts, and then beaten egg whites.
  • Bake in a waffle iron.
