Recipe video above. Baked potatoes stuffed with a creamy, cheesy, mashed potato filling hit with salty pops of bacon. Think of it as the spud love-child of jacket potatoes and mashed potato! This is pretty much every cheese lovin,' carb monster's dream come true. Dainty food this ain't - this is proper comfort food, turned up to 11!Serve it as a side, or as a meal.

4 x 300g / 10oz potatoes ( - Sebago (Aus), Russet (US), Maris Piper / King Edwards (UK) (Note 1))
1 tbsp canola or vegetable oil
1/2 tsp salt
200g / 7oz bacon (streaky) (, chopped into small batons (Note 2))
120g / 8 tbsp unsalted butter
1/3 cup cream ((pure or thickened / heavy))
1 cup cheddar cheese (, shredded (Note 3))
3 green onions (, finely sliced)
1/4 tsp salt
1/4 tsp pepper
1 1/2 tbsp chives (, finely chopped (garnish))
Sour cream ((recommended!))

Steps:

  • Preheat oven to 220°C / 430°F (200°C fan). Place a rack on a tray (recommended but not critical).
  • Prick potatoes: Wash, scrub and dry potatoes well. Prick each potato 8 times with a fork.
  • Oil and salt: Put potatoes in a bowl, pour over oil and rub onto potatoes. Then sprinkle over salt and use your hands to coat. (Just do this as best you can. Some will stick, much will not!)
  • Bake: Place potatoes on rack and bake for 75 minutes or until you can pierce with a small knife with no resistance.
  • Cook bacon: Place bacon in a cold non-stick pan over medium heat. When the fat starts to melt, turn the heat up to high and cook bacon until golden. Drain on paper towels.
  • Heat butter and cream: Melt butter in a saucepan over medium heat. Then add cream and heat until hot, but don't let it boil. (You could also do this in a microwave)
  • Lower oven: Turn oven down to 200°C / 390°F (180°C fan).
  • Scoop out potato flesh: Allow potatoes to cool enough so you can handle them (or use a tea towel). Cut in half lengthwise and scoop out potato flesh, leaving 0.7cm (1/3") thick layer of potato still stuck to skin.
  • Mash potato: Place potato flesh in a bowl and mash while hot until smooth.
  • Add-ins: Add half the cheese (save the rest for topping), most of the bacon (save a bit for garnish), all the green onion, hot cream and butter, salt and pepper. Stir to combine.
  • Stuff and top with cheese: Fill potato skins with the mashed potato mixture. Top with remaining cheese.
  • Bake: Bake for 20 to 25 minutes until the cheese is melted, golden and bubbly.
  • Serve: Serve immediately, garnish with sour cream, reserved bacon and chives.

4 large baking potatoes
½ pound bacon
4 tablespoons butter
1 large onion, chopped
½ cup chopped fresh mushrooms
1 teaspoon crushed red pepper
1 teaspoon garlic powder
1 teaspoon ground black pepper
1 teaspoon chopped fresh chives
1 teaspoon salt
1 (8 ounce) container sour cream
1 (8 ounce) package shredded Cheddar cheese
1 teaspoon dry bread crumbs

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Use a fork to pierce the potato skins.
  • Bake the potatoes unwrapped for about 1 hour, or until soft, in the preheated oven.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Over medium-low heat melt the butter in a large saucepan. Combine onion, mushrooms, red pepper, garlic powder, pepper, chives and salt. Cook slowly, stirring occasionally until the onions are soft.
  • Slice open the baked potatoes and, keeping the skins intact, scoop the insides into a medium bowl. Transfer the onion mixture to the bowl. Mix in the sour cream. Pour in 1/2 of the cheese and continue mixing until all ingredients are well blended.
  • Using a large spoon, fill the potato skins with the mixture. Top with bread crumbs, the remaining cheese and bacon.
  • Return the potatoes to the preheated oven and continue baking for about 15 minutes, until the cheese is melted and the filling is slightly brown.

At its simplest, a twice-baked potato is creamy, cheesy mashed potatoes cradled in crisp, salty skin. That's the recipe you see here: comforting, satisfying and pretty much ideal. But if you dream of other flavor combinations, like bacon, scallions and sour cream; blue cheese and chives; or cauliflower and Parmesan, just follow the recipe below and stir in any additions (reserving some for garnish) after the dairy in Step 3. Shower the top with more grated cheese if you like, then bake, garnish and dig in.

4 tablespoons unsalted butter, cubed and softened
4 large russet potatoes
2 tablespoons canola or other neutral oil
Kosher salt
1/2 cup whole milk
1/2 cup sour cream
1/2 cup grated Cheddar cheese (about 2 ounces)
Black pepper
2 tablespoons chopped chives (optional)

Steps:

  • Position racks in the top and middle of the oven, and heat oven to 400 degrees. Take the butter out of the refrigerator to soften. Scrub the potatoes clean and pat them dry. Poke holes all over them with a fork. In a large bowl, toss them with the oil and 1/2 teaspoon salt. Place the potatoes directly on the top rack, and place a baking sheet or a piece of foil on the middle rack to catch drips. Bake for about 1 hour, until the skin is crisp and potatoes offer no resistance when a knife is inserted in their centers. Remove from the oven and let sit until cool enough to handle.
  • Slice the top third lengthwise off the potatoes. Use a spoon to scoop out the flesh, leaving 1/4-inch border of potato on the skin, and transfer the flesh to a medium bowl. Scrape the potato tops of all flesh, and add the flesh to the bowl. Place the bottoms on a parchment-lined baking sheet. (Snack on the tops - chef's treat - or discard.)
  • Mash the potato flesh with a fork or potato masher. Add the butter, and stir until smooth (try not to overwork). Add the milk, sour cream and cheese and stir to combine. (If you want the filling softer, add more milk.) Season generously with salt and pepper. Stir in the chives, if using.
  • Mound each potato skin with a quarter of the filling. Bake the potatoes until warmed through, about 10 minutes. Serve immediately.

Pretty much self explanitory!-great for left over baked potatoes-or from scratch-this is my own recipe that i have been using for years- but I'm sure that i didn't invent it---LOL!

4 -6 large baking potatoes, cut in half long ways or slit down the middle and scooped out of the whole potato-your preferance
1/2 cup milk
olive oil or butter
salt and pepper, to taste
bacon bits or condensed broccoli cheese soup, straight from the can, ADD these or anything else you like

  • Bake or nuke your potatoes as normal till done-then here's what I like to do with them-Scoop out all that you can and mash them with some milk- add whatever you want to them bacon bits etc. (cheese) let your imagination go wild- in the mean time set the oven to 350 spray the potato skins with butter or olive oil and salt and pepper them, put them --skin side up---- on a cookie sheet and bake them till they start to brown a little- take them out -add the hot mixture inside the cavity and bake again till they start to brown on top alittle--I guarantee that you'll never fix a baked potato any other way again!

I discovered that I could cut down on the time to make twice baked potatos by microwaving the potato filling before returning it back into the potato shell. I can also make the filling earlier in the day and store it in the refridgerator until dinner time. I put the potato shells carefully in a zipper bag and put in the fridge as well.

4 large baking potatoes
4 tablespoons butter
1/3 cup sour cream
1/4 cup milk
2 -4 tablespoons chopped chives
1 cup shredded cheddar cheese
salt and pepper
shredded cheddar cheese, to top potato or paprika, to sprinkle on top

Steps:

  • Preheat oven to 400 degrees.
  • Wash potatoes and pierce with a fork several times.
  • Bake on a cookie sheet for 1 hour. Baking time may vary depending on the size of your potatoes. You should be able to stick a fork in each potato without any resistance.
  • If you are going to bake potatoes right away, decrease oven temp to 350.
  • When potatoes are cool enough for you to hold in your hand, take a knife and slice off the top of the potato (along one of the long sides).
  • Take a small spoon and scoop out the insides of the potatoes and putting it in a microwave safe bowl. Take care to keep the shell intact.
  • Mix potato with butter, sour cream, milk, chives, cheese, salt and pepper.
  • Microwave mixture on high for 30 seconds. Stir well and microwave for another 30 seconds. Repeat until the mixture is steaming hot throughout.
  • With a spoon, scoop the hot mixture back into the shells and top with cheese or paprika.
  • Place potatoes on a cookie sheet lined with foil and place in oven. Bake for 10-15 minutes until cheese is melted or potato is lightly browned.

This is my perfect basic recipe for twice baked potatoes. These potatoes are great to make ahead of time. Just refrigerate or freeze until you need them, and reheat in the oven. I prefer sharp cheddar cheese, but you can use whatever you like, but it will change the taste of the recipe. Cook time includes baking the potatoes. Bake a few extra potatoes for extra filling if you like.

4 medium baking potatoes
2 tablespoons butter
1/2 teaspoon salt
1/3 cup sour cream

  • *Note*You may also refrigerate them to reheat at a later time, or you can freeze them.
  • If you freeze them, delay placing the cheese slices on top until you are ready to bake them. You might want to add more milk to the mix before filling the potatoes because after freezing they seem to reheat a little less creamy.

  • Easy! To make these Quick Twice Baked Potatoes, pre-heat oven to 425 degrees and line a baking pan with foil or parchment paper. Wash and pat the potatoes dry. Take paper towels and gently run them under running water. Squeeze out any excess water and wrap each potato in a damp paper towel. Move the wrapped potatoes to a microwave safe dish and heat on high for 5 minutes. Turn the potato over and heat on high for another 5 minutes. If your potatoes are a bit large, you may need to one more pass of 5 mintues. Once they are cooked, you should be able to insert a knife easily into your potato.
  • Once potatoes are cool enough to handle, slice potatoes in half lengthwise and run a knife along the outside of the inside of the potato, careful not to puncture or slice the potato skin. Using a spoon, gently scoop out the potato insides into a large mixing bowl. Do not take the spoon all the way to the skin, leave a bit of potato around the edge to give the potato skin structure.
  • To the mixing bowl and potato, add the butter, most of the shredded cheese, most of the bacon, sour cream, milk, salt and pepper and most of the green onion. Using an electric mixer or hand masher, blend until the potatoes are the consistantcy you enjoy (chunky vs smooth). Spoon filling back into the potato boats and sprinkle with the reserved shredded cheese, bacon and green onion. Line up the potatoes on the prepared baking sheet and bake in the oven for 15 minutes or until cheese is melted.
