BOILED RAISIN CAKE I



Boiled Raisin Cake I image

This cake doesn't need frosting or icing. It is easy for kids to make, and is hard to mess up.

2 cups raisins
2 cups water
½ cup vegetable oil
1 cup cold water
2 cups white sugar
4 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg
1 teaspoon baking soda
½ teaspoon salt

Steps:

  • Boil raisins in 2 cups of water for 15 minutes. Remove from heat.
  • Add vegetable oil and cold water to the raisins.
  • Mix sugar, flour, spices, baking soda, and salt in a large bowl.
  • Add the raisin mixture, and stir till just mixed.
  • Pour into a greased and floured 9 x 13 inch baking pan, and bake for one hour in a preheated 350 degrees F (175 degrees C) oven. It is done if a toothpick comes out clean.

1 cup raisins
2 cups water
½ cup butter
1 teaspoon baking soda
½ teaspoon salt
1 cup white sugar
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 cup chopped walnuts
1 ¾ cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 10 x 10 inch baking pan.
  • In a large saucepan boil the raising with the water for 10 minutes. Add the butter or margarine and let cool.
  • In the same pan add the flour, soda, salt, sugar, cinnamon, nutmeg, and chopped nuts (optional), mix well and pour batter into a lightly greased 10x10 inch baking pan
  • Bake at 350 degrees F (175 degrees C) for 35 minutes. Serves 8 to 12.

1-1/2 cups raisins
1-1/2 cups water
1 cup unsweetened applesauce
3/4 cup vegetable oil
1/2 cup egg substitute
Liquid artificial sweetener equivalent to 1 cup sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1-1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon ground nutmeg

Steps:

  • In a saucepan over medium heat, cook raisins and water until water is absorbed. Transfer to a bowl; add applesauce, oil, egg substitute, sweetener and vanilla. Combine the remaining ingredients; add to applesauce mixture and stir well. Pour into a 9-in. square baking pan coated with cooking spray. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean.

1/2 cup fat-free margarine, softened
1 cup firmly packed light brown sugar
1 large egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon ground nutmeg

1/4 teaspoon ground cloves
1 teaspoon baking soda
1 cup seedless raisin

Steps:

  • Preheat over to 350°F Lightly grease a 9x9 inch baking pan.
  • In a large bowl, beat margarine until well creamed.
  • Add egg and vanilla and beat until well combined.
  • Stir in yogurt.
  • Sift together flour, nutmeg, cinnamon, cloves and baking soda.
  • Fold into yogurt mixture.
  • Add raisins and mix until just combined.
  • Spoon mixture into prepared pan.
  • Bake 35-45 minutes or until tester inserted in center of cake comes out clean.
  • Cool 5 minutes on rack.

2 cups raisins
1 1/2 cups water
1/2 cup shortening
2 cups packed brown sugar
3 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1 cup buttermilk or 1 cup sour milk
1 teaspoon baking soda
3 eggs, beaten
confectioners' sugar

Steps:

  • In a saucepan, combine raisins and water. Cook until plump. Drain and set aside raisins, reserving 10 tablespoons cooking liquid. In a mixing bowl, cream shortening and sugar. Combine flour, cinnamon, cloves nutmeg and salt; set aside. Combine milk, soda, eggs and reserved cooking liquid. Add dry ingredients alternately with milk mixture to creamed mixture. Stir in cooked raisins. Pour into a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 350 degrees F for 35-40 minutes or until cake test done. Cool on a wire rack. Just before serving, sprinkle with confectioners' sugar.

CAKE:
2 egg whites
1 1/3 c all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 tsp allspice, ground
1/2 tsp cloves, ground
1/2 c butter, softened
1 c granulated sugar
2 egg yolks
2/3 c milk
1 tsp vanilla
3/4 c raisins
ICING
1/4 c butter, softened
2 c sifted icing sugar
1 Tbsp lemon juice
1-2 Tbsp cream or milk
chopped walnuts

Steps:

  • 1. Beat egg whites to stiff but moist peaks. Combine flour, baking powder, salt and spices in a large mixing bowl. Stir well to blend. Add butter, sugar, egg yolks, milk and vanilla. Beat with electric mixer on medium speed until smooth, about 1 1/2 minutes. Stir in raisins. Fold in stiff egg whites.
  • 2. Spread batter evenly in greased 9 " square cake pan.
  • 3. Bake at 375 degrees F. for 30 - 35 minutes. Cool completely.
  • 4. Icing: Cream butter, half of icing sugar and lemon juice together until light. Gradually add icing sugar and enough cream to make a smooth spreading consistency. Spread over cooled cake. Sprinkle with chopped walnuts, to decorate, if desired.

Add eggs, one at a time, beating well after each addition. Beat in applesauce and vanilla. Combine the flour, cinnamon, baking powder, salt, nutmeg, baking soda and ginger; add to creamed mixture just until blended. Stir in walnuts and raisins. , Pour into a greased 11x7-in. baking dish.
