Time 2h25m

Yield One 8-inch loaf

Number Of Ingredients 19

2 cups coarsely chopped dates (10 ounces pitted)
1/3 cup orange liqueur (recommended: Cointreau or Triple Sec)
4 tablespoons (1/2 stick) unsalted butter, at room temperature
3/4 cup light brown sugar, lightly packed
1 extra-large egg
1 teaspoon pure vanilla extract
1 tablespoon grated orange zest (2 oranges)
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 teaspoon kosher salt
3/4 cup freshly squeezed orange juice (3 oranges)
3/4 cup coarsely chopped pecans (3 ounces)
6 ounces cream cheese, at room temperature
1/3 cup granulated sugar
1 tablespoon grated orange zest

Steps:

  • Preheat the oven to 350 degrees F. Butter the bottom of an 8 1/2 by 4 1/2 by 2 1/2-inch loaf pan. Line the bottom with parchment paper, then butter and flour the pan.
  • Combine the dates and orange liqueur in a small bowl and set aside for 30 minutes. Stir occasionally.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and brown sugar together on medium speed for 1 minute. Scrape down the bowl. With the mixer on low, add the egg, vanilla, and orange zest. Sift together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. With the mixer still on low, add the flour mixture alternately with the orange juice to the creamed mixture, beating only until combined. By hand, stir in the dates with their liquid, and the pecans.
  • Pour the batter into the prepared loaf pan and smooth the top. Bake for 50 to 60 minutes, until a toothpick comes out clean. Cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
  • Meanwhile, in the bowl of an electric mixer fitted with the paddle attachment, cream the cream cheese, sugar, and orange zest on medium speed until just combined.
  • Slice the bread and serve with the orange cream cheese on the side for spreading.

Yield one 9 or 10 inch round loaf

Number Of Ingredients 15

6 large egg yolks
1/2 cup sugar
1/2 cup unsalted butter, melted
3/4 cup all-purpose flour
1/2 teaspoon ground ginger
2 teaspoons ground cinnamon
1 1/2 teaspoons ground nutmeg
Pinch of ground cloves
Pinch of salt
8 large egg whites
1 1/2 cups finely chopped dates
3/4 cup coarsely chopped pecans
1/2 cup raisins
Confectioners sugar, for garnish
Coconut ice cream for serving, if desired

Steps:

  • Butter and flour a 9 or 10inch round cake pan and line the base of it with baking parchment. Preheat the oven to 350 degrees F.
  • In a medium mixing bowl, beat the egg yolks and sugar with an electric mixer until the mixture is pale yellow and will hold a ribbon. Drizzle the melted butter around the edges of the bowl and fold the mixture together gently but thoroughly. Set aside. Sift the flour, ginger, cinnamon, nutmeg, cloves, and salt together and set aside. In another, larger mixing bowl, beat the egg whites to the soft peak stage.
  • Fold half of the egg yolk mixture into the beaten egg whites. Fold in the dry ingredients and stir in the dates, pecans, and raisins. Fold in the remaining yolk mixture. Pour the batter into the pan and shake it a little to find its level. Bake for 1 hour, or until a toothpick inserted in the center comes out clean. Cool on a rack and then run a sharp knife around the edge to loosen the cake and turn it out onto a platter. Sprinkle confectioners sugar over the top and serve cut into wedges, accompanied by coconut ice cream, if desired.

NOT-SO-HEAVY DATE-NUT BREAD

Not-So-Heavy Date-Nut Bread image

Provided by Food Network Kitchen

Categories     dessert

Time 2h15m

Yield 1 loaf date-nut bread

Number Of Ingredients 10

1 1/2 heaping cups dates (about 40 medium dates), pitted and roughly chopped
2 1/2 cups all-purpose flour
1/2 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon fine salt
1 cup unsalted butter, room temperature
1 cup dark brown sugar
4 large eggs, at room temperature
3/4 cup whole milk, room temperature
1 heaping cup walnut pieces, roughly chopped

Steps:

  • Lightly butter and flour a 9 by 5-inch loaf pan. Put a rack in the middle of the oven. Preheat the oven to 350 degrees F.
  • Put the dates in a medium bowl and cover with hot water. Soak for 15 minutes and drain.
  • In a medium bowl, whisk together both of the flours, baking powder, and salt. Set aside.
  • In a standing mixer fitted with the paddle attachment, or with an electric hand-held mixer, combine half the dates, butter, and brown sugar and mix on low speed until just incorporated. Raise the speed to high and mix until light and fluffy, about 10 minutes. (Occasionally turn the mixer off, and scrape down the sides of the bowl with a rubber spatula.)
  • Add the eggs one at time, mixing well after each addition.
  • Mixing on low speed, add the flour in 3 parts to the butter mixture, alternating with the milk in 2 parts, until just combined. Raise the speed to medium and mix briefly until a smooth batter is formed. Add the remaining dates and walnuts and mix until just incorporated.
  • Scrape the batter into the prepared pan. Bake, turning the pan halfway through, until golden brown and a toothpick inserted in the center comes out clean, about 1 1/2 hours.
  • Remove from the oven and cool slightly. Remove the bread from the pan and cool on a rack completely before serving.

INA GARTEN DATE NUT SPICE BREAD

Ina Garten Date Nut Spice Bread image

Another fabulous recipe from the Barefoot Contessa! I made the other Date Nut Bread I posted then this one thinking I'd have a bake-off. Well, they are both great and very different! I wound up with 2 keepers! The bread is very nice served with the recommended orange cream cheese, but that is entirely optional.
