This moist Cinnamon Spiced Apple Bread is the perfect quick bread (no yeast!) for Fall

1/2 cup unsalted butter (softened to room temperature)
1 cup granulated sugar
2 large eggs (room temperature preferred)
1/4 cup vegetable oil
2 medium apples (peeled and diced (approximately 2 cups))
2 cups all purpose flour
1 1/2 tsp ground cinnamon
1/4 tsp ground allspice
1/4 tsp ground nutmeg
1 tsp baking soda
1 tsp baking powder
1/2 tsp kosher salt

Steps:

  • Preheat oven to 350°F and lightly grease a 9x5 inch loaf pan. Set pan aside.
  • In a large mixing bowl, add butter, sugar, eggs and oil and beat, using a hand mixer, until smooth. Lightly beat in diced apples.
  • In a separate mixing bowl, combine dry ingredients (flour, cinnamon, allspice, nutmeg, baking soda, baking powder and salt) and stir.
  • Add the flour mixture to the bowl with the "wet" ingredients and use a rubber spatula to stir together. Stir until just combined and no flour streaks remain.
  • Transfer batter to prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Let bread cool in the pan for about 10 minutes, then turn bread out onto a wire cooling rack to finish cooling.
  • Slice once cool, and serve.

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1 cup sour cream
2 large eggs, room temperature
3 teaspoons vanilla extract
1-1/2 cups chopped peeled Granny Smith apples
1-1/4 cups chopped pecans, toasted, divided
1/2 cup butter, cubed
1/2 cup packed brown sugar

Steps:

  • Preheat oven to 350°. In a large bowl, mix flour, baking powder, baking soda and salt. In another bowl, beat sugar, sour cream, eggs and vanilla until well blended. Stir into flour mixture just until moistened. Fold in apples and 1 cup pecans., Transfer to a greased 9x5-in. loaf pan. Bake until a toothpick inserted in center comes out clean, 50-55 minutes. Cool in pan 10 minutes. Remove to a wire rack to cool completely., In a small saucepan, combine butter and brown sugar. Bring to a boil, stirring constantly to dissolve sugar; boil 1 minute. Working quickly, pour over bread. Sprinkle with remaining pecans; let stand until set.

2 cups granulated sugar
1 cups half-and-half
1/3 stick butter
1/8 teaspoon baking soda
1 1/2 cups whole pecans

Steps:

  • Combine all ingredients except the pecans in a heavy saucepan. Over medium heat stir mixture until it comes to a boil. Turn heat down to medium-low and continue to stir. Spoon mixture up on sides of pan to melt any sugar that hasn't melted.
  • Cook until mixture reaches 238 to 241 degrees F on a candy thermometer or soft ball stage. Stir in the pecans. Remove from heat. Stir until the mixture begins to thicken and becomes creamy and cloudy. Drop onto parchment paper, buttered pan or buttered marble slab, using a spoon or ice cream scoop. Let cool.

Nonstick cooking spray or vegetable oil
2 tablespoons egg white (1 extra-large egg)
1/2 cup light brown sugar, lightly packed
2 teaspoons pure vanilla extract
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon chile powder
1/4 teaspoon ground cloves
Kosher salt and freshly ground black pepper
2 cups whole pecan halves (8 ounces)
1/2 teaspoon fleur de sel

Steps:

  • Preheat the oven to 300 degrees F. Spray a sheet pan with the cooking spray or brush it lightly with oil.
  • Place the egg white in a large bowl and whisk vigorously for 15 seconds, until light and frothy. Whisk in the brown sugar, vanilla, cinnamon, ginger, chile powder, cloves, 1 teaspoon kosher salt, and 1/2 teaspoon pepper. Add the pecans and mix well, until thoroughly coated. Pour the mixture, including any liquid, onto the prepared pan and spread in a single layer. Bake for 30 minutes, tossing twice with a metal spatula. Each time you toss the pecans, spread them out again in one layer. When they're done, sprinkle with fleur de sel and allow to cool completely; they will crisp as they cool. Serve at room temperature.

1 cup brown sugar
1 cup chopped pecans
¼ teaspoon nutmeg

Steps:

  • Melt butter in a heavy saucepan over low heat; stir in brown sugar, pecans, and nutmeg. Stir constantly and bring topping to a boil; allow to simmer until topping thickens slightly, about 5 minutes. Remove from heat.
  • To use as pie topping, spoon topping onto pie and broil until topping bubbles; watch carefully to avoid burning. Let pie cool before serving.

A deliciously moist cake, it is full of flavour and I challenge anyone not to love this recipe. It is best eaten the day after it is cooked so plan ahead.

9 ounces plain flour
6 ounces caster sugar
5 ounces soft butter or 5 ounces margarine
3 ounces sultanas
1 egg
1 teaspoon ground nutmeg
1 teaspoon ground mixed spice
1 -2 teaspoon ground cinnamon
1 teaspoon baking powder
2 -3 bramley cooking apples

Steps:

  • Pre-heat oven to gas 4 or 180.
  • Line a 2lb loaf tin with greasproof paper.
  • Peel and core the apples, cut into chunks, place in a pan and cover with water, bring to the boil and simmer until the apples are just starting to soften. Drain and add a little sugar to taste (I prefer the apples to be quite tart). Leave to one side to cool.
  • Put all dry ingredients into a large bowl together and mix roughly.
  • Next add all wet ingredients at same time, mix until all of the flour mixture is taken up.
  • Pour into the loaf tin and cook for 1 1/4 - 1 1/2 hours until browned.
  • When the cake is cooked, LEAVE IT IN THE TIN until cool, then wrap in foil.
  • This cake is best left until the next day to eat (if you can wait that long!).
